These homemade chocolate cherry brownies are much better than packaged brownies but just as easy to make! The slightly sweet, dense chocolate brownie is dotted with maraschino cherries for that classic chocolate covered cherry flavor we all know and love. Unlike most brownie recipes, this one will not leave you with a toothache. It's perfectly balanced. A fudgy chocolate brownie with a sweet maraschino cherry in each bite, this is sure to become a household favorite!

4 ounces semisweet chocolate, coarsely chopped
4 ounces unsweetened chocolate, coarsely chopped
1/2 cup unsalted butter, cut into pieces
3 tablespoons unsweetened cocoa powder
3 large eggs
1 and 3/4 cup packed light brown sugar
1 tablespoon vanilla extract
1/2 teaspoon salt
1 cup all-purpose flour
10 ounce jar maraschino cherries, drained

Steps:

  • Preheat the oven to 350ºF. Line an 8x8-inch pan with aluminum foil, leaving a 1-inch overhang on all sides. Spray the foil lightly with nonstick spray.
  • Add the chocolate and butter to a medium heatproof bowl set over a pot of simmering water. Stir occasionally until fully melted and smooth. Whisk in the cocoa powder until smooth. Set aside to cool slightly.
  • In a separate medium bowl, whisk together the eggs, sugar, vanilla, and salt until combined. Whisk in the melted chocolate until well combined. Fold in the flour with a rubber spatula just until combined. Fold in the cherries.
  • Spread the batter evenly into the bottom of the prepared pan. Bake for 20 to 25 minutes, or until the top of the brownies look dry and the edges begin to pull away from the sides of the pan. Cool the brownies in the pan on a wire rack.

2 (10 ounce) jars maraschino cherries, reserve syrup for glaze
4 unsweetened chocolate squares
3/4 cup butter
2 cups granulated sugar
4 eggs
1 teaspoon vanilla
1 cup flour
3 ounces cream cheese, softened
1 teaspoon vanilla
1/4 cup corn syrup
3 unsweetened chocolate squares, melted and cooled
1 cup confectioners' sugar
1/2 cup confectioners' sugar

Steps:

  • Preheat oven to 350 degrees.
  • Microwave chocolate and butter on high for 2 minutes or until butter is melted.
  • Stir until completely smooth.
  • Stir granulated sugar into melted chocolate.
  • Mix in eggs and vanilla until well combined.
  • Stir in flour until well blended.
  • Fill greased or paper lined miniature muffin tins 2/3 full with batter.
  • Bake for 20 minutes or until toothpick test shows fudgy crumbs; be careful not to overbake.
  • Cool slightly and remove from pans.
  • Place brownies on waxed papered tray and while still warm make an indentation into each one with the end of a wood spoon or with fingertip.
  • Cool completely.
  • Drain cherries, reserving syrup, on paper towels and press gently to remove any liquid.
  • Allow to dry.
  • Chocolate Fudge Filling: Beat cream cheese and vanilla in small bowl until smooth.
  • Slowly pour in corn syrup and beat until well blended.
  • Add melted chocolate and beat until smooth.
  • Gradually add confectioner's sugar, beating until well blended.
  • Spoon 1 tsp of filling into each brownie indentation.
  • Gently press a cherry into filling.
  • Drizzle fancily with glaze.
  • Glaze: Combine cofectioner's sugar with enough cherry syrup to make a thin glaze.

Steps:

  • Preheat oven to 350 degrees F.
  • Grease a 9 by 13-inch cake pan (aluminum is fine) with butter. Beat the 1 1/2 sticks butter and the sugar together in a large bowl until blended. Beat in the eggs 1 at a time, then stir in water and vanilla. Sprinkle the salt and baking powder over the mixture, then mix in. Do the same with the cocoa. Finally, stir in the flour until just blended.
  • Put the candy bars in a food processor or blender and pulse on low speed until all the bars have been reduced to a coarse crumble. Fold the crumble into the batter thoroughly. Scrape the batter into the prepared pan. Bake for about 30 minutes, until the center is set, the edges look a bit crusty, and the top of the brownies start to crack a little.
