Cilantro Jalapeno Pesto with Lime image

This is a spicy alternative to classic basil pesto. You can control the spiciness by using less jalapeno and by removing the seeds and white membrane of the pepper before adding it to the pesto. If you like the spice, just throw it all in!

2 ½ tablespoons toasted pine nuts
¼ cup extra virgin olive oil
5 cloves garlic
1 tablespoon fresh lime juice
½ fresh jalapeno pepper, seeded
¼ cup grated Parmesan cheese

Steps:

  • Combine the cilantro, pine nuts, olive oil, garlic, lime juice, jalapeno pepper, and Parmesan cheese in a blender; pulse until the mixture reaches a soft, paste-like consistency.

1 cup fresh cilantro leaves
1/4 cup grated Parmesan cheese
1/4 cup chopped walnuts
2 tablespoons lime juice
1/2 cup olive oil
Cooked jumbo shrimp, peeled and deveined

Steps:

  • Place cilantro and cheese in a food processor; cover and pulse until chopped. Add walnuts and lime juice; cover and process until blended. While processing, gradually add oil in a steady stream. Serve with shrimp.

3 T lime juice
1 cup Trader Joe's chile lime cashews or regular roasted cashews will work also
1/2 cup Olive oil
1 tsp. salt
1 tsp. black pepper
1 tsp. cayenne pepper
1/2 cup grated asiago cheese

Steps:

  • process in food processor until smooth and the consistency of dip. Add more olive oil if too thick or more cashews if too thin. Put into 4- 1 cup freezer containers, refrigerate 1 and freeze the rest. A little goes a long way. Keeps in refrigerator up to 2 weeks and in freezer for months

3 1/2 cups new mexico peppers, roasted, peeled and chopped (Anaheim Chile)
1 1/4 cups fresh cilantro leaves (1 large bunch)
1 teaspoon lime zest
1 tablespoon lime juice
1 cup pine nuts
1/2 cup olive oil
4 garlic cloves, peeled
salt
1 cup parmesan cheese (of a mixture of both) or 1 cup romano cheese, grated (of a mixture of both)

Steps:

  • In a blender or food processor add the chiles, cilantro, lime zest, lime juice, nuts, olive oil, and garlic.
  • Puree until amost smooth. Stir in the grated cheese, taste and adjust salt to taste.

3/4 cup raw cashews
1/4 cup extra-virgin olive oil
1/4 teaspoon curry
Salt and pepper
5 medium zucchini
Shredded beets

Steps:

  • In a food processor, pulse 1 clove garlic and 1/4 cup tightly packed cilantro leaves. Add 3/4 cup raw cashews, 1/4 cup extra-virgin olive oil and 1/4 teaspoon curry powder; process until almost smooth and season with salt and pepper. Using a mandoline or handheld slicer fitted with the wide-tooth blade and set to 1/4-inch thickness, slice 5 medium zucchini lengthwise from top to bottom (rotating when you get to the seeds) into thin noodles. Toss with the pesto. Let sit at room temperature for 5 minutes before serving. Top with a mound of shredded beets.
