APRICOT RICE PUDDING

1 cup raw short-grain rice, rinsed in a colander until the water runs clear (recommended: Arborio)
4 1/2 cups whole, 2 percent fat, or 1 percent fat milk
1/4 cup diced dried apricots
1/4 vanilla bean, split lengthwise
1/2 teaspoon freshly grated lemon zest
4 egg yolks
1/2 cup sugar
Whipped cream, for garnish

Steps:

  • In a covered heavy saucepan, bring the rice, milk, apricots, vanilla scrapings and lemon zest to a simmer over medium heat. Immediately reduce the heat to as low as possible, cover tightly, and simmer gently, stirring occasionally, until the rice is very tender, 20 to 25 minutes. Turn off the heat. Stir the egg yolks into the cooked rice mixture and stir just until thickened, 1 to 2 minutes. Stir in the sugar. Pour the rice pudding into ramekins or dessert cups and let cool. Cover tightly with plastic wrap and refrigerate at least 2 hours or until ready to serve, up to 24 hours. Serve with whipped cream.

CREAMY APRICOT RICE PUDDING

3/4 cup uncooked short grain white rice
2 cups milk, divided
1/3 cup sugar
1/4 teaspoon fine sea salt
1 egg
1 cup dried apricots, diced
1 tablespoon unsalted butter
1/2 teaspoon vanilla extract
1 orange, zested
1/2 teaspoon ground cardamom
Freshly grated nutmeg, for serving

Steps:

  • Bring 1 1/2 cups water to a boil over high heat in a saucepan. Stir in your rice. Then, turn down the heat, cover the pan and let simmer for 20 minutes.
  • When the rice is done, put it in a clean saucepan with 1 1/2 cups milk, the sugar and salt. Cook this over medium heat, giving it a stir every once in awhile, until it thickens up and gets creamy, 15 to 20 minutes. Crack your egg into a small bowl and beat it with the remaining 1/2 cup milk. Slowly stir this mixture into the rice. Stir in your diced apricots and cook 2 minutes more. Take off the stove and stir in your butter, vanilla, orange zest, and cardamom. Grate some nutmeg over top.

1 sheet frozen puff pastry (from one 17.3-ounce package), thawed
All-purpose flour, for surface
4 ounces sharp white cheddar cheese, grated
1/3 cup apricot fruit spread
1 teaspoon Dijon mustard
1/4 teaspoon freshly ground pepper

Steps:

  • Unfold puff pastry sheet on a lightly floured surface, and sprinkle cheese over pastry. Refold pastry in thirds, then roll out to a 12 1/2-inch square. Cut dough into fifths (5 strips) in one direction, and then the other, to yield twenty-five 2 1/2-inch squares.
  • Stir together fruit spread, Dijon, and pepper to combine. Dollop a rounded 1/2 teaspoon of filling in center of each pastry square. Gather the 4 corners of each square up over filling. Pinch and twist the ends, then fold twisted end under, and firmly press to seal. Transfer to a parchment-lined baking sheet, and freeze 30 minutes.
  • Meanwhile, preheat oven to 425 degrees. Place pastries 1 inch apart on parchment-lined baking sheet, and bake until golden brown and puffed, about 15 minutes.

50g butter , softened, plus extra for greasing
200g caster sugar
zest 2 lemons or 2 limes or 1 grapefruit
100ml lemon , lime or grapefruit juice, or a mixture
3 large eggs , separated
50g plain flour
250ml milk
icing sugar , for dusting (optional)

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease a medium-sized oval baking dish (we used 22 x 18cm) with butter. Combine the butter, caster sugar and zest in a food processor and whizz until the mixture is pale. Add the citrus juice, egg yolks, flour and milk, and whizz until well mixed - it may look a little curdled. Scrape into a bowl. Boil the kettle.
  • In a large, clean bowl, whisk the egg whites until firm but not stiff, then gently fold into the zesty mixture. Scrape into the baking dish and put in a roasting tin half-filled with hot water from the kettle. Bake for 35-40 mins until the top is lightly browned and set, but the pudding is still soft-ish underneath. Serve dusted with icing sugar, if you like.

1/2 cup unsalted butter, softened, plus more for pudding basin and parchment
4 ounces dried California apricots (1 cup)
1/2 cup Armagnac or other good-quality brandy
1 cup sugar
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon salt
1 1/4 teaspoons finely grated lime zest, plus 1 tablespoon fresh lime juice
2 large eggs
1/3 cup whole milk
Vanilla ice cream or Creme Anglaise, (optional), for serving

Steps:

  • Set a round wire rack in bottom of large stockpot. Set a 5-cup pudding basin or ovenproof bowl on rack. Fill pot with enough water to come about three-quarters of the way up the sides of the basin. Remove basin; dry, and butter inside. Set aside. Cover pot, and bring to a boil.
  • Put apricots, brandy, and 1/2 cup water into a small saucepan. Bring to a boil over medium-high heat. Reduce heat to medium-low, and simmer, partially covered, until apricots are very soft and most of the liquid has been absorbed, about 10 minutes. Reserve 1/2 cup apricots. Carefully puree remaining apricot mixture in a food processor (you should have about 1/2 cup); let cool 10 minutes.
  • Cut reserved apricots into 1/2-inch pieces; return to saucepan. Add 1/4 cup sugar and 1/3 cup water. Bring to a simmer; cook until liquid is nearly evaporated. Pour mixture into prepared basin, and set aside.
  • Butter a 10-inch round of parchment paper; set aside. Whisk flour, baking powder, and salt in a bowl; set aside.
  • Put remaining 3/4 cup sugar and the lime zest into the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed 30 seconds. Add butter; mix until pale and fluffy, about 4 minutes. Add eggs, one at a time, mixing after each addition. Mix in lime juice.
  • Add flour mixture in 3 additions, alternating with the apricot puree and milk. Transfer batter to prepared basin.
  • Place parchment round, buttered side down, over basin. Make a pleat in center of parchment. Cover with an 11-inch round of foil. Make a pleat in the center of the foil to allow room for pudding to expand. Cut a piece of twine about 7 feet long. Wrap twine twice around basin over foil, just below lip. Knot to secure. Tie loose ends to twine on other side of basin, creating a handle.
  • Lower pudding into boiling water; cover pot. Return to a boil; reduce to a simmer. Steam until an instant-read thermometer inserted into pudding registers 180 degrees, about 1 1/2 hour, adding boiling water occasionally to maintain level.
  • Transfer pudding to a wire rack. Remove foil and parchment. Let cool 10 minutes. Run a knife around edge of bowl to loosen, and invert pudding onto a serving plate. Serve warm, with ice cream or creme anglaise if desired.

1 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup milk
1 tablespoon melted butter
1 teaspoon white vinegar
1 cup sugar
1 large egg
1 tablespoon apricot jam
1 cup sugar
1/2 cup heavy cream
1/2 cup milk
4 ounces butter

Steps:

  • Preheat oven to 350 degrees. Generously butter a 2-quart baking dish with a lid. Combine flour, baking soda and salt in a sifter and sift into a bowl; set aside. Combine milk, butter and vinegar in a measuring cup and set aside. In a large bowl of an electric mixer, beat the sugar and egg at medium-high speed until smooth. Add the jam and beat until blended. At medium speed, beat in the flour mixture, in fourths, alternately with the milk mixture, in thirds, beginning with the flour mixture, until batter is smooth. Pour into the prepared baking dish, cover and bake until browned and set, for 25 to 30 minutes.
  • While pudding bakes, combine sauce ingredients and 1 1/82 cup hot water in a small saucepan; heat to simmering, stirring to dissolve sugar and melt butter. Keep warm.
  • When pudding is done, uncover and pour sauce all over the top to evenly soak the pudding. Serve when cool enough to eat.

1 (17 ounce) package frozen puff pastry (thawed according to package directions)
1 cup apricot jam, melted (melt just enough to make spreading easy)
1/2 cup confectioners' sugar
2 tablespoons whipping cream (unwhipped)
1 tablespoon fresh lemon juice

Steps:

  • Set oven to 400 degrees.
  • Line a baking sheet with parchment paper (you will most likely need two baking sheets for 16 pastries).
  • Roll out one puff pastry sheet onto a lightly floured surface into a 12x10-inch rectangle, then cut in half lengthwise (I use a pizza cutter for this).
  • Cut each half crosswise into four 5x3-inch strips (for a total of 8 strips).
  • Spread each strip with about 1/2 tablespoon apricot jam, then fold the strips in half lengthwise to form 1-1/2-inch wide strips.
  • Twist each strip 3 times, then place on the parchment-lined baking sheet.
  • Repeat with the remaining puff pastry (you should have 16 pastries when done, you might have to use two baking sheets.
  • Bake for about 15-20 minutes.
  • Transfer the twists to a rack.
  • In a small bowl whisk together confectioners sugar, whipping cream and lemon juice; brush over the warm pastries.

1/4 cup sliced almonds
3 Tbsp. butter
3 Tbsp. brown sugar
4 fresh apricots, pitted, sliced
1/2 cup thawed COOL WHIP Whipped Topping

Steps:

  • Heat oven to 425ºF.
  • Unfold pastry sheet on cutting board; cut into 9 squares. Place in single layer on parchment-covered baking sheet.
  • Use tip of sharp knife to score lines 1/2 inch from edges of each square; prick center of each square with fork. Brush with milk; sprinkle with nuts.
  • Bake 13 to 15 min. or until golden brown. Cool completely.
  • Meanwhile, melt butter in medium skillet on medium heat. Add sugar and apricots; stir. Cook 5 min. or until apricots are softened, stirring frequently. Remove from heat. Let stand until ready to use.

1 cup dried apricots
1 cup granulated sugar
2 tablespoons fresh lemon juice
1 stick plus 1 tablespoon unsalted butter, cut in small pieces
2 large eggs
2 cups very fine, fresh white bread crumbs (from 5 slices of bread)

Steps:

  • In a 1 1/2-quart glass or ceramic souffle dish, stir together the apricots, 1 cup water and 1/2 cup sugar. Cover tightly with microwave plastic wrap. Cook at 100 percent power for 7 minutes. Prick plastic wrap to release steam.
  • Remove from oven, and uncover. Scrape mixture into a blender, and puree. Scrape down sides of blender. Add lemon juice, and blend until smooth. Put puree into a medium bowl, and let stand 15 minutes or until cool.
  • Place a 2-quart souffle dish on parchment paper. Lightly trace around the base with a pencil. Cut out the paper disk just inside the pencil marking. Grease the dish and both sides of the paper using 1 tablespoon of the butter.
  • Place the remaining sugar and butter in the work bowl of a food processor, and process until smooth. With processor running, add the eggs one at a time to combine. Add the apricot puree, and process until completely incorporated.
  • Return apricot mixture to the bowl, and gently fold in the bread crumbs until well combined. Pour the mixture into the prepared souffle dish. To remove the air bubbles, firmly rap dish on counter. Cover tightly with microwave plastic wrap. Cook 12 minutes. Prick plastic to release steam.
  • Remove from the oven, and uncover. Cover with a heavy plate, and let stand for 15 minutes. Unmold; remove parchment paper, let cool about 5 minutes and serve.

A sticky, spicy and moreish pudding - brilliant way to round off a winter meal

6 medjool dates , stoned and roughly chopped (see try below)
handful chopped dried apricots
1 tsp ground spice
2 tbsp honey
150ml orange juice
handful chopped mixed nuts
1 madeira cake (loaf)

Steps:

  • Put the dates in a small pan with the apricots, spice and honey, then pour over the orange juice. Bring to the boil and cook for 5 mins, until the dates have broken down and you have a thick, syrupy sauce. Stir in the nuts.
  • Cut the cake in half lengthways, on the horizontal. Use a 150ml ramekin to cut out 4 circles from the cake. Divide the date mix between the 4 ramekins, then top with the circles of cake, pressing them down gently. Cover with cling film and microwave on high for 3 mins, then turn out onto a plate and serve with cream or ice cream.

The pastry puffs up prettily and crunchy around the edges and stays very moist and chewy in the center where the filling is-- similar to bread pudding. I made mine in a loaf pan, but I think it would come out nicely in a larger pan as well. Next time, I would line the pan with foil or wax paper so I could get it out of the pan for nice presentation easily.

1 (17 1/3 ounce) package puff pastry, thawed
1/2 cup dried apricot, diced
1/2 orange, zest of, grated
1/3 cup marsala wine or 1/3 cup sweet sherry
2 tablespoons flour
2/3 cup apricot preserves
1/2 lemon, zest of, grated
3 tablespoons lemon juice
3 tablespoons orange juice
3 egg yolks, beaten
2 ounces white chocolate, chopped
4 ounces coconut milk
2 teaspoons Grand Marnier

Steps:

  • Begin with filling: In the top of a double boiler, combine marsala and flour until smooth. Add jam, rind, and juices and heat, stirring continuously with a whisk until thickened. Spoon three tablespoons of the hot mixture into the egg yolks, stirring to temper, then add the yolks to the pot and continue stirring until thick and coating the whisk. Turn off heat, pour apricot cream into another container and set aside.
  • For ganache: Heat coconut milk and Grand Marnier in the top of the double boiler until just barely simmering. Put white chocolate into a bowl, and pour coconut milk over white chocolate, let sit a few moments and then stir to combine melted chocolate. Set aside.
  • For pastry: Preheat oven to 375°F Spray either a standard loaf pan or a 8x9 baking pan with cooking spray. Separate puff pastry sheets and roll out roughly to the size of your baking pan or loaf pan. Lay a sheet in the bottom of the pan, and spoon 2 or 3 teaspoons of apricot cream filling over it, spreading almost to the edges. Combine diced apricots and orange zest in a bowl. Spread the apricots & zest mixture over this and top with another sheet of pastry. Continue layering pastry, cream and fruit mixture, ending with a sheet of pastry. Top the sheet with a final layer of apricot cream, and then bake for 30 minutes, until the edges have puffed up golden brown. The cream on top should be smooth and shiny.
  • Drizzle the white chocolate ganache over all and garnish with any left over apricot and orange zest mixture and crumbled bits of white chocolate.
