You can make this tasty cake lower in fat by using 1/2 cup butter, 1/2 cup applesauce, non-fat sour cream, and egg beaters.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 10 inch tube pan.
- In a large mixing bowl cream together the butter or margarine and 2 cups of the sugar until fluffy. Add the vanilla and the eggs one at time beating mixture well after each egg.
- Combine flour with baking powder, baking soda, and salt. Add alternately with sour cream to egg mixture. Beating just enough after each addition to keep batter smooth.
- Combine walnuts, cinnamon, and remaining 3/4 cup of sugar.
- Spoon 1/3 of the batter into prepared pan, sprinkle with 1/3 of the walnut mixture. Repeat layers two more times.
- Bake at 350 degrees F (175 degrees C) for 70 minutes or until center is done. Let cake cool in pan for 10 minutes then remove pan and let cake continue cooling on a wire rack.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
- Place dates in a bowl. Sprinkle 1 teaspoon baking soda on top and mix well. Add 1/3 cup boiling water, stir, and set aside until dates have swelled, about 10 minutes. Squeeze with your hands to remove most of the liquid.
- Meanwhile, mix flour and 1 teaspoon baking soda together in a bowl. Combine instant coffee, milk powder, and 2 tablespoons boiling water in a separate bowl; mix until dissolved.
- Beat sugar, margarine, and eggs together in a large bowl with an electric mixer until well blended. Add coffee mixture and dates; beat until well mixed. Gradually mix in flour. Pour batter into the prepared baking pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 35 to 40 minutes.

- In a large bowl, cream butter and 2 cups sugar until light fluffy. Add 1 egg at a time, beating well after each addition. Beat in vanilla. Combine flour, baking soda and salt; add alternately with sour cream, beating just enough after each addition to keep batter smooth. , Spoon a third of batter into a greased 10-in. tube pan. CINNAMON DATE COFFEECAKE
I can't remember where I found the beginnings of this recipe, but it is an easy no-yeast quick coffeecake that looks beautiful and tastes divine! Its fillings are versatile once you get the hang of making it. I sold it by the slice at the church bake sale. It always went fast and in fact once a woman just bought the whole cake...

- 1. Preheat oven to 400 degrees. Prepare your pan. You can either put this into an 8" cake pan or on a parchment lined baking sheet. It will spread out more on the baking sheet, up more in the cake pan. Rub crisco or oil into the cake pan if using. I usually cut a piece of parchment to fit in it.
- 2. In one mixing bowl, whisk together the flour, sugar, salt and baking powder. Cut the butter in with a pastry cutter or your fingers. In another smaller mixing bowl mix the milk and egg together. Pour this into the bowl with the flour mixture and mix with a fork until a cohesive dough. If it seems too dry to come together, add a teaspoon of milk at a time until it works. Pull it out onto a floured surface and knead lightly 2-3 times. Set aside.
- 3. Rinse out the egg bowl and to it put the chopped dates (they do love to stick to the knife), brown sugar and rum or vanilla. Mix this up with a fork. Set aside. Have soft butter ready.
- 4. On a floured surface, roll out the dough into a rectangle about 8" x 14". There will be stickiness. Just add sprinkles of flour as needed. Spread the soft butter over the surface. Sprinkle the brown sugar date mixture over the butter. When done you can sprinkle on chopped nuts if you are using. (I once even added chopped fresh cranberries I had on hand. You could add chocolate chips, apricots or all kinds of things.)
- 5. Roll up the dough from one of the long sides. You may have to use the help of a bench scraper or spatula to help it when sticking to counter. When rolled, pinch the long edge shut. Gently roll back and forth a little pressing gently. You will have a snake like tube now. Slice this tube in half the long way, so you have 2 long half tubes, cut sides up. Pinch one of the ends together and now pick each half up gently and twist them around each other, picking up the right side and laying over the left one, now take the new right one and cross over the left one, etc. Try to keep the cut side up. When done, form a circle by pinching the 2 ends together to make a ring. You can bake it just like this. Or once I added some sprinkles of streusel and sliced almonds on top before baking.
- 6. Put into the hot oven and bake for 25-30 minutes, keeping an eye. When it is barely golden brown, take it out. You can glaze with a powdered sugar/milk mixture if you like. Or a light glaze made with powdered sugar, milk, a teaspoon of butter and a few drops of vanilla. Speaking of vanilla, if you dont want rum in the cake, but a teaspoon of vanilla in instead.

- In a small saucepan, place dates and add water just to cover. Bring to a boil and remove from heat. Drain dates and place in food processor. Blend until dates have a paste-like consistency.

- Preheat oven to 350 degrees F. Grease a 9x13-inch pan and set aside.
- Prepare the Batter - In a large bowl whisk together the flour, baking powder and salt. Set aside.
- In the bowl of a stand mixer fitted with the paddle attachment, or in a large mixing bowl with an electric mixer, beat the butter and sugars on medium speed until light and fluffy; about 5 minutes.
- Add in eggs one at a time, scraping down the bowl as necessary. The batter will appear to be a bit curdled, but it will come together once fully mixed.
- Add in the sour cream and vanilla extract and mix until evenly incorporated.
- Gradually add in the flour mixture and mix on low speed until combined; scraping down the sides of the bowl as needed.
- Prepare the filling and topping - In a medium mixing bowl, use a fork to combine the flour, brown sugar, cinnamon and melted butter. You'll want this to be slightly clumpy for those yummy pieces of crumbs. Set aside.
- Evenly spread half the batter into the prepared pan. Sprinkle half of the filling/topping mixture over the batter. Top with remaining batter and spread evenly. Finish with the remaining filling/topping mixture.
- Bake in preheated oven for 45-50 minutes. Allow coffee cake to cool completely before drizzling on the glaze.
- Prepare the Glaze - In a small bowl, whisk together the powdered sugar, melted butter, vanilla and 1 tablespoon milk. You want the glaze to be thin enough to drizzle over the cooled cake, but not watery. If the glaze is too thick after adding in the first tablespoon of milk, gradually add in a little more milk, ½ teaspoon at a time until you reach the desired consistency. Drizzle topping over cooled cake.

- Prepare the filling layer and the topping layer in advance (see post). For the cake layer, Prep a 9 X 13 or square pan well for nonstick. Preheat your oven to 325.
- In a medium bowl use a fork or a whisk to blend together the flour, baking soda, and the cinnamon. Set this bowl aside.
- Beat together the butter with the sugar alternative until creamy. Then add the eggs, one at a time, mixing between additions. Lastly, you can add the vanilla extract.
- Now in this step we will alternate adding the sour cream and the flour mixture from the first bowl to the mixing bowl. Add ½ of each at a time, mixing gently between additions. Mix until just combined.
- To layer cake for baking. Pour half of the cake batter from the mixing bowl into the prepped pan. Top this layer with the filling layer. Then cover the filling layer with the remaining batter. Lastly, top this with the topping layer. Bake your coffee cake for 60-65 minutes or until a toothpick comes out clean. Allow your cake to cool before serving.
