This Mango Chutney recipe is packed with flavor from fresh mangos, onion, bell pepper and spices.

1 Tablespoon canola oil
2 teaspoons fresh ginger (, finely minced)
2 cloves garlic (, minced)
½ cup red onion (, finely chopped )
½ cup red bell pepper (, finely chopped )
1 fresh red chili (, seeds and veins removed OR 1/4 to ½ teaspoon crushed red chili pepper flakes, to taste)
1 1/2 teaspoons curry powder
1/4 teaspoon salt
4 large mangoes (, peeled and diced)
1 1/2 cups granulated sugar
1 cup apple cider vinegar or white vinegar

Steps:

  • Dice the mangos (here's my resource for how to cut a mango).
  • Heat the oil over medium heat in a medium stock pot. Add onion and bell pepper and sauté for 3 minutes.
  • Add ginger, garlic, and crushed red pepper flakes and cook for a minute. Add curry powder and salt and sauté for another minute. Add the diced mangoes, sugar, and vinegar and stir to combine.
  • Bring to a boil, then reduce heat and simmer for 40 minutes to 1 hour. Optional, Mash mixture with a potato masher if you like a smoother consistency. Remove from heat and allow to cool.

A recipe for homemade mango chutney made with fresh chopped mangoes, sweet and spicy chili peppers and plenty of seasonings. It is sweet and savory and ready to add big flavor to your meals.

2 tablespoons vegetable oil
1 small sweet onion (chopped)
1 medium red bell pepper (chopped)
2 serrano peppers (chopped)
1 teaspoon chopped fresh ginger
1 tablespoon yellow curry powder
1 teaspoon turmeric
1 teaspoon paprika
3 cups fresh chopped mango
Juice from half an orange
1 tablespoon apple cider vinegar
1 tablespoon sugar
Pinch of sea salt

Steps:

  • Heat a pot to medium heat and add the olive oil.
  • Add the onion, peppers and ginger and cook until they soften up, about 5 minutes.
  • Add the seasonings and cook another minute, stirring.
  • Add the mango, orange juice, apple cider vinegar, sugar and a pinch of salt. Reduce the heat and simmer the pot for 20 minutes, until the mango chutney is nicely softened and flavorful.
  • Enjoy!

3 cups distilled white vinegar
6 cups white sugar
6 cups brown sugar
1 teaspoon ground cinnamon
2 teaspoons ground ginger
4 teaspoons ground allspice
1 teaspoon ground cloves
2 teaspoons ground nutmeg
5 small red hot chile peppers, seeded and chopped
1 teaspoon kosher salt
2 large onions, chopped
3 cloves garlic, chopped
1 cup golden raisins
1 cup raisins
½ cup fresh ginger root, chopped
16 cups sliced, semi-ripe mangos
½ cup sliced almonds

Steps:

  • In a large saucepan combine vinegar, white sugar, brown sugar, cinnamon, ground ginger, allspice, cloves, nutmeg, chile peppers and salt. Bring to a boil; boil for 1/2 hour.
  • Stir in onions, garlic, golden raisins, raisins and ginger and boil for another 1/2 hour.
  • Stir in mangos (and almonds if using), reduce heat to low and simmer for 1/2 hour. Pour mixture into sterilized jars, to 1/2 inch below lid level, and seal.

Rob's Mango and Chilli Chutney image

Adding 1 of the mangoes at the end, means that this chutney retains a superb fresh flavour. Can be left in the fridge for 1 month or preserved and canned for over 1 year (follow the canning notes link on home page) Lovely with Indian or Mexican food or to enhance a cooked meat and cheese platter. Add a spoonful to curries or mix with cold shredded chicken, curry powder and mayonnaise for a lovely baked potato or sandwich filling. Just make sure your mangoes are really ripe and soft.

Number Of Ingredients 16

2 ripe mangoes, cut into small cubes
4 red chilies, 3 de-seeded and cut fine 1 sliced
1 red pepper, de-seeded and cut into short thin strips
2 small onions, grated
1 lime, juice and zest separated
1 inch piece gingerroot, grated
1 cup sugar
2/3 cup white vinegar
1 cup hot strong green tea, made with 2 green teabags
2 bay leaves
1 large cinnamon stick, roughly broken
4 cardamom pods, split
1 teaspoon whole black peppercorn
1/2-1 whole star anise
2 teaspoons mustard seeds
2 teaspoons salt

Steps:

  • In a scalded piece of muslin cloth tie up only the bay leaves, star anise, cinnamon, cardamom pods and peppercorns together and put into large heavy based pan. Alternatively if you don't have any muslin cloth you can fish the spices out later. Add everything else to the pan along with the spices reserving HALF of the mango, the lime juice and 1 third of the ginger.
  • Bring to the boil, reduce heat slightly and simmer until thick and almost no liquid remains.
  • Remove the spice bag or spices meant for the muslin spice bag, squeezing out any excess liquid.
  • By now you should be able to make a channel through the middle of the pan with a wooden spoon that is not immediately filled with excess liquid.
  • Add the reserved mango, ginger and lime juice, bring back to the boil and boil for 1 minute only.
  • Divide between sterilized jars, seal and leave to cool.
  • Best ever!

We live in Saudi Arabia in a close-knit community full of different cultures, and our neighbors from Pakistan have become like our extended family away from home. Kokub, one of our neighbors, makes the most amazing mango chutney. A few years ago she invited me to help her. Of course, she doesn't use a recipe, so the NEXT time I went over with my measuring cups and scale so I could recreate her magic on my own. What an incredible experience!

4 green (under ripe) mangoes - peeled, seeded, and cut into strips
1 (1 inch) piece fresh ginger root, chopped
3 cloves garlic, peeled
2 ½ cups white sugar
1 teaspoon salt
½ teaspoon red pepper flakes
1 teaspoon cumin seed
2 cardamom pods
4 cardamom seeds
1 (3 inch) cinnamon stick
5 whole cloves
1 cup distilled white vinegar
5 black peppercorns, crushed

Steps:

  • Place the mangoes into a large pot. Crush the ginger and garlic using a mortar and pestle until they become a smooth paste; stir the paste into the mangoes. Stir in the sugar, and season with salt, red pepper flakes, cumin seed, cardamom pods and seeds, cinnamon stick, and cloves. Stir to blend, and then cover the pot. Leave the pot sitting out at room temperature overnight.
  • The next day, place the pot over medium heat. Cook, stirring occasionally, until mixture begins to thicken, about 30 minutes. Stir in the vinegar and peppercorns; cook for 1 more minute. Cool before using.

Number Of Ingredients 9

1/4 cup vegetable or peanut oil
1 red onion, diced
1 green pepper, diced
1 red pepper, diced
2 tablespoons fresh ginger, minced
2 tablespoons jalapeno pepper, minced
1 1/2 cups white vinegar
1 cup sugar
3 mangos, cut into 1/2-inch squares

Steps:

  • In a saucepan, heat oil over medium-high heat until hot but not smoking. Add red onion, and cook until translucent, 3 to 4 minutes. Add green and red peppers. Stir for 1 minute. Add ginger, jalapeno pepper, white vinegar, sugar, and mangoes. Simmer, stirring occasionally, until liquid has thickened slightly, 15 to 20 minutes.
  • Remove from heat, and allow to cool to room temperature.

2 1/2 pounds firm-ripe mangoes, peeled and diced
1/2 cup diced red bell pepper
1/2 cup diced red onion
1 red Thai chile, seeded and sliced
1 (2-inch) piece ginger, peeled and grated
1/4 cup currants
3/4 cup packed light brown sugar
1 teaspoon cardamom pods
1 cinnamon stick
1/2 cup cider vinegar
1/2 lemon, juiced
1 tablespoon chopped green onion

Steps:

  • In a large saucepan, combine all ingredients and bring to a boil over medium high-heat. Reduce the heat to low and simmer until chutney has reached a thick jam consistency, usually 25 to 30 minutes, stirring frequently to prevent scorching. Once the chutney has reached the desired consistency, remove from the heat and set aside to cool. Chutney will keep in an airtight nonreactive container in the refrigerator for up to 2 weeks.

  • Mango: Hard, ripe, peeled, seeded and sliced.
  • Place all ingredients in heavy saucepan over medium heat.

  • Remove from heat, cover, and let stand for about 12 hours.
  • Again bring to a boil, lower heat, and cook for 15 minutes, stirring frequently.
  • Remove from heat and immediately pour into hot sterilized jars.
  • Vacuum seal.
