BBQ CHICKEN KABOBS WITH TEQUILA LIME CILANTRO



BBQ Chicken Kabobs with Tequila Lime Cilantro image

1/2 cup fresh lime juice
1/2 cup chopped fresh cilantro leaves and stems, plus more chopped leaves, for serving
1/2 cup chopped fresh cilantro leaves and stems, plus more chopped leaves, for serving
1/3 cup canola oil
1 tablespoon tequila
2 teaspoons kosher salt
1/2 teaspoon crushed red pepper flakes
2 cloves garlic, chopped
Freshly ground black pepper
3 to 4 boneless, skinless chicken breasts, cut into twenty-four 1-inch pieces
2 zucchini, cut into 1/2-inch rounds
1 red bell pepper, cut into 1-inch pieces
1 yellow bell pepper, cut into 1-inch pieces

Steps:

  • Special equipment: 6 wooden skewers
  • In a large ziptop bag, add the lime juice, cilantro, oil, tequila, salt, red pepper flakes, garlic and some black pepper. Mix together and then add the chicken. Let the chicken marinate for 2 hours. During the last 20 minutes, soak the wooden skewers in water.
  • Preheat a grill to medium heat.
  • Remove the chicken from the marinade and pat dry (discard the marinade). Alternate threading the chicken, zucchini and bell peppers on each skewer. Cook the kabobs, turning after grill marks form, until the chicken is cooked through and the vegetables are charred at the edges, 12 to 15 minutes. Sprinkle with the remaining chopped cilantro before serving.

1-1/2 pounds boneless skinless chicken breasts, cut into 1-inch pieces
3 tablespoons lemon juice
1-1/2 teaspoons salt
1/2 cup water
1/4 cup plain yogurt
1 cup fresh cilantro leaves
1/3 cup fresh mint leaves
2 serrano peppers, sliced
1 piece fresh gingerroot (1 inch), coarsely chopped
4 garlic cloves, sliced
3 medium sweet onions, cut crosswise into 1/2-inch slices
4 tablespoons canola oil, divided
Lemon wedges

Steps:

  • In a large bowl, toss chicken with lemon juice and salt; let stand 15 minutes. Meanwhile, place water, yogurt, herbs, peppers, ginger and garlic in a blender; cover and process until smooth. Stir into chicken mixture; refrigerate, covered, 2 hours., Moisten a paper towel with cooking oil; using long-handled tongs, rub on grill rack to coat lightly. Brush onions with 2 tablespoons oil. Grill, covered, over medium heat or broil 4 in. from heat 10-12 minutes or until tender, turning occasionally., Remove chicken from marinade; discard marinade. Thread chicken onto six metal or soaked wooden skewers. Grill, covered, over medium heat or broil 4 in. from heat 10-12 minutes or until chicken is no longer pink, turning occasionally and brushing with remaining oil during the last 4 minutes. Serve with grilled onions and lemon wedges.

1/3 cup extra virgin olive oil
2 teaspoons minced garlic
1/2 cup orange juice, Freshly Squeezed
1 tablespoon lime juice, Freshly Squeezed
3 tablespoons cilantro, Chopped
1 large chili pepper, Seeded & Cut Into 1-inch pieces
8 wooden skewers, Soaked in Water for 3 Hours
1 large orange, Cut Into Half
salt, To Taste
fresh ground pepper, To Taste

Steps:

  • Toss all the ingredients together (except for the whole orange) and marinate for 30 minutes.
  • Alternate the chicken and the chile pepper pieces on the wooden skewers and season with freshly ground pepper and salt.
  • Place the skewers on a preheated grill over a moderate flame and cook for 3 minutes on each side until the chicken is cooked.
  • Season once more with salt and pepper and squeeze the fresh orange over the cooked kabobs.
