MY MOM'S VENEZUELAN CHUPE
The Venezuelan version of chicken noodle soup, I still make it every time I have a cold... and my foster kids beg me to make more!

Steps:
- Melt butter in a large pot over medium heat. Add potatoes and onion. Cook, stirring constantly, until tender but not brown, about 5 minutes. Increase heat to medium-high and add chicken. Cook until chicken is white, 7 to 10 minutes. Add water and bring to a simmer. Add corn and bring soup to a simmer again.
- Season soup with salt and pepper. Add milk and mozzarella cheese.

PERUVIAN CHICKEN SOUP (AGUADITO DE POLLO)
Traditional Peruvian Chicken Soup (Aguadito de Pollo) is a light version of the Peruvian Chicken Chowder (Chupe de Pollo).

Steps:
- Season the chicken with salt and pepper. Heat the olive oil in a large, heavy pot over medium-high heat. Stir in the onion, garlic, and serrano chili; cook until the onion has softened, about 1 minute. Add the chicken, and continue to cook for 5 minutes.
- Stir in the cilantro, peas, corn, and red pepper; cook for 1 minute. Pour in the chicken broth, potatoes, and rice. Bring to a boil, then reduce heat to medium-low, and simmer until the chicken is opaque and the potatoes are tender, about 40 minutes.

CHUPE DE POLLO
Steps:
- cocinar las pechugas de pollo en 2 tazas de agua, agregarle el pimenton, ajies, cebollin, apio españa, ajos,cebolla, cebollin,cilantro, agregarle la sal. dejar cocinar bien las pechugas.
- cuando esten listas sacarlas y esmecharlas dejarlas a un lado.
- luego se cuela el consome, se agrega el pollo esmechado y las papas en cuadros pequeños dejar que ablanden, se licuan las verduritas (pimenton, ajo, cebollin etc. etc.) y se le agrega al consome.
- aparte se licua el queso crema philadelphia de kraft con la 1/2 taza de leche y se deja aparte.
- cuando las papas esten blandas se agrega la mezcla del queso crema philadelphia de kraft se revuelve por 5 mn. y se apaga,
- se le agrega cilantro picadito.disfrutenlo es muy rico a mi familia le encanta

- Remove 1 chile and 1 teaspoon adobo sauce from can; reserve remaining chiles and sauce for another use. Finely chop chile; set aside.
- Heat oil in a large Dutch oven over medium heat. Add chopped chile and sauce, onion, celery, carrot, bell pepper, cumin, and oregano. Cook 7 minutes or until onion is tender, stirring frequently. Add a bit of water if mixture seems dry. When vegetables are tender add garlic and saute for a moment.
- Stir in broth; bring to a boil. Add chicken, cover, reduce heat to medium-low, and simmer 25 minutes or until chicken is tender. 15 minutes into cooking time, add potatoes. Remove chicken with a slotted spoon, and cool slightly. Shred chicken with 2 forks and return to pan.
- Add hominy (I like a strong hominy flavor and don’t rinse mine, but if in doubt, feel free to do so), bring to a simmer over medium heat. Cook, uncovered, 10 minutes or until potatoes are tender.

Stir in broth; bring to a boil. Add chicken; cover, reduce heat to medium-low, and simmer 30 minutes or until chicken is tender. Remove chicken with a slotted spoon, and cool slightly. Shred chicken with 2 forks; cover and keep warm.
- Remove pan from heat; let stand 5 minutes. Place one-third of broth mixture in a blender; process until smooth. Pour pureed broth mixture into a large bowl. Repeat procedure in two more batches with remaining broth mixture. Return pureed broth mixture to pan. Stir in potatoes and hominy; bring to a simmer over medium heat. Cook, uncovered, 20 minutes or until potatoes are tender. Stir in chicken and cream; simmer 5 minutes. Remove from heat, and stir in reserved adobo sauce, tomato, cilantro, and salt. Serve with lime wedges.
