1 box Betty Crocker™ Super Moist™ butter recipe yellow cake mix
1/3 cup butter, melted
1 tablespoon milk
2 eggs
3/4 cup packed brown sugar
1/3 cup butter, melted
3/4 cup chopped pecans
1 1/2 teaspoons ground cinnamon
1/3 cup caramel topping

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease or spray 13x9-inch pan.
  • In large bowl, beat cake mix, 1/3 cup butter, the milk and eggs with electric mixer on medium speed about 1 minute or until blended. Spread evenly in pan.
  • Bake 8 minutes. Meanwhile, in medium bowl, mix brown sugar, 1/3 cup butter, the pecans and cinnamon. Crumble sugar mixture on partially baked crust to within 1/2 inch of edges. Drizzle caramel topping over sugar mixture to within 1/2 inch of edges.
  • Bake 23 to 26 minutes longer (25 to 28 minutes for dark or nonstick pan) or until golden brown and slightly puffed throughout. Loosen edges with knife. Cool 30 minutes. Serve warm or cool. For bars, cut into 6 rows by 4 rows. Store covered.

15 1/4 ounces vanilla cake mix
3 ounces vanilla pudding mix, Cook and Serve not instant (box that serves 4)
3/4 cup butter, melted
1/2 cup light brown sugar
2 eggs
1 tablespoon water
2 tablespoons cinnamon
8 ounces cream cheese, room temperature
1/4 cup butter, room temperature
5 cups powdered sugar
2 tablespoons powdered sugar
2 teaspoons cinnamon

Steps:

  • Preheat oven to 350°.
  • Spray 9x13 baking dish with cooking spray, set aside.
  • In large bowl combine all ingredients for the bars. Stir until there are no lumps.
  • Spread into prepared baking dish and bake 20-30 minutes until edges are golden.
  • Let cool completely before frosting (let mine sit 2 hours).
  • Frosting:.
  • In mixing bowl beat together cream cheese and butter until smooth. Slowly add the powdered sugar and continue beating for 1-2 minutes until smooth and creamy.
  • Spread on cooled bars.
  • Sprinkle cinnamon sugar on top for garnish, I used a sieve to create just a light dusting.
  • Cut into squares when ready to serve.
  • Notes:.
  • Store chilled because of the frosting.

Easy and so delicious, these cinnamon roll bars are so good and they are made with cake mix so it's an easy recipe hack that makes a wonderful holiday breakfast or dessert idea. My family loves this recipe year round but I especially think it's great during the holidays because it's such a festive recipe and just like Cinnamon rolls but in a cookie bar!

1 (15.25 oz) box Pillsbury Cinnamon Bun Cake Mix
1/2 cup brown sugar
1/4 cup granulated sugar
1 tablespoon ground cinnamon
2 eggs
1/2 cup (1 stick) butter, melted
2 cups powdered sugar
2 tablespoons milk

Steps:

  • Instructions for Cookie Bars: Preheat oven to 350°. Lightly grease a 9 X 13 baking pan and set aside. In a large mixing bowl add the cake mix, both sugars and the cinnamon. Whisk to combine. In a medium mixing bowl, add the melted butter and two eggs. Whisk until combined. Add the wet ingredients to the dry ingredients and stir until well incorporated. Transfer the cinnamon roll cookie dough to your greased pan and spread it evenly. Bake for 25 minutes or until an inserted toothpick from the middle comes out clean. Cool in the pan, on a wire rack for at least 15 minutes before icing. Instructions for Icing Add the milk to the powdered sugar in a medium bowl and stir until a think glaze forms. If the glaze is too thin, add more powdered sugar. Pour the glaze onto the top of the cinnamon bun cookie bars and spread evenly. Cut into squares and serve.
