2 cups Sugar
2/3 cup Light Corn Syrup
3/4 cup Water
1/2 to 1 teaspoon Cinnamon Oil
Red Food Coloring
Powdered sugar

Steps:

  • In a 2-quart saucepan, mix together sugar, corn syrup and water. Stir over medium heat until sugar dissolves. Insert candy thermometer, making certain it does not touch the bottom of the pan. Bring mixture to a boil without stirring. Continue to cook the syrup, without stirring, until the temperature reaches 260º F; add drops of coloring until desired color is achieved. Do not stir; boiling action will incorporate color into syrup. Remove from heat precisely at 300° F (temperature will continue rising), or until drops of syrup form hard, brittle threads in cold water (hard crack stage). After boiling action has ceased, add flavor and stir.USE CAUTION WHEN ADDING FLAVORING TO AVOID RISING STEAM. It will make you cough! Carefully pour syrup onto lightly greased and foil lined cookie sheet. Do not refrigerate. Cool completely; break sheet candy into small pieces and dust with powdered sugar, if desired. Store in airtight container. If making lollipops, do not dust with powdered sugar, but place in sucker bags and secure with twist ties. Store hard candy in a cool, dry place. Do not refrigerate.

This candy is good any time of the year but it's especially festive at Christmas! Vanilla, lemon or walnut extract can be easily substituted for almond to add a little variety to your candies.

1 cup water
3 ½ cups white sugar
1 ½ cups light corn syrup
1 tablespoon almond extract
1 tablespoon red food coloring

Steps:

  • Lightly grease one 12x18 inch or larger baking sheet.
  • In a large heavy saucepan, combine the water, sugar and corn syrup. Heat over high, stirring constantly with a heat resistant spoon, until all sugar is dissolved. Stop stirring and bring to a boil. Boil until a candy thermometer reads 310 degrees F (154 degrees C). Remove from heat.
  • When bubbling has ceased, stir in the flavoring and a food coloring. Spread into the prepared pan so that the candy is no more than 1/4 inch thick. Cool for 45 minutes in the refrigerator. Remove from refrigerator, crack into pieces and enjoy!

I love cinnamon...absolutely love it. This is my stepmothers recipe passed to her by her mother. I have been chomping at the bit to get my hands on it. Finally, this year during Christmas break, scoreboard!

2 c sugar
3/4 c white karo syrup
1 c water
1/2 tsp red food coloring
1 vile cinnamon oil (.125 oz)
powdered sugar

Steps:

  • 1. On low heat, cook sugar, Karo and water until sugar is dissolved.
  • 2. Once sugar is dissolved, heat rapidly without stirring to 285 degrees.
  • 3. Remove from heat and stir in food coloring and cinnamon oil.
  • 4. Quickly pour mixture into greased cookie sheet, spread thin and allow to cool.
  • 5. Once cool, break into pieces and add to ziplock bag with powdered sugar to prevent sticking.

Pour onto sheet cake pan that had been coated with powdered sugar. Tilt pan from side to side to spread mixture out evenly. Then sprinkle powdered sugar on top. Let cool. Break with spoon.

1 cup water
3-3/4 cups sugar
1-1/4 cups light corn syrup
1 teaspoon red liquid food coloring
1 teaspoon cinnamon oil
1/3 cup confectioners' sugar

Steps:

  • Line a 15x10x1-in. pan with foil; butter the foil and set aside. In a large heavy saucepan, combine water, sugar, corn syrup and food coloring. Bring to a boil over medium heat, stirring occasionally. Cover and cook for 3 minutes to dissolve sugar crystals. , Uncover; cook on medium-high heat, without stirring, until a candy thermometer reads 300° (hard-crack stage), about 25 minutes. Remove from the heat; stir in cinnamon oil (keep face away from mixture as oil is very strong). Immediately pour onto prepared pan. Cool completely, about 45 minutes. , Break the candy into pieces using the edge of a metal mallet. Sprinkle both sides of candy with confectioners' sugar. Store in airtight container.

This is from Southern Sideboards. This is an old candy thats been around for a long time. It is too hot for kids to help with the cooking part. But when it cools they love to break it into pieces. I love the cinnamon.

1 c water
3 3/4 c granulated sugar
1 1/4 c light karo
1 tsp oil flavoring (available at stores in flavors such as cinnamon,anise, orange, wintergreen and many others)
a few drop food coloring
sprinkle powdered sugar

Steps:

  • 1. Sprinkle powdered sugar on 2 (11 x 15 inch) cookie sheets.
  • 2. Combine sugar, Karo and water in heavy saucepan and stir over medium heat until sugar dissolves. Continue to cook, without stirring, until syrup reaches 290 F on candy thermometer.
  • 3. Remove from heat and add food coloring to desired intensity and the desired oil flavoring. I like the flavor a little stronger so I increase the amount of flavoring alittle more. (Be careful with the cinnamon and stand back when you add it or it will clear your sinus passages for you)
  • 4. Pour onto cookie sheets,cool and break into small pieces. I just let it cool and whack it with the bottom of a bottle it shatters easily. This looks very pretty in jars for Christmas gifts and to set out. Not to mention it taste great!
