- Mix milk, rum liqueur, and pudding mix together in a bowl until thickened. Gently stir whipped topping into pudding mixture. Spoon into disposable shot cups and place on plate. Freeze until chilled and set, at least 3 hours.

CHRISTMAS PUDDING

- The day before you want to steam the pudding: In a large bowl, thoroughly mix the suet, brown sugar, sifted flour, breadcrumbs, allspice, clove, nutmeg, and cinnamon. Gradually mix in the currants, sultanas, raisins, candied peel, and almonds, followed by the apple and citrus zests. In a small bowl, whisk together the rum, barley wine, and stout, and then beat in the eggs. Pour this mixture over the dried fruit and nut mixture. Mix thoroughly. It should be somewhat loose; if it needs a little more liquid, add some stout. Cover the bowl and refrigerate overnight.
- The following day: Butter a 1-pint pudding mold and pack the pudding mixture into it. Cover with a double piece of parchment and a sheet of foil and tie securely with a string across the top to make a handle. Place the pudding mold in a covered steamer set over a saucepan of simmering water, and steam for 8 hours. Check the water level, adding boiling water as needed. When the pudding is finished, let it cool and then remove the papers and foil. Replace with fresh paper and make a new string for easier maneuvering. Set in a cool place away from light (under the bed works well).
- To reheat, set a saucepan with boiling water over medium heat and put a steamer on top. Reduce the heat to a gentle simmer, set the pudding in the steamer, cover, and let steam for 2 1/4 hours. Top up the water a bit if necessary.
- To serve, remove the pudding from the steamer and take off the wrapping. Slide a palette knife around the pudding, and then turn it out onto a warm plate. Garnish with a sprig of holly. To flambe the pudding, warm a ladleful of brandy over direct heat, and when it is hot, carefully light the brandy. Place the flaming ladle over the pudding, but do not pour until at the table. When you do slowly pour it over the pudding, sides and all, watch it flame! Serve with rum sauce if desired.

CHRISTMAS PUDDING SHOTS
I've not tried this recipe yet, but I'm excitedly waiting for Christmas just so I can make this. The recipe comes courtesy of Manuel (Mani) Martin, Head Chef at Moving Venue Caterers,as published in Manchester Confidential. Personally I'm inclined to think there is no such thing as left-over Christmas pudding, so I might even make an extra one this year for "medicinal purposes" you understand! Cooking time includes chilling.

- Crumble Christmas pudding into a jug. Add the rest of the ingredients and blend with a hand blender until smooth and fluffy. Leave to chill in fridge for approximately 4 hours.
- Blend the mixture again before serving with a little extra milk until you have froth. Pour straight into chilled shot glasses.

If you're looking for a little something special for an adult event and are tired of the traditional gelatin shots, this one's for you! It's quick and easy and tastes GREAT!

- Whisk together the milk, Irish cream liqueur, vodka, and instant pudding mix in a bowl until combined. Continue whisking for 2 minutes.
- Spoon the pudding mixture into shot glasses or disposable 'party shot' cups. Chill until set, about 30 minutes. The shots will have the consistency of mousse.

- Mix the pudding mix with the milk with an electric mixer. Then add the booze and mix. Then add the cool whip and mix. Put into small cups and freeze. Serve with little spoons. Makes 24 2oz. servings. Variations: White Chocolate instant pudding mix with Kahlua instead of Bailey's. (Use slightly less than 1/2 Cup or it will taste too boozy.) Turtle instant pudding mix (they only carry this flavor around X-mas, so stock up when you see it!) with Caramel Bailey's. Chocolate instant pudding mix with Mint Bailey's or peppermint schnapps. French Vanilla instant pudding mix with 1/3 C Amaretto instead of the Bailey's. I haven't tried this one yet, but imagine that Banana instant pudding mix and Brandy or Rum would be divine. If someone tries this combo, let me know how it turns out!
PUDDING SHOTS ALCOHOLIC
I am not allowed to attend any party without a batch of these. At our last party I made over 200 of these and they disappeared. You can use any flavor small size instant pudding and any flavor liquor you desire to come up with your own combination. These are the best! Note-cooking time is freezing time.

- Mix together milk and pudding with an electric mixer until no lumps exist.
- Beat in liquor.
- Gently fold in cool whip.
- Spoon into 2 ounce cups, cover with lids and freeze.
- Some pudding and liquor combos I like to use are chocolate pudding and mint schnapps, banana pudding and coconut rum, coconut cream pudding and banana schnapps, cheesecake pudding and raspberry schnapps, pumpkin spice pudding and spiced rum and my ultimate favorite strawberry pudding and banana schnapps.

- Whisk Kahlua and Instant Pudding together until thick (1 to 2 minutes). Once it has thickened, add Rum and whisk until all lumps and clumps are gone. Once the mixture is nice and smooth again, whisk in Cool Whip. Fill almost ¾ of a 1 ounce plastic shot cup with the mixture then cover and place in the freezer. It does take several hours to set. For BEST results, I let them set overnight. Use little ice cream tester spoons when serving them.
