DORITOS® TACO SALAD
I love this dish! It reminds me of potlucks and summertime. It's full of every texture--warm, cool, crisp, soft, crunchy. It has a touch of sweetness and tanginess from the dressing, and the lovely nacho cheese flavor from the chips, with the taco-seasoned meat. It all works together deliciously and is a quick and easy meal that's ready to go anytime.

Steps:
- Heat a large nonstick skillet over medium to medium-high heat and saute ground beef, diced onion, salt, and pepper together until ground beef is browned and no longer pink and onions are tender, about 10 minutes. Add 1/4 cup water and taco seasoning to the meat. Stir to coat and allow to simmer for 1 minute to thicken. Set aside to cool while you prep the salad.
- Add kidney beans, crushed chips, lettuce, tomatoes, Cheddar cheese, and dressing to a large bowl. Top with meat mixture and toss gently to evenly combine. Serve immediately.

This recipe, from Art Ginsberg, who is Mr. Food, is a delicious -- and healthful -- variation of a popular Southwest salad. All the ingredients of the traditional taco salad are here, with the addition of pasta to make a scrumptous whole-meal salad. So-o-o good, as Mr. Food says, for pot-lucks, too.

Steps:
- Cook pasta according to package directions. Rinse with cold water and dain well. Place in large bowl.
- Brown the beef in a large skillet, stirring to break up clumps, until no pink remains. Drain off the fat and add the taco seasoning mix and water. Stir; bring to a boil. reduce heat and simmer, uncovered, approximately 10 minutes. Drain.
- Toss pasta gently with beef mixture, tomato, onion, cheese and olives. Add taco sauce or salsa; mix gently.
- Serve on a bed of shredded lettuce topped with avocado and crushed corn chips. Serve warm or chilled.

MR. FOOD'S PIZZA PASTA SALAD
From the Mr. Food Website, passed on to me by a co-worker, but adjusted to fit my tastes (decreased oil, decreased cheese). So tasty, you won't believe that it's made from such simple ingredients. Perfect seasonings and done in a flash...even DH couldn't stop commenting on how tasty it was!

Steps:
- Cook pasta to al dente, drain well and transfer to a large bowl.
- While pasta is cooking, whisk oil, vinegar, parmesan cheese, salt, pepper, italian seasoning and garlic powder together in a separate bowl.
- Toss pepperoni halves, diced tomatoes, shredded cheese and diced scallions into the pasta bowl. Add dressing and toss well.
- Refrigerate at least 2 hours before serving.

- Cook pasta according to package directions. Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning; heat through. , In a small bowl, combine the mayonnaise, milk, vinegar, sugar and mustard; set aside. , Drain pasta; place in a large bowl. Add beef and mayonnaise mixture; toss to coat. Add lettuce, tomatoes and cheese; toss to combine. Sprinkle with tortilla chips.
