CHUTNEY MEATLOAF
A large moist loaf making great leftovers! Your taste buds will thank you! The roasted garlic and the sweet and hot chutney brings meatloaf to whole nother level! Oh do get an extra bottle of chutney for topping the meatloaf at serving. ;)

Steps:
- Preheat oven to 375 degrees.
- Saute the onions and peppers in a large pot in a touch of olive oil till translucent about 5 minutes.
- Remove from heat add the 6 ounces chutney, garlic, bread crumbs, milk, parsley, salt, pepper, Worcestershire sauce. Combine well then add the eggs, and meats.
- Place in a 2 quart casserole dish and mold the top smooth. Top with 2 ounces of chutney.
- Bake for 70-75 minutes or until center is no longer pink and instant read thermometer reads 160°F when inserted in center of loaf. Let stand, covered, 15 minutes before slicing letting the juices absorb back into the loaf.
MANGO MEAT LOAF (OR MEATBALLS)
This calls for ground beef, however I think it might be better with pork. Found it in my mango recipe hunt. Meatballs: 1 oz big .5 oz nice Serve on butter lettuce and add chutney or dip them!!! This is nice with chutney....for a recent dinner I offered Nepali Chutney 452765 and Mango Chutney Spicy 451858 this has an afterburn and Peanut dipping sauce ala Cheesecake Factory 453586.

BOBOTIE MEATLOAF
This is the closest approximation of the South African National Dish that I could make. It is a sweet and savory meatloaf topped with an egg custard, pronounced "bwo-bwo-tea", once again, the closest approximation of the actual Afrikaans pronunciation that this American can say. The flavors are amazing, and are best served with African Yellow Rice (recipe can be found on Allrecipes), and plenty of hot mango chutney available on the side. Enjoy!

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2- or 3-quart casserole dish.
- Soak bread in milk in the prepared dish.
- Combine raisins and apricots in a shallow bowl. Pour water and lemon juice over fruits and let soak while you cook.
- Heat olive oil in a pan over medium-high heat. Saute onions and garlic until onions are translucent, about 5 minutes. Add chutney, Worcestershire sauce, curry, and 1 teaspoon turmeric. Cook until flavors start to blend, about 2 minutes. Add beef and lamb and cook until just barely browned, 3 to 4 minutes. Drain fat from pan.
- Squeeze milk from bread; reserve milk in a bowl. Crumble bread into meat mixture. Add the raisins and apricots; mix well. Pour into the casserole dish and pat into a loaf. Roll up lemon and orange leaves and bury them at regular intervals into the loaf.
- Beat eggs with the reserved milk; add salt, pepper, and remaining turmeric. Pour over loaf. Cover with casserole lid or aluminum foil.
- Bake in the preheated oven until an instant-read thermometer inserted into the center reads at least 130 degrees F (54 degrees C), about 1 hour. Uncover and continue baking until top is slightly browned, about 15 minutes more.
- Let meatloaf cool for 10 minutes before slicing; remove buried leaves.

MINUTE MANGO MEATLOAF

Steps:
- Heat oven to 350 degrees.
- In a mixing bowl, combine the ground meat, chopped onion, ginger, crumbs, garlic, curry powder, salt, egg and 3-4 tbsp of Mango Chutney. Use hands to mix ingredient together.
- Place 1/2 of the meat mixture in a cake or loaf pan.
- Scoop and smear a layer of Mango Chutney on top.
- Top off the rest of the meat mixture into the pan.
- Bake for 45-60 minutes until cooked thoroughly.
- Once baked, allow 10 minutes rest before garnishing with fresh Cilantro and another dollop of Mango Chutney. Serve with basmati rice (or garlic mashed potatoes) and steamed green beans.
