2 fluid ounces vodka
1 teaspoon white sugar
crushed ice
1 lemon, sliced
4 sprigs fresh mint

Steps:

  • In a mixing glass, combine lemon juice, vodka and sugar. Stir until dissolved, then pour into glasses filled with ice. Garnish with a lemon slice and sprig of mint.

I created this trifle when I had a ton of lemons left over from a party. I made my own lemon curd and then layered it with cream and ladyfingers soaked in homemade syrup - delicious. If you want to save time you can use store-bought lemon curd. You could also add a layer of fresh berries if you like.

1 cup white sugar
1 cup water
1 lemon, juiced
1 cup white sugar
1 cup lemon juice
2 teaspoons lemon zest
4 large eggs
3 egg yolks
11 tablespoons unsalted butter, cubed
1 ¾ cups heavy whipping cream
4 teaspoons vanilla sugar
15 ladyfinger cookies, or more as needed

Steps:

  • Combine sugar and water in a saucepan over medium heat and bring to a boil. Stir to dissolve sugar and remove from heat. Allow syrup to cool completely. Stir in juice of 1 lemon.
  • Meanwhile, combine sugar, lemon juice, and lemon zest in the top of a double boiler over simmering water. Stir together until well combined. Add eggs and egg yolks. Cook and stir over simmering water until lemon curd thickens, 15 to 20 minutes. Remove from heat and beat in butter, 1 cube at a time. Allow to cool for 10 to 20 minutes.
  • Beat cream in a chilled glass or metal bowl using an electric mixer until frothy. Add vanilla sugar gradually, continuing to beat until soft peaks form.
  • Spread 1 layer of lemon curd on the bottom of a glass dish. Dip ladyfingers in the syrup and arrange snugly in a single layer on top. Spread another layer of lemon curd on top. Spread 1 layer of whipped cream on top of the lemon curd.
  • Continue layering soaked ladyfingers, whipped cream, and lemon curd until all ingredients are used up. Finish with a layer of lemon curd. Garnish with remaining whipped cream. Refrigerate at least 3 hours.

2 1/2 ounces lemon-flavored vodka, Citron
1/2 ounce Cointreau liqueur or 1/2 ounce triple sec
1/2 ounce lemon juice, freshly squeezed
1 teaspoon sugar
lemon wedge

Steps:

  • Wet the rim of a cocktail glass and dip in sugar to coat rim.
  • Put any sugar remaining in a into a cocktail shaker filled with ice. Add the lemon vodka, the cointreau or triple sec and lemon juice and shake about 10 times.
  • Strain into sugar rimmed cocktail glass and garnish with lemon wedge. Suck on lemon wedge between sips and enjoy the marriage of sweet and tart flavors.

This lemon drop cocktail is a riff on a classic martini and is perfect for those who want a strong cocktail, but don't really have a taste for alcohol.

4 oz vodka
1 oz triple sec
2 oz simple syrup
2 oz lemon juice
1 lemon zest

Steps:

  • First, sugar the rim of your glass. Place the sanding sugar in a shallow dish big enough to fit the mouth of your glass in.
  • Wet the edges of the glasses (using either simple syrup or water) and then immediately dip the edge into the sanding sugar, rotating to coat the edge completely. Set aside.
  • In a cocktail shaker filled with ice, add the remaining ingredients.
  • Attach lid and shake well.
  • Divide the lemon drop cocktail between your glasses.
  • Zest two small strip of lemon skin from your lemon, and then twist well. We like to use a chopstick or a skewer to wrap to skin around.
  • Garnish the glass with the lemon twist and serve.

3 1/2 cups cold milk
2 (3 1/2 ounce) packages instant lemon pudding
8 ounces cream cheese, softened
1/2 cup butter, softened
1/2 cup powdered sugar
12 ounces Cool Whip, thawed, divided
1 (12 -14 ounce) package lemon cream-filled sandwich cookies, crushed

Steps:

  • Whisk milk and pudding for 2 minutes. Let stand 2 minutes or till soft-set.
  • In another bowl, beat cream cheese, butter, and sugar till smooth. Gradually stir in pudding till blended.
  • Set aside 1/4 cup each of Cool Whip and cookies for garnish. Fold remaining Cool Whip into pudding mixture.
  • Place half remaining cookies in 3 quart glass bowl; top with half the pudding. Repeat. Garnish with reserved Cool Whip and cookies. Refrigerate till serving.

1 can (12 ounces) evaporated milk
1-1/2 cups graham cracker crumbs
1/3 cup butter, melted
1 package (.3 ounce) sugar-free lemon gelatin
1 cup boiling water
3 tablespoons lemon juice
1 package (8 ounces) reduced-fat cream cheese
3/4 cup sugar
1 teaspoon vanilla extract

Steps:

  • Pour milk into a large metal bowl; place mixer beaters in the bowl. Cover and refrigerate for at least 2 hours., In a small bowl, combine graham cracker crumbs and butter; set aside 1 tablespoon for topping. Press remaining crumb mixture into a 13-in. x 9-in. baking dish. Chill until set., Meanwhile, in a small bowl, dissolve gelatin in boiling water. Stir in lemon juice; cool., In another bowl, beat the cream cheese, sugar and vanilla until smooth. Add gelatin mixture and mix well. Beat evaporated milk until soft peaks form; fold into cream cheese mixture. Pour over crust. Sprinkle with reserved crumbs. Refrigerate for at least 2 hours before serving. Refrigerate leftovers.
