PASTA PRIMAVERA WITH FRESH LINGUINE



Pasta Primavera with Fresh Linguine image

3 cups all-purpose flour, plus additional for dusting
5 large eggs
Salt
1 stick (8 tablespoons) unsalted butter
8 ounces asparagus, woody ends trimmed, chopped
3/4 cup peas
Handful green string beans, chopped
2 garlic scapes, chopped
1 yellow onion, chopped
Salt
1/2 cup heavy cream
1/2 cup chicken stock
1 cup grated Parmesan
Big handful of fresh basil leaves, torn

Steps:

  • For the fresh pasta: On a clean work surface, make a mound with the flour, then create a well. Pour the eggs into the well and use a fork to gradually flick the flour into the eggs, whisking in thoroughly as you go. Once all of the flour and eggs have been incorporated into a very shaggy dough, form it into a ball with your hands. Knead the dough, dusting with more flour if the dough is too sticky, or moistening your hands with water if the dough is too dry, until it has the texture of smooth leather, about 5 minutes. Wrap it in plastic wrap and leave at room temperature for 25 minutes to rest.
  • Use your pasta machine to roll out the dough and cut fresh linguine, following the pasta machine's instructions. Dust with flour and cover the freshly-cut noodles with a damp towel while you work, and until ready to cook.
  • Bring a large pot of water to a rolling boil, and season with a handful of salt.
  • For the sauce: Heat a large saute pan over medium-high heat. Add the butter, and once it melts, add the asparagus, peas, string beans, garlic scapes, onions and a pinch of salt. Cook just until the onions soften and the scapes are fragrant, about 5 minutes. Add the cream and chicken stock and cook to reduce, about 3 minutes.
  • Add the fresh pasta to the pot of boiling water, and cook until the pasta is just al dente, 2 to 3 minutes. Remove the pasta and transfer to the pan with the primavera sauce, then transfer everything to a serving bowl. Toss everything to coat, and taste for seasoning. Garnish with fresh Parmesan and basil and serve.

2 medium zucchini or 1 large zucchini, cut into thin strips
2 yellow squash, cut into thin strips
1 onion, thinly sliced
1 yellow bell pepper, cut into thin strips
1 red bell pepper, cut into thin strips
1/4 cup olive oil
Kosher salt and freshly ground black pepper
1 tablespoon dried Italian herbs or herbes de Provence
1 pound farfalle (bowtie pasta)
15 cherry tomatoes, halved
1/2 cup grated Parmesan

Steps:

  • Preheat the oven to 450 degrees F.
  • On a large heavy baking sheet, toss all of the vegetables with the oil, salt, pepper, and dried herbs to coat. Transfer half of the vegetable mixture to another heavy large baking sheet and arrange evenly over the baking sheets. Bake until the carrots are tender and the vegetables begin to brown, stirring after the first 10 minutes, about 20 minutes total.
  • Meanwhile, cook the pasta in a large pot of boiling salted water until al dente, tender but still firm to the bite, about 8 minutes. Drain, reserving 1 cup of the cooking liquid.
  • Toss the pasta with the vegetable mixtures in a large bowl to combine. Toss with the cherry tomatoes and enough reserved cooking liquid to moisten. Season the pasta with salt and pepper, to taste. Sprinkle with the Parmesan and serve immediately.

1 cup canned low-salt chicken broth
16 sun-dried tomato halves (not packed in oil)
1 pound linguine
5 tablespoons olive oil
8 garlic cloves, minced
8 ounces shiitake mushrooms, stemmed, sliced

12 broccoli rabe florets (from about, or 12 small broccoli florets
1/2 cup chopped fresh basil
1 cup freshly grated Parmesan cheese

Steps:

  • Bring broth to simmer in small saucepan. Remove from heat. Add tomatoes; let stand until soft, about 20 minutes. Drain, reserving broth. Thinly slice tomatoes.
  • Cook linguine in large pot of boiling salted water until tender but still firm to bite, stirring occasionally.
  • Meanwhile, heat oil in heavy large skillet over high heat. Add minced garlic; sauté until golden, about 1 minute. Add reserved broth, sun-dried tomatoes, mushrooms, zucchini, broccoli rabe florets and basil. Simmer until vegetables are tender, about 3 minutes.
  • Drain linguine; return to pot. Add vegetables and toss to combine. Season with salt and pepper. Transfer mixture to bowl; sprinkle with cheese.

1 clove garlic, crushed
2 cups broccoli florets
1 medium carrot, julienned
2 cups vegetable broth
1 (8 ounce) package penne pasta
½ cup frozen peas
½ cup freshly grated Parmesan cheese

Steps:

  • Heat the olive oil and garlic in a large skillet over medium heat. When garlic is tender, remove from skillet and set aside. Place the broccoli and carrot in the skillet, and cook 2 minutes, just until heated through.
  • In a pot, bring the vegetable broth to a boil. Stir in the penne pasta and heated crushed garlic clove. Cook for 5 minutes, or until pasta is almost al dente. Remove and discard garlic clove.
  • Transfer the partially cooked pasta and broth to the skillet. Mix in the peas. Cover skillet, and continue cooking 10 minutes over medium heat, or until pasta is al dente and vegetables are tender. Toss with the Parmesan cheese to serve.

1 lb boneless skinless chicken breast, cut into bite size pieces
2 fresh garlic cloves, minced
1 teaspoon basil
1 cup sliced green pepper

8 cups cooked linguine
1 cup cooked broccoli
2 eggs, beaten
1 cup cherry tomatoes, cut into halves
1/4 cup grated parmesan cheese (romano mixed works too)

Steps:

  • Heat oil in large non-stick skillet and saute chicken, garlic, and basil funtil chicken is cooked through.
  • Add veggies and cook until tender, add cooked broccoli last.
  • Add cooked linguine to pan and toss.
  • Add eggs and stir over medium heat to coat all ingredients and thicken.
  • Add tomatoes and cheese last and toss.
  • season to taste with slat, and freshly ground pepper.
  • I usually add more cheese at the table.
  • This goes great with garlic bread and salad to complete your meal.

Use fresh garden peas in this pasta primavera for a simple, colourful seasonal dish

85g unsalted butter
1½ tbsp each chopped parsley , mint and chives
400g shelled garden peas , about 1.25kg/2lbs 12oz in their pods
200g baby carrot , ideally with leaves
200g baby or regular sized courgettes
200g slim green beans
400g tagliatelle
splash of olive oil
finely grated zest and juice of 1 lemon
as much fresh basil as you like

Steps:

  • Gently melt the butter with the parsley, chives and mint and set aside in a warm place. Prepare all the vegetables: shell the peas, wash the carrots and trim away any leaves but leave a short green stalk in place (the stalk is edible but it is also there to show the vegetable is freshly harvested!), thickly slice the courgettes and trim the green beans.
  • Bring 2 large pans of water to the boil (one for the pasta, one for the veg). Lightly salt the water in one of the pans, add the pasta to it and cook until al dente (10-12 minutes or according to the cooking instructions on the packet). While the pasta cooks, add the carrots to the other pan and cook for 2 minutes. Next throw in the peas, green beans and courgettes and continue to cook for 3 minutes. Drain both the pasta and the vegetables well. Return the pasta to the hot pan with a splash of olive oil, half the herb butter and the lemon zest and juice. Return the vegetables to their pan, toss with the rest of the herb butter and season well with salt and pepper.
  • Spoon the pasta on to serving plates, grind some black pepper over and serve with the vegetables on top. Scatter on as much basil as you like and serve straight away.

  • Bring a large pot of water to a gentle boil. Meanwhile, shell the peas and the fava beans and set them aside separately. Once the water is boiling, add the fava beans and boil for 2 minutes. Drain and rinse with cool water, then remove the pale green envelope surrounding each fava bean. Set the finished beans aside.
  • Bring a large pot of lightly salted water to a boil. Cook the linguine until al dente then drain and set aside. Keep a cup or so of the pasta water to add to your sauce.
  • To make the soffritto, heat two tablespoons of olive oil over medium heat in a large frying pan. Add the onion and saute gently for about 2 minutes. Add the garlic and parsley and continue to saute until the onions are soft and slightly coloured and the parsley is dark; about 10-15 minutes. If your pan is starting to look to dry and the onions are getting too much direct heat, add a splash of olive oil and reduce the heat a little. Don't try to rush the soffritto, as you'll end up burning the onions and garlic and ruining the flavour.
  • Add peas and asparagus to the soffritto and saute 3-4 minutes. Add fava beans, saute an additional 2 minutes. Add splash of pasta water to keep the sauce loose and moist.
