PEANUT BUTTER SHOESTRING HAYSTACKS



Peanut Butter Shoestring Haystacks image

Mom learned to make these candies from her best friend, Lela. We had to have them every Christmas once we had tasted them.

Number Of Ingredients 5

2 c peanut butter
1 pkg (12 ounces) semi sweet chocolate chips
1 pkg (11-12 ounces) butterscotch chips
1 tsp vegetable oil
3 c canned shoestring potatoes

Steps:

  • 1. In a medium sauce pan at medium heat, combine peanut butter, chocolate chips, and butterscotch chops. Stir constantly until all are melted and combined well. Stir in oil. Remove from heat and stir in shoestring potatoes.
  • 2. Drop candy by teaspoons full onto waxed paper or parchment paper covered cookie sheets. Refrigerate for about 2 hours or until set.

6 ounces semi-sweet chocolate chips
6 ounces butterscotch chips
1 1/2 cups shoestring potato chips (*more if needed)
1 cup salted cashews or 1 cup salted peanuts
1 cup packed seedless raisin

Steps:

  • Nuke chips til melted, stirring once through.
  • Stir in rest of ingredients, and drop onto waxed paper-lined cookie sheet by tablespoons, mounding a bit to form little "haystacks".
  • Chill til set.

6 oz. semi-sweet chocolate chips
6 oz. butterscotch chips
1 3/4 cups shoestring potato chips
1 cup salted cashews or salted peanuts if preferred
1 cup (packed) raisins
tiny colorful candy sprinkles for the holidays if desired

Steps:

  • 1. Nuke chips til melted, stirring once through. Stir in rest of ingredients, and drop onto waxed paper-lined cookie sheet by tablespoons, mounding a bit to form little "haystacks". Chill til set. While chocolate is still wet, you can sprinkle them as you go along with small candy sprinkles if desired to add color and fun for a holiday.

These look like mini haystacks thus the name. Kids and adults love them. Very "Harvesty" when served on dish with the mini pumpkins or candy corn, etc.

1 (5 ounce) can chow mein noodles
1 cup cocktail peanuts

Steps:

  • Microwave morsels in glass bowl on medium just until shiny.
  • Add chow mein noodles and nuts.
  • Stir quickly and thoroughly until noodles are evenly coated.
  • Quickly spoon onto waxed paper.
  • Let them set until dry (about 15 minutes).
