I wanted to add a little flavor to my jasmine rice and decided to try this and it worked out great. My husband and my son loved it and almost finished the whole pan of it.

Number Of Ingredients 9

1 cup uncooked jasmine rice
2 teaspoons olive oil
1/4 cup chopped onion
1 garlic clove, finely chopped
1 Knorr cilantro minicube
14 ounces Swanson chicken broth
1/4 teaspoon table salt
1/4 teaspoon black pepper
2 teaspoons ground cumin

Steps:

  • In a high sided skillet (that has a cover), saute the rice in oil over medium high heat until the rice is solid white, then add onion and saute until onion is translucent, add garlic and saute just a little. Rice should be lightly tanned. Pour the broth slowly into the skillet. Add cilantro seasoning minicube, salt, cumin, and pepper, stir and bring to a boil then lower it to a simmer on low heat. Make sure minicube has dissolved.
  • Cover & cook on low until the water is absorbed and the rice is tender. Do not uncover and DO NOT STIR while rice is cooking. About 20-25 minutes.

2 tbsp olive oil 30 mL
1 ½ cups Compliments Jasmine Rice (uncooked), rinsed and drained 375 mL
1/3 cup minced shallots 75 mL
1 tbsp minced fresh ginger 15 mL
2 cups Compliments Chicken Broth 500 mL
½ tsp salt 2 mL
½ tsp ground black pepper 2 mL
½ cup finely chopped cilantro 125 mL
1 lime, zested and juiced

Steps:

  • Heat the oil in a medium saucepan over medium heat. Add the rice, shallots and ginger; stir and cook 1 to 2 min. until the shallots turn translucent. Stir in the broth, salt and pepper; bring to a boil then immediately reduce to a gentle simmer. Cover and cook until the rice has absorbed the liquid, 10 to 13 min.
  • Remove from heat and let stand 5 min. Gently fluff the rice with a fork. Stir in the cilantro, lime zest and juice. Adjust seasonings to taste, if necessary, before serving.

1 lb boneless, skinless chicken breast, cubed
1 tablespoon olive oil
1 yellow onion, diced
2 poblano peppers, chopped
2 cloves garlic cloves, minced
2 ½ cups low-sodium chicken broth
1 lime, juiced
14 ½ oz canned cooked black beans, rinsed and drained
2 diced tomatoes
1 ½ cups jasmine rice, uncooked, rinsed
½ teaspoon salt
¼ teaspoon pepper
3 tablespoons cilantro, chopped

Steps:

  • In a skillet, heat a small amount of oil on medium-high heat. Add chicken and season with salt and pepper.
  • Cook the chicken thoroughly, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  • Add remaining olive oil to the skillet. Add onion and peppers and sauté for 5-7 minutes.
  • Add garlic and cook for an additional minute.
  • Add the chicken broth, lime juice, black beans, tomatoes, rice, salt, and pepper and stir to combine.
  • Reduce heat, cover, and simmer for 15-20 minutes or until rice is cooked through.
  • Add chicken back to the pot. Add cilantro and combine.
  • Serve immediately.
  • Enjoy!

1 bunch fresh cilantro (2 inches of bottom stems trimmed and discarded, tops and remaining stems coarsely chopped)

Steps:

  • Place rice in large sieve; rinse under cold running water until water runs clear.
  • Drain.
  • Heat oil in heavy large saucepan over medium-high heat.
  • Add ginger and garlic; stir until fragrant, about 30 seconds.
  • Add rice and stir 3 minutes.
  • Stir in broth and salt.
  • Sprinkle cilantro over.
  • Bring to boil.
  • Reduce heat to medium-low; cover and cook until rice is tender, about 18 minutes. Remove from heat; let stand covered 10 minutes.
  • Fluff rice with fork.
