CINNAMON BISCUIT FANS
You'll be a definite fan of these sweet cinnamon dessert biscuits that are baked in a muffin pan.

- Heat oven to 425°F. Grease 8 regular-size muffin cups. In large bowl, mix flour, 2 tablespoons granulated sugar, the baking powder and salt. Cut in firm butter using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture particles resemble fine crumbs. Stir in just enough milk so dough leaves side of bowl and forms a ball.
- Turn dough onto lightly floured surface. Knead lightly 10 times. Roll into 12x10-inch rectangle. Spread 3 tablespoons butter over rectangle. Mix 3 tablespoons granulated sugar and the cinnamon; sprinkle over rectangle. Cut rectangle crosswise into 6 (10x2-inch) strips. Stack strips; cut crosswise into 8 pieces. Place cut sides up in muffin cups.
- Bake 16 to 18 minutes or until golden brown. Immediately remove from muffin cups to cooling rack.
- In medium bowl, mix all glaze ingredients until smooth and thin enough to drizzle. Drizzle over warm biscuits. Serve warm.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Butter the bottom of an 8-inch round or square baking pan and sprinkle with 2 tablespoons brown sugar.
- Combine white sugar, cinnamon, 2 tablespoons brown sugar, and vanilla extract in a bowl. Mix filling well.
- Combine confectioners' sugar and milk for glaze in another bowl until well mixed.
- Separate biscuits and roll or punch down each one until flat. Coat with melted butter and sprinkle each with filling mixture to coat. Roll up each piece of dough and cut in 1/2, placing each cut-side down into the prepared pan, yielding 20 pieces.
- Bake in the preheated oven until biscuit portion on top of rolls begins to brown, about 15 minutes. Remove from the oven and glaze.

CINNAMON ROLL PANCAKE STACKS
Enjoy these cinnamon pancakes that are made using Bisquick Heart Smart® mix - a perfect breakfast that's ready in 25 minutes.

Steps:
- In small bowl, mix powdered sugar and 1/4 cup whipping cream with whisk; set icing aside.
- In 2-quart saucepan, cook brown sugar, butter and cinnamon over medium heat, stirring often, until butter is melted and sugar is dissolved. Remove from heat; cover to keep warm.
- In medium bowl, stir Bisquick mix, milk and egg with fork or whisk until blended. Stir in raisins.
- Heat griddle or skillet over medium-high heat (375°F). Grease griddle with vegetable oil if necessary (or spray with cooking spray before heating). For each pancake, pour about 2 tablespoons batter onto hot griddle. Cook until edges are dry and bubbles form on top. Turn and cook other sides until golden brown.
- Serve pancakes stacked with warm cinnamon mixture between each pancake. Drizzle with icing.

CINNAMON BISCUITS
I had these for the first time at my sister-in-law's when I was staying with them as a teen. They are now a much loved tradition in my home too. Any time it snows, the kids beg me to make them. I've changed them just a bit by adding the nuts but they are good with or without them. For an Orange Cinnamon variation see recipe #112535.

Steps:
- Combine flour, baking powder and salt; cut in shortening.
- Add milk and 1 tsp. vanilla; stir with fork just until dough leaves sides of bowl.
- Roll dough out, on lightly floured surface, into a 1/4 inch thick rectangle.
- Brush top with butter (I prefer to use soft butter rather than melted).
- Combine cinnamon and sugar; sprinkle evenly over dough.
- Sprinkle with chopped pecans (or other nuts or raisins) if desired.
- Roll up, starting on long side.
- Cut into 1/2 inch thick rounds.
- Place rounds, with sides just touching, in greased 9" round pan.
- Bake at 425°F for 18-20 minutes or until golden brown.
- Remove from oven and drizzle with glaze, serve warm.
- For glaze: Combine all ingredients and beat until smooth.
RIDICULOUSLY SIMPLE CINNAMON BISCUITS
These little gems are G-R-E-A-T! And soooo easy. My kids and I both love these. I like the layer biscuits best for this recipe; that's just my personal preference.

Steps:
- Preheat oven to 375 degrees Fahrenheit.
- Spray baking pan with cooking spray (get every inch of that pan!). I like to use a glass pie plate; it doesn't get as sticky as a metal pan.
- Mix together the sugar and cinnamon in a small bowl.
- Spread margarine on both sides of each biscuit.
- Dip each biscuit in the cinnamon sugar mixture. Press biscuit down lightly to get plenty on it.
- Place biscuits in the pan.
- Sprinkle any additional cinnamon sugar on the top.
- Bake as directed on biscuit can.
- Don't overcook! I cook mine for 8 minutes exactly and they come out perfect!

- In a large bowl, combine the flour, baking powder, salt and baking soda. Combine the buttermilk, oil and vanilla; stir into dry ingredients just until moistened (dough will be sticky)., Turn onto a well-floured surface; knead 8-10 times. - Preheat the oven to 375 degrees F (190 degrees C). Lightly coat an 8- or 9-inch square baking pan with cooking spray.
- Cut each biscuit into quarters and place in a 1-gallon resealable bag. Add sugar and cinnamon and seal the bag. Shake the bag until biscuits are well coated, then empty the bag onto the prepared pan. Drizzle melted butter over top.
- Bake in the preheated oven until golden brown, about 22 minutes.
- While the cinnamon roll bites are baking, prepare frosting. Combine powdered sugar, milk, softened butter, and vanilla in a bowl and stir until smooth.
- Remove cinnamon roll bites from the oven and spread frosting over top immediately.
