  • Blend 1/3 cup feta, 2 tablespoons olive oil, 1 tablespoon each lemon juice, water and dill, 1 small grated garlic clove, and salt and pepper to taste in a mini food processor. Toss with 1 chopped romaine heart, 1 small chopped cucumber, 5 chopped radishes, 1 drained can chickpeas, 2 chopped celery stalks, and 1/3 cup each thawed frozen peas and toasted sliced almonds. Season with salt and pepper.

200g frozen peas , cooked or defrosted
1 cucumber , diced
12 radishes , topped and tailed, then chopped
3-4 celery sticks , diced
small pack chives
1 punnet cress
small pack mint , leaves only
3 Baby Gem lettuces
a few edible flowers from the garden such as nasturtiums, borage, lavender and chive flowers, (optional)
2 shallots , finely diced
2 tbsp elderflower cordial
2 tbsp lime juice
2 tbsp cider vinegar
3 tbsp rapeseed oil

Steps:

  • Mix all the dressing ingredients together with a little seasoning - the easiest way is to pop everything in a jar and give it a good shake.
  • Lightly toss together the peas, cucumber, radishes and celery. Snip in the chives and cress, and scatter over the mint.
  • Pop a lettuce leaf or 2 into 10 teacups (or arrange in a big salad bowl), then chop the remaining leaves and mix these through the rest of the salad. Divide between the cups, and chill until ready to serve.
  • To serve, scatter over the edible flowers, if you like, and drizzle a little dressing over the salads - or put out the jar of dressing for everyone to help themselves, just give it another good shake first.

8 asparagus spears, halved
250g green beans , halved
250g long-stem broccoli , chopped into 2cm lengths
200g peas , fresh or frozen
8 radishes , sliced
1 pointed cabbage , shredded
4 spring onions , sliced
handful of mint leaves, chopped
4 tbsp olive oil
1 tbsp Dijon mustard
1 lemon , juiced

Steps:

  • To make the dressing, combine all the ingredients in a bowl and season well.
  • Bring a pan of salted water to the boil and fill a bowl with iced water. Cook the asparagus for 2 mins, then transfer to the iced water with a slotted spoon. Cook the beans for 4 mins and repeat, then do the same with the broccoli (cook for 2½ mins) and peas (cook for 1 min). Drain and pat dry with kitchen paper.
  • Tip into a bowl with the radishes, cabbage, spring onions and mint. Serve the dressing on the side.

1/3 cup freshly grated Parmesan
1/3 cup white wine vinegar

Steps:

  • Add the tomatoes, iceberg, romaine, chickpeas, salami and mozzarella to a large salad bowl.
  • Add the olive oil, Parmesan, vinegar, mustard, 1/2 teaspoon salt and 1/2 teaspoon pepper to a measuring cup or mason jar. Whisk to combine.
  • Add the dressing to the salad and toss to combine. Serve immediately.

3 scallions, white and green parts, chopped (1/2 cup)
2 medium tomatoes, seeded and chopped (about 1 pound)
1/2 red onion, chopped (1/2 cup)
1/4 cup fresh lemon juice
1 teaspoon honey

1/2 cup well-stirred tahini
1/4 cup cold water
1/4 teaspoon ground cumin

Steps:

  • For the salad base: Add the radishes, corn, parsley, cucumbers, scallions, tomatoes and red onion to a large bowl.
  • For the dressing: Whisk together the lemon juice, honey and garlic in a medium bowl. Gradually whisk in the tahini. Whisk in the water a little at a time until the sauce is smooth, creamy and the consistency of slightly whipped cream. Whisk in the cumin, cayenne and 1/4 teaspoon salt. Taste and add more salt if desired.
  • For serving: Pour the dressing over the salad and toss with tongs to combine thoroughly; season with salt and pepper. Serve pita chips alongside it for scooping.

Steps:

  • Prepare the dressing: In a large measuring cup, whisk all the dressing ingredients together to combine. Season with ¾ teaspoon salt and ½ teaspoon pepper. (Makes 1 ¼ cups. It will taste quite salty at this point, and that is intentional. You want it to hold up when tossed with a big pile of vegetables.)
