Steps:
- In medium bowl, place strawberries. Sprinkle with 3 tablespoons powdered sugar; let stand 10 minutes. Crush with potato masher or spoon; set aside.
- In large bowl, beat whipping cream with whisk attachment of electric mixer on low speed until stiff peaks form.
- In medium bowl, beat cheese, 1/2 cup powdered sugar and the vanilla with electric mixer on medium speed until combined. Fold in whipped cream, then fold in mashed strawberries.
- Line bottom of 13x9-inch pan with single layer of graham crackers. Spread one-third of the strawberry-cream mixture over crackers; sprinkle with 1/3 cup of the chocolate chips. Repeat layers twice. Refrigerate 2 hours before serving.

- Add all of the ingredients to the bowl of a stand mixer fitted with a whisk attachment. Whip on high speed until firm peaks form, about 2 minutes.
- Cover the bottom of an 8-inch cake pan with a layer of about 12 cookies. Top with about 1/2 cup of the whipped cream and spread it out evenly. Sprinkle a third of the strawberries and 1/4 cup chocolate chips. Top with about 1/2 cup more of the whipped cream.
- Repeat with another layer of cookies, whipped cream, strawberries, chocolate chips, and then more whipped cream.
- Add a final layer of cookies followed by the last of the whipped cream. Arrange the remaining strawberries in any pattern you like and sprinkle with the last 1/4 cup of chocolate chips.
- Refrigerate for at least 4 hours, but preferably overnight, so that the cookies soften and absorb the balsamic whipped cream. Slice into wedges and serve.

- Whisk 2 cups cold milk and pudding mix together in a bowl until combined. Refrigerate until ready to use.
- Combine cream cheese and whipped topping in a medium bowl. Add confectioners' sugar and mix thoroughly.
- Cover the bottom of a 2-quart bowl or 9x13-inch pan with a layer of graham cracker squares. Spread about 1/3 of the cream cheese mixture on top. Top with 1/4 cup cookie crumbs. Cover with another layer of graham crackers and 1/3 of the pudding. Add a layer of strawberries and 1/4 cup chocolate toffee bits.

- Put the cream cheese in a large bowl and beat with an electric mixer until soft. Add the cream, confectioners' sugar, preserves, lemon juice and vanilla, and beat until it just holds stiff peaks.
- Arrange about a third of the graham crackers on the bottom of a 9-by-13-inch baking dish (or a loaf pan plus an 8-inch square baking dish), fitting in as many as possible without overlapping. Spoon a third of the cream mixture on top and smooth evenly with an offset spatula. Arrange a third of the strawberries on top in a single layer. Repeat to make three layers of each. Put the remaining graham cracker in a resealable plastic bag and crush it to make crumbs. Sprinkle the crumbs all over the cake. Cover with plastic wrap and refrigerate until the cookies soften, at least 4 hours but preferably overnight.

- For The Cake:.
- With a mixer, whip the whipping cream until it holds stiff peaks.
- Add the vanilla extract and powdered sugar to the cream and whip to combine.
- In the bottom of a 9x13-inch baking pan, spread a layer of the sweetened whipped cream to cover the bottom of the pan.
- Place a layer of graham crackers over the whipped cream.
- Then place a layer of strawberries.
- Continue layering until you run out of strawberries and graham crackers, ending with a final layer of whipped cream.
- Place baking dish in the refrigerator for at least 4 hours.
- For The Ganache:.
- Heat the 1/4 cup whipping cream in a small sauce pan until bubbles form around the edges of the pan.
- Pour the heated cream over the chopped chocolate and let stand for 5 minutes.
- Whisk the chocolate and cream mixture until the mixture is thick and glossy.
- Drizzle the chocolate ganache over the cake.

- Feel free to change this recipe up by using other berries or fresh fruit. I have made this with raspberries, blackberries and even bananas & strawberries combined. You can also use semi-sweet chocolate chips instead of the chopped chocolate for the ganache.

- In a large bowl, beat cream, sugar and vanilla with an electric mixer on high speed until soft peaks form.
- On a flat serving plate, arrange 7 cookies side by side in a circle, keeping 1 cookie in the center.

HOWARD BULKA'S STRAWBERRY ICEBOX CAKE

- The day before serving, make the soaking syrup. Puree the strawberries in a food processor. Push through a sieve to remove the seeds. Combine with the sugar and strawberry liqueur. Thin with a little water if necessary.
- Combine the mascarpone and sour cream. In another bowl, whip the heavy cream until it forms soft peaks. Slowly beat in the sugar. Fold the 2 mixtures together, until smooth and well blended.
- To assemble: Soak the ladyfingers for half a minute or so in the strawberry syrup. Layer half of the ladyfingers on the bottom of a 10-inch springform pan, then cover with half of the cream filling. Repeat with the remaining ladyfingers and cream filling. Smooth the top of the cake, cover with plastic wrap and refrigerate overnight.
- When ready to serve, unmold the cake onto a platter. Garnish with white chocolate and additional whipped cream, if desired.
