Cinnamon Chex Mix image

Crunchy cinnamon roll chex drizzled with white chocolate

1 12oz. box Rice Chex or Corn Chex
1 1/4 cups brown sugar
1 tsp cinnamon
1/2 cup butter
1/4 cup corn syrup
1/2 tsp baking soda
1 tsp vanilla
1/2 cup white chips

Steps:

  • Pour cereal into a very large mixing bowl and set aside.
  • Combine brown sugar, cinnamon, butter, and corn syrup in a small saucepan. Bring to a boil, stirring constantly. Remove from heat and stir in soda and vanilla. Pour over cereal and stir lightly till all pieces are coated.
  • Spread onto a greased cookie sheet with sides. Mine is 15x10". Bake at 250° for about 30 minutes, stirring every 10 minutes.
  • Pour onto parchment paper to cool.
  • Melt white chips in a glass bowl in the microwave at 50% power, stirring every 30 seconds. Drizzle over cooled Chex mix.

1 1/2 cups Corn Chex Cereal
1 1/2 cups Wheat Chex Cereal
1 cup mixed nuts
1 cup mini pretzels
1/4 cup butter
3 tablespoons white sugar
3 tablespoons brown sugar
2 teaspoons ground cinnamon

Steps:

  • Add the cereal, nuts, and pretzels to a large microwave safe bowl.
  • In a small saucepan, melt the butter.
  • Sprinkle the white and brown sugar and cinnamon over the cereal mixture and pour the butter over the top. Stir well to coat.
  • Microwave on high for 1 minute. Stir again to coat.
  • Spread the mixture on a paper towel lined baking sheet to cool.
  • Store in an airtight container.

1 teaspoon white sugar
1 (.25 ounce) package active dry yeast
½ cup warm water (110 degrees F/45 degrees C)
½ cup milk
¼ cup white sugar
¼ cup butter
1 teaspoon salt
2 eggs, beaten
4 cups all-purpose flour
¾ cup butter
¾ cup brown sugar
1 cup chopped pecans, divided
¾ cup brown sugar
1 tablespoon ground cinnamon
¼ cup melted butter

Steps:

  • In a small bowl, dissolve 1 teaspoon sugar and yeast in warm water. Let stand until creamy, about 10 minutes. Warm the milk in a small saucepan until it bubbles, then remove from heat. Mix in 1/4 cup sugar, 1/4 cup butter and salt; stir until melted. Let cool until lukewarm.
  • In a large bowl, combine the yeast mixture, milk mixture, eggs and 1 1/2 cup flour; stir well to combine. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  • Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  • While dough is rising, melt 3/4 cup butter in a small saucepan over medium heat. Stir in 3/4 cup brown sugar, whisking until smooth. Pour into greased 9x13 inch baking pan. Sprinkle bottom of pan with 1/2 cup pecans; set aside. Melt remaining butter; set aside. Combine remaining 3/4 cup brown sugar, 1/2 cup pecans, and cinnamon; set aside.
  • Turn dough out onto a lightly floured surface, roll into an 18x14 inch rectangle. Brush with 2 tablespoons melted butter, leaving 1/2 inch border uncovered; sprinkle with brown sugar cinnamon mixture. Starting at long side, tightly roll up, pinching seam to seal. Brush with remaining 2 tablespoons butter. With serrated knife, cut into 15 pieces; place cut side down, in prepared pan. Cover and let rise for 1 hour or until doubled in volume. Meanwhile, preheat oven to 375 degrees F (190 degrees C).
  • Bake in preheated oven for 25 to 30 minutes, until golden brown. Let cool in pan for 3 minutes, then invert onto serving platter. Scrape remaining filling from the pan onto the rolls.

1/2 teaspoon ground cinnamon
1 crust from 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
1 tablespoon butter, melted
1/4 cup white vanilla baking chips (from 11-oz bag)
6 cups Cinnamon Chex™ cereal
1/4 cup butter
2 tablespoons sugar

Steps:

  • Heat oven to 425°F. Line large cookie sheet with cooking parchment paper.
  • In small bowl, mix 3 tablespoons sugar and the cinnamon. On lightly floured surface, unroll pie crust; fold in half. Roll into 13x9-inch rectangle. Brush with 1 tablespoon melted butter; sprinkle with sugar mixture to within 1/4 inch of edges.
  • Starting at long edge, tightly roll into log, securely pressing seam together and pinching ends to seal. Refrigerate until firm, about 30 minutes.
  • Trim ends of dough log to a 12-inch log. Cut dough log into 40 slices or "cinnamon rolls." Arrange rolls on cookie sheet. Bake 8 to 10 minutes or until light golden brown; remove parchment and cinnamon rolls from pan, and cool slightly.
  • In small microwavable bowl, microwave white vanilla baking chips 30 to 60 seconds, stirring after 30 seconds, until melted and smooth. Transfer to small resealable food-storage plastic bag; cut off small corner of bag. Drizzle on top of cooled rolls, and refrigerate 15 to 20 minutes or until drizzle is set.
  • Meanwhile, line large rimmed cookie sheet with waxed paper. In large microwavable bowl, add cereal. In small microwavable bowl, microwave 1/4 cup butter uncovered on High 20 to 40 seconds or until melted. Stir in 2 tablespoons sugar; microwave about 30 seconds or until sugar is dissolved. Pour butter mixture over cereal, mixing to coat. Microwave uncovered on High 3 to 5 minutes, stirring after every minute, until thoroughly glazed. Spread mixture on cookie sheet; cool 15 minutes.
  • In large serving bowl, mix cereal and cinnamon rolls.

Steps:

  • Combine Rice Chex™, 1 cup Bugles®, 1 cup graham cracker sticks, and 1/4 cup pecan halves in a large bowl.

  • Preheat oven to 350.
  • Place cereal in a large, mixing bowl.
  • Spray with a cookie sheet nonstick baking spray.
  • In a small ziplock baggie combine cinnamon and sugar and set aside.
  • In a heavy saucepan over medium heat, heat brown sugar, butter, and corn syrup until the mixture comes to a boil. Let boil for one minute, stirring constantly, then remove from heat.
  • Pour over cereal and stir until cereal is coated.
  • Then mix in 3/4 cup of cinnamon sugar and mix well.
  • Spread cereal on prepared baking sheet. Sprinkle the rest of the cinnamon/sugar mixture on top. Bake for about 5 minutes, then flip with a spatula and bake for 3 more minutes, until cereal turns golden brown. 3 cups brown sugar
2 1/2 teaspoons cinnamon
1 pound butter
1 cup white corn syrup
1 teaspoon vanilla
1 teaspoon baking soda
1 cup white chocolate chips
2 (14 oz.) boxes of corn Chex cereal
2 (6 oz) bags pecan halves (@ 3 cups), optional
2 brown paper bags from your grocer's checker

Steps:

  • First, open paper bags and place one inside of the other. Pour Chex cereal and pecans into bags. Set aside. Cover table or counter top with wax paper and spray with non-stick cooking spray. In a large kettle, combine and stir cinnamon and brown sugar until well mixed. Add butter and corn syrup and bring to a boil on the stove, stirring frequently as not to burn. When everything is all melted and incorporated, take off heat and add vanilla and baking soda. Stir until foamy. Pour over the double bagged Chex. Roll down top and shake well. Microwave for 2 minutes and shake well. Microwave for 2 more minutes and shake again. Make sure to turn the bag on all sides each time you shake to spread the caramel. Open bag and check to make sure the caramel is spread evenly throughout the Chex. If not, shake again. However, you should be able to dump the Chex onto the sprayed wax paper. Spread the mix as thin as possible. Pour white chocolate chips into zip-loc bag. Place in microwave for 20 seconds and use fingers to mix. Repeat until white chocolate is melted. Cut a small corner off of the bag and drizzle white chocolate over cereal mix. Let stand until chocolate sets. Serve immediately, or package in your favorite containers to share as gifts.
