CHRISTMAS EGGPLANT (AUBERGINE) (DELICIOUS WINTER VEGETABLES)



Christmas Eggplant (Aubergine) (Delicious Winter Vegetables) image

Fresh winter veggies flavored with seasoned oil and triple cooked. I named this Christmas Eggplant because it was my in-laws contribution to our holiday potluck this year and it was fabulous!

Number Of Ingredients 13

1 large eggplant, peeled and cut into chunks (10"-12-inch long)
1 onion, chopped
1 red bell pepper, chopped
3 garlic cloves, minced
3 zucchini, cut into chunks (6-inch long)
2 roma tomatoes, chopped
1/2 teaspoon italian seasoning
1/4 cup olive oil
1/4 cup seasoned dipping oil or 1/4 cup other seasoned oil
1/8 cup red wine vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup shredded mozzarella cheese (optional)

Steps:

  • In a big pot over medium high heat, add olive oil, garlic, onion, red bell pepper, zucchini, eggplant and Italian Seasoning.
  • You may need to add more oil to coat the vegetables.
  • Don't worry, you will drain most of it off later.
  • Cook and stir until eggplant is tender.
  • It will take 15 minutes or more.
  • While still cooking, stir in Seasoned Dipping Oil, or other seasoned/flavored oil plus vinegar and salt and pepper to taste.
  • After eggplant is tender, turn off heat and then drain the mixture of all excess oil and blot with paper towels.
  • Spread mixture on a baking sheet in a single layer and bake at 325 degrees for 30 minutes.
  • Let cool slightly and then spoon into a casserole dish.
  • Top with mozarella.
  • It can be refrigerated at this point to be served later.
  • Before serving, bake or microwave, covered, until it is hot (if it has been refrigerated) and cheese is melted.

I don't like mushy eggplant so had to develop my own recipe. I've checked in Zaar and although there are some close to mine, there is just enough difference to make it worthwhile posting. When I'm having spaghetti, I always make enough sauce and freeze it so that I can have eggplant the following week or so. I don't peel eggplant but that's your choice.

2 medium eggplants (or 3-4 Chinese eggplants)
salt
1/4 cup oil (vegetable or canola)
1 cup all-purpose flour
4 eggs, more if needed (beaten)
2 cups breadcrumbs (Italian flavor or flavor your own)
3 cups mozzarella cheese (shredded)
1/2 cup parmesan cheese (grated)
2 cups pasta sauce (make your own or purchase)

Steps:

  • Wash eggplant, dry, trim ends.
  • Slice to 1/4 inch rounds.
  • Sprinkle salt on both sides.
  • Spread out in strainer over sink, or in bowl for 1 hour to drain moisture.
  • Rinse well and pat dry with paper towels.
  • Put flour in flat dish, eggs in bowl, breadcrumbs in separate flat dish.
  • Coat both sides of slices in flour.
  • Dip in egg.
  • Coat in breadcrumbs.
  • Stack in separate dish.
  • Heat oil in pan.
  • Brown slices in oil a few at a time, may have to change oil if it gets too brown.
  • Drain on papertowels (I just do this in layers).
  • In a 9x13 baking dish, spread a couple of tablespoons of sauce on the bottom.
  • Place a layer of eggplant (can be overlapped), spread sauce, sprinkle with mozzarella and parmesan.
  • Repeat layers till done. Takes me three layers, so divide all items in three.
  • Bake at 350 for 30-35 minutes until cheese melts.

I got this from the Delicious Living magazine (Oct. 2006). They have quite a few good recipes this month. I used sourdough bread for the breadcrumbs since I had a ton of it and it still turned out great. Not sure if the sourdough made it better or not. Have to try it the regular way too. I also used all dry seasonings, instead of fresh. It's a little time consuming, but great on a fall day. Oh, don't bother to peel the eggplant. It was fine unpeeled.

2 tablespoons olive oil
2 tablespoons balsamic vinegar
6 garlic cloves, minced
4 tablespoons fresh basil, chopped
1/2 teaspoon dried oregano
salt & fresh ground pepper, to taste
2 medium eggplants, peeled and cut into 1/2-inch slices
1 yellow bell pepper, cut into 1/2-inch strips
4 large ripe tomatoes, cut into 1/4-inch slices
3 tablespoons chopped fresh parsley
6 cups whole wheat breadcrumbs
1 teaspoon dried thyme
2 teaspoons chopped fresh rosemary
1/2 cup freshly grated parmesan cheese
2 tablespoons fresh lemon juice
2 tablespoons olive oil
salt & fresh ground pepper, to taste
basil leaves, for garnish

Steps:

  • Preheat oven to 425°. In a small bowl, whisk together oil, vinegar, garlic, basil, oregano, salt and pepper; brush on both sides of eggplant, bell pepper and tomato slices.
  • Place vegetables on a large baking sheet. Jellyroll pan works nice.
  • Cover with foil and bake for 10 minutes.
  • Remove foil and bake another 10 minutes.
  • Lightly coat a shallow casserole or gratin dish with cooking spray.
  • Place a layer of eggplant on bottom; top with a layer of bell pepper, then a layer of sliced tomatoes.
  • Repeat layers, using all remaining vegetables and ending with a layer of tomatoes.
  • Mix together all topping ingredients except fresh basil leaves.
  • Sprinkle over vegetables.
  • Bake for 30 minutes. Garnish with fresh basil leaves.

A quick and easy side dish or appetizer, and an alternative to fried eggplant strips. Could easily be made into a "parmigiana" verison with a bit of sauce and some good mozzarella cheese.

Number Of Ingredients 9

2 large eggplants
1 cup breadcrumbs
1/2-3/4 cup of good quality parmesan cheese or 1/2-3/4 cup pecorino romano cheese
2 eggs, beaten
1 teaspoon garlic salt
1 teaspoon oregano, rubbed between palms
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup olive oil

Steps:

  • Cut ends off of eggplants, cut in half length-wise and then into five pieces, length-wise.
  • Cut across into 3/4" chunks.
  • Steam eggplant chunks for 10 minutes and cool slightly.
  • Heat oil in a large frying pan - you may mix vegetable and olive oil instead of using just olive oil.
  • Squeeze liquid out of steamed pieces with your hands, keeping pieces from getting too mashed.
  • Place bread crumbs (seasoned or unseasoned), parmesan cheese and seasonings into a large bowl and mix.
  • You could use a clove or two of fresh garlic, sauteed in place of the garlic salt.
  • Beat eggs in a small bowl and add to bread crumb mix along with eggplant pieces.
  • Stir to mix well.
  • Form patties of any size, but not exceeding an inch in thickness and place in frying pan.
  • Cook for five minutes on each side.
  • Remove to a towel-lined plate to drain.
  • Place in a warm oven if you are not ready to serve them immediately.
