150 g butter, softened
225 g brown sugar
2 eggs, lightly beaten
350 g plain flour
1 tablespoon baking powder
4 teaspoons mixed spice, ground

Steps:

  • Combine the butter and sugar.
  • Slowly add the eggs and beat until the mixture is smooth.
  • Stir in the flour, baking powder and spice and mix thoroughly.
  • Cover and chill for about 1 hour minimum.
  • Preheat oven to 180 C / 350 F / Gas 4.
  • Carefully roll out the mixture on a floured surface and using Christmas biscuit cutters, cut out various shapes.
  • Using a skewer, make holes at the top of the shape to thread ribbons through.
  • Place on greased baking sheets and bake for about 10 minutes.
  • Cool on a wire rack.
  • When cool, thread with Christmas ribbons, decorate with icing and hang on your Christmas tree.

1 batch Basic Vanilla Cookie Dough
Gel food color

Steps:

  • Preheat oven to 350 degrees. Tint dough with food color as desired. Shape dough into 2 disks, and wrap each in plastic wrap. Refrigerate until firm, about 1 hour.
  • Roll out 1 disk on a lightly floured piece of parchment to a 1/8- to 1/4-inch thickness. Repeat with remaining disk. Refrigerate until firm, about 30 minutes. Using a tree cutter, cut out trees. Using a #12 Ateco pastry tip, cut out ornaments within trees. Working with dough in a contrasting color, use the same rectangular cutter to cut out puzzle pieces that fit within cutouts. Transfer all shapes and pieces to parchment-lined baking sheets. Refrigerate until firm, about 30 minutes. Fit puzzle pieces into cookies. Refrigerate 30 minutes more.
  • Bake until cookies are firm, 12 to 15 minutes. Transfer sheets to wire racks; let cool completely.

5 extra-sharp cheddar cheese sticks (0.75 oz each)
5 Colby-Monterey Jack cheese sticks (0.75 oz each)
2 cans (16.3 oz) refrigerated Pillsbury™ Grands!™ Southern Homestyle Buttermilk Biscuits (8 Count)
2 tablespoons butter
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasoning
1 tablespoon chopped fresh chives or Italian (flat-leaf) parsley
1 can (15 oz) Muir Glen™ organic pizza sauce

Steps:

  • Heat oven to 350°F. Line 18x14-inch cookie sheet with cooking parchment paper.
  • Cut each cheese stick into 4 pieces to make 64 pieces. Separate each can of dough into 8 biscuits. Separate each biscuit into 2 layers for a total of 32 biscuit rounds. Flatten each biscuit round into 4-inch circle.
  • Place 2 pieces of the same type of cheese on center of each round. Fold edges up and over cheese; pinch firmly to seal. Using photo as a guide, place biscuits randomly by assorted cheeses, seam sides down and next to each other in a tree-shaped pattern on cookie sheet, starting with trunk and working up to the top.
  • In small microwavable bowl, microwave butter uncovered on High 30 to 60 seconds or until melted. Stir in garlic powder and Italian seasoning. Brush mixture on tops of biscuits. Bake 29 to 33 minutes or until golden brown and biscuits are no longer doughy in center.
  • Top with chives. In small microwavable bowl, microwave pizza sauce covered on High 60 to 90 seconds, stirring halfway through, until warmed through. Serve cheese-stuffed biscuits with pizza sauce.

1 cup butter, softened
1 egg
1 teaspoon vanilla extract
½ teaspoon almond extract
2 ½ cups all-purpose flour
1 teaspoon baking soda

Steps:

  • Mix confectioners' sugar, butter or margarine, egg, vanilla, and almond extract. Stir in flour, baking soda, and cream of tartar. Cover and refrigerate for 2 hours.

A cookie tree is a great centerpiece for your Christmas table. You can use my recipe or your favorite cut-out cookie recipe. All you need are star-shaped cookie cutters in different sizes.

1 cup white sugar
¾ cup butter, at room temperature
2 eggs
½ teaspoon vanilla extract
2 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
2 cups confectioners' sugar
4 ½ teaspoons meringue powder
3 tablespoons water
1 tablespoon assorted holiday decorations, such as silver balls, sprinkles, etc.
1 ounce yellow fondant
1 tablespoon confectioners' sugar for dusting

Steps:

  • Combine sugar and butter in a large bowl. Cream using an electric mixer until smooth. Beat in eggs and vanilla extract. Combine flour, baking powder, and salt in a separate bowl. Stir into the butter mixture and mix to combine. Shape dough into a ball, cover, and refrigerate at least 1 hour to overnight.
  • Preheat the oven to 400 degrees F (200 degrees C). Line 2 cookie sheets with parchment paper.
  • Roll dough out on a lightly floured surface 1/4- to 1/2-inch thick. Cut out different-sized stars with cookie cutters; the height of the Christmas tree will depend on the number of cookies you stack, but you need at least 7 or 8 stars. Place cookies 1 inch apart on the prepared baking sheets.
  • Bake in the preheated oven until cookies are lightly browned, 6 to 8 minutes. Transfer cookies carefully onto wire racks and cool completely, about 30 minutes.
  • Combine confectioners' sugar, meringue powder, and water in a bowl and beat at low speed using an electric blender until peaks form, 7 to 10 minutes. Pour icing into a piping bag with a star-shaped tip.
  • Place the largest star onto a plate and pipe a little bit of royal icing into the middle. Add the second-largest star on top, turning the star slightly so the points are offset from the previous star cookie. Repeat adding smaller-sized star cookies and attaching them with royal icing. Decorate the cookie Christmas tree with royal icing, silver balls, and other holiday decor. Roll out yellow fondant and cut out a small star to place on top of the cookie tree and secure with royal icing. Decorate remaining cookies to your liking.
  • Dust the finished tree with confectioners' sugar.
