Every time I make this quick blue cheese dip, someone asks for the recipe. It only requires a few items, so its a snap to put together. I often prepare the thick spread with Gorgonzola cheese and serve it with toasted pecans. -Sandy Schneider Naperville, Illinois

1 package (8 ounces) cream cheese, softened
1/3 cup sour cream
1/2 teaspoon white pepper
1/4 to 1/2 teaspoon salt
1 cup crumbled blue cheese
1/3 cup minced fresh chives
Toasted chopped pecans, optional
Apple and pear slices

Steps:

  • Beat first 4 ingredients until blended; gently stir in blue cheese and chives. Transfer to a serving bowl. If desired, sprinkle with pecans. Serve with apple and pear slices.

1/4 cup finely chopped shallot
1 teaspoon minced garlic
2 tablespoons freshly squeezed lemon juice
7 ounces Greek-style yogurt, such as Fage Total
1/2 cup good mayonnaise, such as Hellmann's
4 ounces sharp (mountain) Gorgonzola, crumbled
5 dashes Tabasco sauce, or to taste
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3 tablespoons minced fresh chives
Crudites and/or crackers, for serving

Steps:

  • Place the shallot, garlic, lemon juice, yogurt, mayonnaise, Gorgonzola, Tabasco, salt, and pepper in the bowl of a food processor fitted with the steel blade. Pulse the processor about 12 times, until the mixture is almost smooth but still a bit chunky. Add the chives and pulse two or three times, until combined. Transfer to a serving bowl, cover with plastic wrap, and chill for at least 2 hours to allow the flavors to develop. Serve with vegetables and/or crackers for dipping.

1 (2 pound) loaf processed cheese, cubed
1 ½ pounds ground beef
⅔ cup water
1 (1.25 ounce) package taco seasoning mix
1 (16 ounce) jar picante sauce

Steps:

  • Melt processed cheese in a slow cooker set for high heat. Stir occasionally to avoid burning.
  • Place ground beef in a large skillet. Cook over medium high heat until evenly brown. Drain beef, and mix in water and taco seasoning mix. Cook and stir 2 to 4 minutes.
  • Stir seasoned beef into the melted processed cheese. Mix in salsa. Cook and stir until well blended. Serve warm.

1 1/2 cups warm water
2 tablespoons yeast
1/4 cup sugar
2 1/2 teaspoons salt
1 1/2 teaspoons dry mustard
2 eggs
1/4 cup oil
2 tablespoons butter, softened
5 cups flour (and a bit extra)
2 cups shredded cheddar cheese
2 cups cubed cheddar cheese (scant)
2 tablespoons olive oil (or melted butter)
1 teaspoon seasoning salt (we like "Spike")

Steps:

  • Generously grease two loaf pans; set aside.
  • In mixing bowl, whisk water and yeast, let rest 2-3 minutes.
  • Then whisk in sugar, salt, mustard, eggs, oil, butter, then stir in HALF the flour.
  • Begin kneading with dough hook on LOW for 5-8 minutes, adding more flour to make a soft elastic dough; form into ball in mixing bowl--spritz dough with oil spray, cover bowl loosely with plastic wrap; let rise for 30 minutes.
  • Turn out dough on lightly floured table, punch down gently.
  • Divide dough in half; press each half into an oval; sprinkle 1 cup of shredded cheese over each oval, press into dough, then roll each oval into a jelly roll.
  • Cut each roll into THICK slices, then in half again (odd shaped chunks of dough).
  • Arrange chunks in prepped loaf pans; scatter cubed cheese over dough chunks; drizzle oil or butter over this, sprinkle on the seasoned salt.
  • Cover pans with plastic wrap, let rise in warm spot 30-45 minutes (quite puffy).
  • Preheat oven to 350. Bake loaves until browned and sizzling--cheese will be melted--about 35-40 minutes.
  • Cool in pan 10 minutes, then remove and serve.

This cheese dip is easily the best that I've ever had, and being a college student I've had quite a lot. The only reason there are ever leftovers is because this dip is so delicious and filling. I recommend Mission® or On The Border® chips because this dip is rather thick and you need a durable chip that wont break off too easy!

1 pound ground beef
1 onion, diced
2 cups shredded Cheddar cheese
1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®), drained
1 (8 ounce) package cream cheese, softened
1 (8 ounce) jar picante sauce
½ teaspoon garlic powder
½ teaspoon ground cumin
1 (2 pound) loaf processed cheese (such as Velveeta®), cubed

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir sausage, beef, and onion in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Transfer meat mixture to a large pot and add Cheddar cheese, tomatoes with green chile peppers, cream cheese, picante sauce, garlic powder, and cumin.
  • Heat cheese mixture over medium-high heat. Gradually stir in processed cheese until cheese is melted, about 10 minutes.

  • Reserve 2 tablespoons cheese for the top.
  • Heat all other ingredients until bubbly.
  • Pour into 2 cup serving bowl and top with cheese.

2 tablespoons Worcestershire sauce

  • In saucepan, brown meat.
  • Drain grease.
  • Add remaining ingredients.
  • Simmer until blended, stirring occasionally.
  • I serve with Doritos.
