1 cup plain whole-milk Greek yogurt
2 tablespoons honey, plus more for drizzling
2 teaspoons vanilla bean paste
¼ teaspoon kosher salt
4 assorted medium oranges (such as navel, Cara Cara, and blood oranges)
1 fresh medium pineapple, peeled and cored
½ cup toasted, sweetened coconut chips (such as Dang)

Steps:

  • Whisk together Greek yogurt, honey, 1 tablespoon water, vanilla bean paste, and salt in a medium bowl until smooth. (Store yogurt mixture, covered, in the refrigerator up to 2 days.)
  • Cut peel and pith from oranges; cut oranges into ¼-inch-thick rounds. Cut pineapple lengthwise into ¼-inch-thick planks; cut planks into 2-inch pieces. (Store orange rounds and pineapple pieces in an airtight container in the refrigerator up to 1 day.)
  • To assemble, spread yogurt mixture in a thick layer on a large platter. Arrange fruit over yogurt; drizzle with additional honey. Sprinkle with toasted coconut chips (breaking apart any larger chips), and serve.

My Mom would make this every Thanksgiving and Christmas, and it has been a family favorite for three generations. The dressing is gently cooked, and the salad so light you can serve it anytime.

8 ounces uncooked orzo pasta
¾ cup white sugar
2 large eggs eggs, beaten
2 tablespoons all-purpose flour
½ teaspoon salt
2 (8 ounce) cans pineapple chunks, drained with juice reserved
1 (11 ounce) can mandarin orange segments, drained
1 cup shredded coconut
4 cups frozen whipped topping, thawed

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the pasta and cook until al dente, 5 to 7 minutes. Drain, transfer to a large bowl, and cool.
  • Whisk the sugar, eggs, flour, salt, and reserved pineapple juice together in a saucepan until smooth. Cook and stir over medium heat until the mixture thickens. Pour over cooled pasta, and toss to coat evenly. Cover and refrigerate overnight, or at least 8 hours.
  • Stir the pineapple chunks and mandarin oranges into the pasta mixture. Mix in the coconut if desired. Stir in the frozen whipped topping until evenly blended. Chill until serving.

15 ounce(s) can of manderin orange sections, drained
8 ounce(s) can of pineapple chunks, drained
1 cup(s) minature marshmallows
1 cup(s) fresh red seedless grapes, halved
6 ounce(s) of sour cream
1 cup(s) coconut, flaked
1/2 cup(s) chopped pecans

Steps:

  • Mix together in a medium size glass bowl: orange sections, pineapple chunks, marshmallows, grapes, and sour cream. Gently combine. CHILL several hours or over night. (The night before you are to serve your meal).
  • Right before serving, gently add coconut and pecan pieces, combine well.

1 cup diced fresh pineapple (1/2-inch pieces)
1/2 cup seedless grapes
1 banana, sliced
1 mango, peeled and cut into 1/2-inch dice
1/2 cup canned mandarin oranges in light syrup, strained
1 kiwi, peeled, halved lengthwise and cut across into 1/4-inch pieces
1 cup fat free vanilla ice cream
4 tablespoons rum
2 tablespoons shredded unsweetened coconut, toasted

Steps:

  • In a large mixing bowl, stir the orange juice and honey together until well blended. Add the fruit and toss to combine. Scoop the ice cream into 4 dessert bowls and top with the fruit mixture. Spoon the rum over the top and sprinkle with toasted coconut. Serve immediately.

6 ounces homemade mini marshmallows, approximately 3 cups
1 cup clementine orange segments, approximately 6 clementines

1 cup toasted, chopped pecans
1/2 cup drained maraschino cherries

Steps:

  • Place the cream and sugar into the bowl of a stand mixer with the whisk attachment and whip until stiff peaks are formed. Add the sour cream and whisk to combine. 1 cup old-fashioned oats
1 cup all-purpose flour
1 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon cinnamon
Pinch of salt
6 to 8 large Ambrosia apples, peeled and thinly sliced
1/2 cup brown sugar
1/4 cup all-purpose flour
2 tablespoons fresh lemon juice, plus zest from one lemon
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
Pinch of salt

Steps:

  • For the crumb topping: Preheat the oven to 375 degrees F. Butter a 9-by-13-inch pan or 6 to 8 ramekins.
  • Combine the oats, flour, brown sugar, baking powder, cinnamon and salt in a bowl. Mix the butter into the dry ingredients using a pastry blender or fork.
  • For the filling: Combine the apples, brown sugar, flour, lemon juice and zest, cinnamon, vanilla extract and salt in a bowl. Pour the mixture into the prepared pan or divide evenly between the ramekins.
  • Top the apple mixture with the crumb topping and bake until golden brown and bubbly around the edges, 30 to 40 minutes. Allow to cool for 15 minutes, then enjoy.

My mom always served this colorful, refreshing salad/dessert at Christmastime. Wouldn't be Christmas without it! I don't know where the recipe came from, but we're a southern family, so perhaps it's a southern tradition, I'm not really sure.

1 -2 pink grapefruit
2 -3 tangerines
1 (16 ounce) bag shredded coconut
1 (16 ounce) bag miniature marshmallows (optional)

Steps:

  • Depending on how much you want, and how colorful you want it, you can vary the fruits each time you make it.
  • Carefully separate the fruits into sections and remove all membranes.
  • Mix well into bowl and top with shredded coconut and miniature marshmallows, if so desired. Chill before serving.
  • Can be served as a salad or a dessert.
