1 cup orange juice
1 tablespoon lemon juice
1 package (.3 ounce) sugar-free lemon or orange gelatin
1 package (8 ounces) fat-free cream cheese, cubed
1 cup reduced-fat whipped topping
1 can (8 ounces) unsweetened crushed pineapple, undrained
1/3 cup reduced-fat mayonnaise

Steps:

  • In a small saucepan, bring orange and lemon juices to a boil; stir in gelatin until dissolved. In a blender, process the cream cheese, whipped topping, pineapple and mayonnaise until smooth. Add gelatin mixture; cover and process until blended. , Pour into a 4-cup mold coated with cooking spray. Refrigerate for several hours or overnight until firm.

1 tablespoon orange juice
2 teaspoons honey
1 1/2 teaspoons champagne vinegar

6 to 7 oranges, preferably a mix of regular and blood oranges (or just regular oranges)
4 limes
12 radishes, sliced
Handful fresh mint leaves

Steps:

  • For the dressing: Add the oil, orange juice, honey, vinegar and mustard to a mason jar and shake to mix.
  • For the citrus salad: Carefully cut off the peel of the oranges and limes to remove the pith, then slice.
  • Layer the orange and lime slices on a plate and sprinkle over the radishes. Drizzle with some of the dressing and top with the mint leaves.

Winter is the season when many kinds of citrus fruits suddenly appear. For this savory fruit salad, a mixture of navel, blood and Cara Cara oranges and a small grapefruit make a colorful display. It's fine to use just one kind of orange, blood oranges being the classic example. Thinly sliced fennel, celery and red onion add a tasty bit of crunch. The salad is dressed assertively with oil and vinegar, and scattered with olives and flaky sea salt.

3 to 4 tablespoons olive oil
2 tablespoons sherry vinegar or red wine vinegar
Salt and pepper
2 navel oranges
4 blood oranges
2 Cara Cara oranges
1 small grapefruit
1 small red onion, very thinly sliced
1 small fennel bulb, very thinly sliced, enough to make 1 cup
2 or 3 tender inside celery stalks, thinly sliced at an angle
Handful of olives, black oil cured type or green Castelvetrano type, pitted
Winter salad leaves, such as radicchio or escarole, optional
Large pinch of flaky sea salt

Steps:

  • Make the vinaigrette: Whisk together olive oil and vinegar in a small bowl. Season with salt and pepper and set aside. It should be tart but not over-vinegary. Taste and add a little more olive oil if necessary.
  • To peel the citrus fruit, use a small serrated knife. First, cut off a thin slice of peel from the top and bottom of the orange, so it can sit flat and securely on the cutting board. Use a sawing motion to take off the peel, cutting from top to bottom, following the curve of the fruit. Remove only the peel and white pith, not the flesh of the orange. It should now be perfectly spherical and naked. Peel remaining oranges and grapefruit in this fashion.
  • Carefully slice peeled citrus crosswise. Arrange slices on a large serving platter in a random pattern, letting them overlap a bit here and there. Scatter onion, fennel and celery over top. Dot the surface with olives. Surround with salad leaves, if using.
  • Whisk vinaigrette, and spoon evenly over the salad. Sprinkle lightly with flaky salt and serve.

2 cups jarred citrus salad of orange and grapefruit sections, drained - fresh oranges and grapefruits may also be used but to supreme fruit (method below*) takes extra time
2 tablespoons marmalade
2 tablespoons white wine or cider vinegar
1/3 cup extra-virgin olive oil
Salt and pepper
2 tablespoons chopped or snipped chives

Steps:

  • Chop lettuce. Arrange lettuce on platter and top with pieces of grapefruit and orange.
  • *To supreme fresh oranges and/or grapefruits instead, cut off ends then remove skin in strips working all the way around the fruit from top to bottom. Cut along the side of the membrane to remove the sections of the citrus fruit.
  • Combine marmalade with 2 splashes of vinegar and stream in extra-virgin olive oil. Pour dressing over the salad and season with salt and pepper. Garnish platter with chopped or snipped chives.

6 blood oranges
2 small grapefruit
4 firm, medium Fuyu persimmons (not Hachiya)
1 cup pomegranate seeds

Steps:

  • Using a small serrated knife, peel the navel oranges, blood oranges and grapefruit. They should be perfect globes with no pith. Slice the fruit crosswise about 3/8-inch thick and place in a salad bowl.
  • Peel and core the persimmons. Slice them about 1/4-inch thick and add to the salad bowl. Arrange the fruit in a random pattern. Sprinkle pomegranate seeds over the top. Cover well and chill for 1 hour. Serve in small bowls, making sure each serving gets some of every type of fruit and a good spoonful of the juices that will have gathered at the bottom of the bowl.

1 jar (24 ounces) refrigerated citrus salad
2 medium red pears, thinly sliced
1/2 cup all-purpose flour
16 sea scallops
2 tablespoons butter
2 tablespoons olive oil
1/2 cup balsamic vinaigrette

Steps:

  • Divide salad greens among eight plates. Drain citrus salad, reserving syrup. Arrange citrus fruit on salads. In a small bowl, combine pear slices and reserved syrup. Using a slotted spoon, remove pears and arrange on salads. Discard syrup. , Place flour in a shallow bowl. Roll scallops in flour. In a large skillet, heat butter and oil over medium heat. Add scallops; cook for 2 minutes on each side or until scallops are firm and opaque. Top each salad with scallops. Drizzle with vinaigrette.

1 tablespoon minced ginger
1 garlic clove, minced
2 teaspoons light soy sauce
1/4 cup rice wine vinegar
2 oranges, juice of
1 lime, juice of
1 teaspoon brown sugar
2 cups Chinese cabbage, shredded
100 g bean sprouts
1 red onion, thinly sliced
1 orange, peeled and sliced into 1 inch segments
2 grilled chicken breasts, sliced
chopped fresh cilantro (for garnish)
salt & freshly ground black pepper
1/4 cup fresh cilantro, chopped

Steps:

  • DRESSING:.
  • Combine the ginger, garlic, soy sauce, rice wine vinegar, orange juice, lime juice, and brown sugar together.
  • Add salt and freshly ground pepper and taste for seasoning.
  • Refrigerate 1 hour to allow flavors to infuse.
  • SALAD:.
  • Combine the Chinese Cabbage, bean sprouts, sliced red onion and orange segments. (I like to drop everything in a large zip-lock bag).
  • Toss with half of the dressing. (Again, if you use a zip-lock bag you can easily pour in half of the dressing, seal and fumble to mix dressing in with salad; place in the refrigerator until ready to use.).
  • Add the sliced chicken to a frying pan and brown lightly with a small amount of olive oil.
  • Add the remainder of the citrus dressing; bring to a boil; reduce for 30 seconds to allow mixture to thicken slightly.
  • Place Chinese cabbage mixture on two dinner plates.
  • Arrange sliced chicken on top and pour over the remaining sauce.
  • Top with freshly chopped cilantro.

1 small fennel bulb
3 blood oranges
3 cara cara oranges
1 grapefruit
1 tablespoon fresh mint, torn
kosher salt, to taste
olive oil, to taste
½ cup uncooked farro, rinsed
1 ½ cups water
¼ cup pistachio
2 tablespoons lemon juice
1 tablespoon honey
½ teaspoon kosher salt
1 tablespoon fresh tarragon, finely chopped
¼ cup olive oil

Steps:

  • Trim the fronds and stalks off of the fennel bulb. Cut the bulb in half crosswise, remove the core, then thinly slice. Add the sliced fennel to a medium bowl and set aside.
  • Slice off the top and bottom of a blood orange so it sits flat on your cutting board. Carefully cut off the peel and pith in downward strips around the orange, removing as little fruit as possible. Carefully cut between the membranes to remove the segments. Repeat with the rest of the blood oranges, the Cara Cara oranges, and the grapefruit.
  • Add the citrus segments to the bowl with the fennel, along with the mint. Season with salt and toss to combine. Set aside while you make the dressing and farro.
  • Make the dressing: In a medium bowl, whisk together the lemon juice, honey, salt, and tarragon. Add the olive oil, a bit at a time, and whisk until fully incorporated. Set aside.
  • Heat a bit of olive oil in a small pot over medium heat. Add the farro and toast until just slightly golden brown. Pour in the water and bring to a boil. Reduce the heat to low, cover, and simmer for 30 minutes, until the farro is tender and has absorbed the water.
  • Add 2 tablespoons of the honey tarragon dressing to the warm farro and toss well.
  • In a small pan over medium heat, toast the pistachios until slightly brown and aromatic.
  • Divide the citrus fennel mixture between serving bowls and top with the farro and pistachios. Add more dressing to taste, if desired.
  • Enjoy!

1 dash salt

4 egg yolks
4 egg whites

1/2 cup orange juice
1 9 in.baked pastry shell

Steps:

  • Thoroughly mix gelatin, 1/2 cup sugar, and salt in saucepan.
  • Beat together egg yolks, fruit juices, and water; stir into gelatin mixture.
  • Cook and stir over medium heat just till mixture comes to boiling.
  • Remove from heat; stir in peels.
  • Chill, stirring occasionally, till mixture mounds slightly when dropped from a spoon.
  • Beat egg whites till soft peaks form.
