AIR FRYER CHURROS
Who doesn't love churros? They're a delicious cinnamon-sugar treat, and making them in an air fryer takes them from a guilty treat into a sweet treat. After over 7 experiments, I do NOT recommend using a parchment paper liner. I do NOT recommend adding the cinnamon sugar to the dough.

Steps:
- Melt butter in a saucepan over medium-high heat. Pour in milk and add salt. Lower heat to medium and bring to a boil, continuously stirring with a wooden spoon. Quickly add flour all at once. Keep stirring until the dough comes together.
- Remove from heat and let cool for 5 to 7 minutes. Mix in eggs with the wooden spoon until pastry comes together. Spoon dough into a pastry bag fitted with a large star tip. Pipe dough into strips straight into the air fryer basket.
- Air fry churros at 340 degrees F (175 degrees C) for 5 minutes.
- Meanwhile combine sugar and cinnamon in a small bowl and pour onto a shallow plate.
- Remove fried churros from air fryer and roll in the cinnamon-sugar mixture.

These Mexican fritters are very common at fairs. In my border hometown, the line at this stand is always overwhelming. People wait hours in line just to get a taste of these churros. I have run across several recipes but this is the best one by far.

Steps:
- In a small saucepan over medium heat, combine water, 2 1/2 tablespoons sugar, salt and 2 tablespoons vegetable oil. Bring to a boil and remove from heat. Stir in flour until mixture forms a ball.
- Heat oil for frying in a deep fryer or deep pot to 375 degrees F (190 degrees C). Pipe 5- to 6-inch strips of dough into the hot oil using a sturdy pastry bag fitted with a medium star tip. Do not overcrowd the oil. Fry until golden; drain on paper towels.
- Combine 1/2 cup sugar and cinnamon. Roll drained churros in cinnamon and sugar mixture.

- In medium saucepan, combine butter and water. Bring to a boil; add salt and remove from heat.
- Add flour all at once; beat with wooden spoon.
- Return to heat; beat with wooden spoon for 2 minutes. Remove from heat; let cool.
- Beat in an egg at a time. Add vanilla and continue beating until mixture is satiny.
- Press mixture through fluted tip pastry bag or cookie press, 1/2-inch wide opening. With wet scissors, cut into 2-inch strips as it drops in fat heated to 350*F. Fry for 2 minutes on each side. Do a few at a time.
- Drain; roll in cinnamon sugar mixture.

- In a medium saucepan melt the butter, then add in the milk, sugar and salt. Bring the mixture just to a boil and removed from heat. Mix in the flour and stir until it becomes a thick paste. Return the saucepan to medium heat and stir continuously for several minutes as the paste dries out. When the paste is just starting to leave a film residue on the saucepan, remove from heat and put the paste into a bowl of an electric mixture.
- Mix on low and allow the paste to cool to about 180°F or below. Once the paste has cooled, add the eggs one at a time, beating well between each addition. You want the paste to be shiny and come off the beater in thick strands, it will not clear the bowl. You may not need all of the eggs to get to this stage, I think I only used 6.
- Immediately put the paste into a piping bag and pipe into about 6-inch lengths onto a paper towel, I did two churros per paper towel. Meanwhile, bring a heavy-bottomed pot filled with vegetable oil to 375°F. Chill the piped paste before frying, as this helps to keep their shape. I put them on sheet pans in the freezer for about 10 minutes.
- When you are ready to fry your churros, have your cinnamon sugar ready, as well as paper towels to absorb the oil. Now this is the tricky part, when your oil is hot, take the paper towel with the piped paste and carefully place it all face down into the oil. With a pair of tongs, grab an end of the paper towl and peel it away from the churros and oil. It may require a little jostling, but you should be able to remove all of the paper towel, leaving your churros behind. Using the paper towels keeps the churros straight, you may alternately pipe the paste straight into the oil for a more curly product.
