The Classic French Chateaubriand image

Chateaubriand and wine sauce is a classic of the French kitchen. Delicious and decadent, use this staple on steaks, burgers, and more.

1 pound beef tenderloin (center cut)
Salt (to taste)
Freshly ground black pepper (to taste)
3 tablespoons unsalted butter (softened and divided)
2 tablespoons olive oil
1 medium shallot (finely chopped)
1/2 cup dry red wine (medium-bodied)
1/2 cup demi-glace
1 tablespoon fresh ​tarragon (chopped, or 2 teaspoons dried​)

Steps:

  • Gather the ingredients.
  • Preheat the oven to 375 F. Evenly season the beef with salt and pepper.
  • Melt 2 tablespoons of the butter with the olive oil in a large skillet (preferably cast iron) set over medium-high heat until cloudy and bubbly.
  • Place the seasoned meat in the pan and brown for 3 minutes without moving the meat. Using tongs, carefully turn the tenderloin on its side and brown for 3 minutes more. Repeat the same browning process on all exposed surfaces of the meat.
  • Transfer the tenderloin to a rack placed in a roasting pan and put in the oven. (Set aside the skillet with any accumulated juices for making the sauce.) Roast the beef to your desired doneness, about 15 minutes for medium-rare, 20 minutes for medium, and 23 minutes for medium-well.
  • Remove the meat from the oven and transfer to a warm serving platter. Lightly tent the meat with foil and let it rest for 15 minutes.
  • While the tenderloin is resting, make the wine sauce. Combine the shallot with the juices in the skillet and sauté over medium heat until the shallot is soft and translucent.
  • Pour the wine into the skillet and bring the sauce to a boil, scraping up any browned bits on the bottom of the pan.
  • Continue boiling the sauce until it reduces by half.
  • Add the demi-glace to the sauce and continue boiling the mixture until slightly thickened.
  • Remove the sauce from the heat and stir in the remaining 1 tablespoon softened butter and tarragon. Taste and season with salt and black pepper as needed.
  • Slice the meat on the diagonal and serve with the wine sauce. Enjoy.

For beef
* Chateaubriands; about 1 pound each per person
* melted butter, enough to baste Chateaubriands during cooking
* beef marrow
For sauce
2/3 * 2/3 cup of finely chopped green onions
1/4 * 1/4 pound butter, plus one large pat
1 * 1 cup red wine (preferably a good Bordeaux)
1 * 1 can of brown gravy
1 * 1 dash of cognac
* juice of 1 lemon
* chopped parsley

Steps:

  • Prepare beef: Broil the Chateaubriands. During the cooking, brush them frequently with melted butter and turn them often. Meanwhile, extract the marrow and slice it in thin rounds. Poach these for about 1 minute in boiling salted water. Prepare sauce: Sauté green onions in 1/4 pound butter until just colored. Add red wine and cook this down to one half its volume. Add gravy, cognac, pat of butter and the lemon. Sprinkle the sauce heavily with parsley. When the meat is done to your satisfaction, remove it to hot plates, pour the sauce over each portion and top with slices of poached marrow. With this serve lyonnaise potatoes, watercress, crisp French bread, fruit and cheese. Try a fine bottle of Bordeaux with this.

6 tablespoons butter
1/2 cup onion, minced
1 1/2 teaspoons garlic, minced
1/2 cup scallion, minced (green onions)
1/2 cup boiled ham, minced
1/2 cup mushroom, minced
1/3 cup all-purpose flour
2 tablespoons Worcestershire sauce
2 cups beef stock
1/2 cup red wine (Cabernet, Shiraz or Merlot)
1 1/2 teaspoons thyme leaves
1 bay leaf
1/2 cup fresh parsley, minced
salt, to taste
fresh ground black pepper, to taste

Steps:

  • Melt the butter in a large saucepan or Dutch oven and sauté the onion, garlic, scallions and ham for 5 minutes.
  • Add the mushrooms, reduce the heat to medium and cook for for 2 minutes.
  • Blend in the flour and cook, stirring for 4 minutes, then add the Worcestershire sauce, beef stock, wine, thyme and bay leaf. Simmer very slowly until the sauce thickens, about 1 hour.
  • Before serving, remove the bay leaf and add the parsley.
  • Season with salt and pepper to taste.

2 (8 ounce) fillets beef tenderloin filet, 1 1/2 inch thick
2 tablespoons vegetable oil
freshly ground black pepper to taste
2 tablespoons butter

Steps:

  • Rub the beef with the vegetable oil and season with freshly ground black pepper. Let the beef rest at room temperature for 1 hour.
  • Heat a large, heavy skillet over medium-high heat. Quickly sear the meat about 5 seconds on each side, then remove from skillet. Melt and brown the butter in the skillet. Return the meat to the skillet, and fry 4 to 5 minutes on each side. The outside of the meat should be browned and crisp. Remove from the skillet and let stand for about 5 minutes for the juices to settle.
