1 Tbsp. brown sugar
1 tsp. ground cinnamon
1 cup vanilla low-fat yogurt

Steps:

  • Place peach halves, cut-sides up, in microwaveable pie plate.
  • Combine next 3 ingredients; sprinkle over peaches.
  • Microwave on HIGH 30 sec. to 1 min. or until sugar begins to melt and peaches are heated through. Top with yogurt. Serve warm.

1 peach (fresh)
1 teaspoon brown sugar
1/2 teaspoon butter
dash ground cinnamon
2 Tablespoon whipped cream

Steps:

  • Preheat oven to 350 degrees. Line baking sheet or dish with aluminum foil or parchment paper to make cleanup easier.
  • Slice clean, ripe peaches in half. Remove the stone. Set peaches skin side down in the baking dish.
  • Spoon brown sugar in the hole where the pit was removed.
  • Slice butter and set over the brown sugar.
  • Sprinkle with cinnamon.
  • Bake for 5 minutes.
  • Move rack a little lower from the broiler than normal. Mine was 8 inches away. Turn oven to broil. Broil peaches for about 3-5 more minutes until peaches are a little bit roasted and caramelized. Watch the peaches closely because they can burn quickly.
  • Top with whipped cream or vanilla ice cream.

Steps:

  • Preheat grill (or a grill pan) to medium heat. Mix brown sugar and cinnamon in a small bowl. Set aside.
  • Lightly brush the cut side of peaches with melted butter.
  • Place peaches, cut side down, onto grill pan. Grill for about 3 minutes, or until peaches start to soften just a little and grill marks form. Flip peaches over and sprinkle tops with cinnamon brown sugar mixture.

3 fresh, very ripe peaches (halved and pitted)
2 tablespoons extra virgin olive oil
2 tablespoons pure maple syrup or honey
1 tablespoon brandy (bourbon, or rum (optional))
1 tablespoon coconut sugar or light brown sugar
1 teaspoon pure vanilla extract
1 teaspoon ground cinnamon
¼ teaspoon kosher salt
Vanilla ice cream, Greek yogurt, or heavy cream, for serving

Steps:

  • Preheat oven to 350 degrees F. Lightly coat a 9x9-inch or similarly sized baking dish that's large enough to hold the peach halves in a single layer with nonstick spray. Pick a dish that's sized to where your peaches fit comfortably side by side, but there isn't too much excess room around them. Arrange peaches cut-side up in the dish.
  • In a medium mixing bowl, stir together the oil, maple syrup, brandy, coconut sugar, vanilla, cinnamon, and salt. Spoon the mixture over the peaches, filling the center and letting it run over the sides.
