1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 egg
1 teaspoon vanilla
2 cups semisweet chocolate chips
1 cup coarsely chopped nuts, if desired

Steps:

  • Heat oven to 375°F. In small bowl, mix flour, baking soda and salt; set aside.
  • In large bowl, beat softened butter and sugars with electric mixer on medium speed, or mix with spoon about 1 minute or until fluffy, scraping side of bowl occasionally.
  • Beat in egg and vanilla until smooth. Stir in flour mixture just until blended (dough will be stiff). Stir in chocolate chips and nuts.
  • Onto ungreased cookie sheets, drop dough by rounded tablespoonfuls 2 inches apart.
  • Bake 8 to 10 minutes or until light brown (centers will be soft). Cool 2 minutes; remove from cookie sheet to cooling rack. Cool completely, about 30 minutes. Store covered in airtight container.

1/4 cup cocoa powder
1 teaspoon baking soda
1/2 cup butter (melted)
1 cup sugar
1/2 cup Hazelnut spread (Nutella or other brand, i used Kirkland)
pinch of salt
1 egg
1 cup dark chocolate chips

Steps:

  • In the large bowl beat butter with sugar and egg. Add hazelnut spread and mix. Slowly add flour, soda, cocoa powder. Fold in chocolate chips.
  • Cover the bowl with plastic wrap and chill in the fridge for about two hours.
  • Preheat the oven to 350F degrees. Roll balls after scooping cookies with a tablespoon. My cookies were pretty big, and i made about 25 balls and used two sheets.
  • Bake for 11 minutes. Cookies will still be soft to touch. Let them cool and enjoy.

1 teaspoon pure vanilla extract

1/2 cup chocolate-hazelnut spread, at room temperature (recommended: Nutella)

Steps:

  • For the cookies: Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Line 3 baking sheets with parchment paper or silicone liners. Set aside.
  • In a stand mixer fitted with the paddle attachment, beat the butter and sugar on high speed until light and fluffy, 2 to 3 minutes. Beat in the vanilla. With the machine running, gradually add the flour until incorporated. Beat in the chocolate-hazelnut spread. Using a small cookie scoop or a tablespoon, drop 12 balls of dough onto each baking sheet. Bake until the bottoms of the cookies flatten out slightly, 10 to 12 minutes. Cool for 5 minutes and transfer to a wire rack to cool completely, about 30 minutes.
  • Place 1 cup of powdered sugar in a medium bowl. In batches, roll the cookies in the sugar until coated. Store in an airtight container at room temperature.

  • Heat the oven to 350°F (180°C), and line a baking sheet with parchment paper.
  • Add the Nutella, flour, and egg to a large bowl. Mix until well combined.
  • The mixture will form a thick dough but should be moist enough to roll into balls.

Steps:

  • Preheat oven to 190c \ 170c fan\gas 5. Line two baking trays with non stick baking paper \ grease proof paper.
  • Beat the butters and sugar in a bowl until creamy .Then beat in 2 tsp of vanilla extract and 2 eggs. Sieve the flour, bicarbonate of soda and salt beat into the mixture with a wooden spoon.
  • Fold in the chocolate spread and add the remaining vanilla extract .
  • Using a tea spoon place small circular mounds on the baking tray ,evenely spaced apart . Try and make all the mounds the same size so they will cook evenely.
  • Bake for 8- 10 mins until light brown on the edges and slightly soft in the middle.Do not be afraid to put the cookies back in depending on your preference.
  • Place the cookies on a cooling rack and leave to cool for 5 mins depending on how you want to serve them .
  • Optional - Add some grated chocolate or icing sugar on to your cookies if you want to add that extra WOW factor.

  • Line a baking sheet/pan with parchment paper. Place Nutella in one corner of a plastic bag. Twist so that it does not squeeze out of the top. Cut one corner off at the end of the bag.
