CREAMY FROZEN FRUIT CUPS
I love to prepare these cool, fluffy fruit cups to give a refreshing boost to many meals. They've been well received at family gatherings and summer barbecues. There's no last-minute fuss since you make them well in advance. -Karen Hatcher, St. Amant, Louisiana

Steps:
- Preheat the oven to 350 degrees F.
- Place the phyllo cups on a baking sheet and bake for 3 minutes; they are already baked, but this will give them a light crisp. Set aside and cool for 5 minutes.
- Add the cream cheese, powdered sugar, milk, orange zest and vanilla to the bowl of an electric mixer fitted with a paddle attachment and whip together until light and fluffy, 1 to 2 minutes. Spoon the mixture into a pastry bag and set aside. Snip a small opening in the tip of the bag with a pair of scissors just before you are ready to fill the cups. No piping top needed.
- Spoon 1/2 teaspoon of the cherry preserves into the bottom of each phyllo cup. Pipe a swirl of the cream cheese mixture into each cup, completely covering the preserves. Top each with a single raspberry and a mint leaf. Transfer them to a serving platter and give them a light dusting of powdered sugar.
GRANDMA'S FROZEN FRUIT CUPS
My grandma passed away quite awhile ago, but this is one thing that really reminds me of her. She would make tons of it and freeze it to have enough all year long. We usually just used old yogurt cups and other random plastic containers with lids to make these in.

Steps:
- Boil water and sugar until slightly thickened; cool slightly.
- Add concentrate, water, lemon juice, and pineapple. Add fruit until juice is thick with fruit. Can be fresh or frozen strawberries, blueberries, grapes, peaches, bananas, raspberries, kiwi, etc. (We usually do strawberries, grapes, bananas, and blueberries) Put in individual cups and freeze.(containers with lids will keep longer.).
- **Serving size depends on the size of containers you freeze this in! 24 is just a random guess, it makes a lot though! The 5 hours freeze time is probably about a minimum**.

Steps:
- Preheat oven to 400ºF (200ºC), and prepare two cookie sheets with parchment paper.
- In a bowl, mix cream cheese, sugar, and vanilla until fully combined.
- Lightly flour the surface and roll out puff pastry on top to flatten.
- Cut each sheet of puff pastry into 9 equal squares.
- On the top right and bottom left of the pastry, cut an L shape approximately ½ inch (1 cm) from the edge.
- NOTE: This L shape should reach all the way down and across the square, however both L shapes should not meet at the ends. Your pastry should look like a picture frame with two corners still intact.
- Take the upper right corner and fold down towards the inner bottom corner. You will now have a diamond shape.
- Place 1 to 2 teaspoons of the cream cheese filling in the middle, then place berries on top.
- Repeat with the remaining pastry squares and place them onto the parchment covered baking sheet.
- Bake for 15-20 minutes or until pastry is golden brown and puffed.
- Enjoy!
