CINNAMON DOLCE LATTE RECIPE

Steps:
- Combine the ingredients in a small saucepan over medium heat.
- Bring the mixture to a soft boil. Make sure to stir continuously.
- When the sugar is completely dissolved, and the mixture doesn't look gritty, remove it from heat and let it cool to room temperature.
- Transfer the syrup to a sealable container and store it in the refrigerator.
- Make the coffee. If you have an espresso machine, you should use that. Otherwise, you can use regular coffee; just make it slightly stronger than you normally would.
- Measure the milk. We like to stick with the traditional 4:1 milk-to-coffee ratio for our cinnamon dolce latte. For a single shot of espresso, that means 4 ounces of milk.
- Combine the milk with about 1 tablespoon of cinnamon syrup in a small saucepan. Heat on medium while stirring continuously until the syrup and milk are well mixed.
- Combine the milk/syrup mixture with your coffee and serve!

- Place coffee in filter in brew basket of coffee maker; sprinkle with cinnamon. Place sugar in empty pot of coffee maker.
- Add water to coffee maker; brew. When brewing is complete, stir until blended.

CINNAMON LATTE
These have become a Sunday morning favourite for us. Heavenly coffee to warm your tummy! The original recipe calls for ground cinnamon, but it also works very well if you put a couple whole cinnamon sticks or pieces of cinnamon bark in the cold milk. It will infuse the milk as it comes to a boil.

- In a large pan, mix the cinnamon and sugar with a bit of milk.
- Add the rest of the milk and bring to a boil.
- Just as the mixture comes to a boil, take it off the heat.
- Split your hot coffee between 4 mugs.
- Pour in the milk and serve immediately.
- Another variation is to leave out the ground cinnamon, but instead put a large cinnamon stick, some cloves and green cardamom pods in the milk. Leave as it comes to a boil, set aside and let it infuse for a couple minutes. Then strain out the seasonings and pour into the coffee.
PUMPKIN SPICED LATTE CINNAMON ROLLS RECIPE BY TASTY
Here's what you need: whole milk, unsalted butter, granulated sugar, active dry yeast, flour, baking powder, salt, butter, light brown sugar, pumpkin spice mix, powdered sugar, coffee, whole milk

- Generously butter 2 cast-iron skillets or disposable foil cake pans.
- In a large bowl, whisk together the warm milk, melted butter, and sugar. The mixture should be just warm, registering between 100-110˚F (37-43˚C). If it is hotter, allow to cool slightly.
- Sprinkle the yeast evenly over the warm milk mixture and let sit for 1 minute.
- Add 4 cups (500g) of flour to the milk mixture and mix with a wooden spoon until just combined.
- Cover the bowl with a towel or plastic wrap and set in a warm place to rise for 1 hour.
- After 1 hour, the dough should have nearly doubled in size.
- Remove the towel and add an additional ¾ cup (95g) of flour, baking powder, and salt. Stir well, then turn out onto a well-floured surface.
- Knead the dough lightly, adding additional flour as necessary, until the dough just loses its stickiness and does not stick to the surface.
- Roll the dough out into a large rectangle, about ½-inch (1 cm) thick. Fix corners to make sure they are sharp and even.
- In a medium bowl, combine softened butter, brown sugar, and pumpkin spice mix, and stir well.
- Spread the mixture onto the rolled dough.
- Roll up the dough, forming a log, and pinch the seam closed. Place seam-side down. Trim off any unevenness on either end.
- Cut the log in half, then divide each half into 7 evenly sized pieces, about 1½ inches (4 cm) thick.
- Place 7 cinnamon rolls in each skillet or cake pan, one in the center, six around the sides. Cover with plastic wrap and place in a warm place to rise for 30 minutes.
- Preheat the oven to 350˚F (180˚C).
- To prepare the frosting, in a medium mixing bowl, whisk together powdered sugar, coffee, and milk until smooth.
- Remove the plastic wrap, then bake the cinnamon rolls for 25-30 minutes, until golden brown.
- While still warm, drizzle evenly with frosting.

- Place a saucepan over medium-high heat; add water, brown sugar, and white sugar. Whisk until sugar dissolves, 3 to 5 minutes. Whisk cinnamon into sugar mixture until incorporated. Continue whisking mixture until just before boiling and syrup-consistency, 3 to 5 more minutes. Remove saucepan from heat and stir in vanilla extract.
