Avocado Lime Salad image

A great vegan salad using avocado, tomatoes and scallions. Adapted from Vegetarian Times magazine. A popular Spanish and Mexican recipe.

3 tablespoons fresh lime juice (1 large lime)
1/2 teaspoon salt, plus
1/8 teaspoon salt
4 small tomatoes, cut in 3/4-inch pieces (2 1/2 cups)
2 medium ripe avocados, cut into 3/4-inch dice (1 1/2 cups)
3 scallions, thinly sliced (white and green parts)
1 large garlic clove, minced
1 tablespoon extra virgin olive oil
1/4 teaspoon ground cumin
1 head boston lettuce, torn into large pieces (8 cups)
1 medium cucumber, peeled, quartered lengthwise, seeded and thinly sliced diagonally (1 cup)
2 tablespoons coarsely chopped fresh cilantro

Steps:

  • In a medium glass or ceramic bowl, whisk together 2 tablespoons lime juice and 1/2 teaspoon salt.
  • Add tomatoes, avocados, scallions and garlic.
  • Using rubber spatula, gently fold to combine.
  • Season to taste with pepper.
  • In large bowl, whisk together olive oil, cumin, remaining tablespoon lime juice and 1/8 teaspoon salt.
  • Add lettuce and toss.
  • Season to taste with pepper.
  • Divide lettuce among plates.
  • Top each with mound of avocado mixture.
  • Top with cucumber slices.
  • sprinkle with cilantro and serve.

Yield Makes 2 servings; can be doubled

1/3 cup finely chopped red onion
3 tablespoons mayonnaise
2 tablespoons chopped fresh cilantro
3 teaspoons fresh lime juice
1/2 teaspoon ground cumin
1/2 teaspoon grated lime peel
8 ounces crabmeat
1 ripe large avocado, halved, pitted, peeled Lime wedges

Steps:

  • Stir red onion, mayonnaise, cilantro, 2 teaspoons lime juice, cumin and lime peel in medium bowl to blend. Mix in crabmeat. Season salad with salt and pepper. Brush avocado halves with remaining 1 teaspoon lime juice to prevent discoloration. Arrange avocado halves, cut side up, on plates. Mound crab salad on each avocado half. Serve salad with lime wedges.

Oh what a good combination - lime juice, cumin, and cilantro are so good together. This salad would be wonderful on a hot summer day or, in our opinion, any day! A great recipe if you're hosting a girls lunch or looking for a light dinner.

1/2 pound(s) cooked, peeled shrimp cut into bite size chunks
1/2 pound(s) imitation crab meat chopped into bite size chunks (you can use fresh if you wanna go to the trouble, but not canned)
2 tablespoon(s) chopped fresh cilantro
2 tablespoon(s) chopped fresh Italian parsley
2 tablespoon(s) fresh lime juice
1 teaspoon(s) cumin
1/2 teaspoon(s) ground or super finely chopped lime peel
3 - fresh avocados
- extra lime juice to squeeze onto avocados
3 tablespoon(s) mayonaise

Steps:

  • Stir mayo, juices, peel and all spices together in a bowl to mix well.
  • Add crab and shrimp and stir till well coated.
  • Cut avocados in half, remove pit, run a spoon around the peel to make it easier to eat, sprinkle well with lime juice, salt and pepper (I also LOVE the GREEN Tabasco sauce for this step but it is optional).
  • Load avocados with the salad mixture and enjoy! These are SOOOOOOO easy and taste GREAT!
