CLASSIC CANNOLI

Classic Cannoli image

True to its Sicilian roots, our cannoli are filled with fresh ricotta, instead of the custard and cream that define American versions. Cinnamon-infused dough for the shells is rolled with a pasta maker (another nod to the old country) and then lightly fried and dipped in chocolate and pistachios. The result? A dessert that is delizioso.

Yield Makes 3 dozen

Number Of Ingredients 17

2 3/4 cups (22 ounces) fresh ricotta cheese
3/4 cup confectioners' sugar
3 tablespoons mini semisweet chocolate chips
3/4 teaspoon pure vanilla extract
3/4 teaspoon finely grated orange zest
1/4 teaspoon fresh lemon juice
2 cups all-purpose flour, plus more for dusting
3 tablespoons granulated sugar
1 teaspoon unsweetened Dutch-process cocoa powder
1/2 teaspoon ground cinnamon
1/2 teaspoon coarse salt
3/4 cup sweet Marsala wine
3 tablespoons vegetable oil
Vegetable oil, for frying
1 large egg white, lightly beaten
4 ounces semisweet chocolate (preferably 61 percent cacao)
1/2 cup shelled unsalted pistachios, finely chopped

Steps:

  • Make the filling: Line a sieve with a layer of cheesecloth, and set over a bowl. Spoon ricotta into sieve. Cover, and let drain in the refrigerator overnight.
  • With an electric mixer on medium speed, beat ricotta and confectioners' sugar until fluffy. Beat in chocolate chips, vanilla, zest, and lemon juice. Cover with plastic wrap, and refrigerate.
  • Make the shells: Combine flour, granulated sugar, cocoa powder, cinnamon, and salt in the bowl of an electric mixer. Add Marsala and oil, and beat on medium speed until dough comes together. Using your hands, knead dough on a lightly floured work surface until smooth and elastic, about 15 minutes. Wrap in plastic, and let rest 30 minutes.
  • Divide dough into 4 pieces. Pass 1 piece of dough through the widest setting of a pasta machine (keep remaining pieces covered). Continue passing through narrower settings until it is the thickness of a dime. Lay on a floured work surface. Cut out rounds with a 3 1/4-inch cutter. Gather scraps and reroll.
  • Pour enough oil into a large, heavy saucepan to come about 4 inches up sides. Heat over medium heat until a deep-fry thermometer registers 380 degrees.
  • Wrap each round of dough around a 3 3/4-inch-long cannoli form, sealing with a dab of egg white. Working in batches of 3 or 4, fry until golden, about 1 minute. Using a wire skimmer or tongs, transfer to paper towels, and let cool 5 minutes. Carefully slide out forms, and let shells cool. Continue rolling, cutting, and frying the remaining dough.
  • Melt chocolate in a heatproof bowl set over a pan of simmering water. Dip one end of each cannoli shell into chocolate and then into pistachios. Let set 15 minutes on parchment paper.
  • Transfer filling to a pastry bag fitted with a 1/2-inch star tip (such as Ateco #826). Pipe filling into one end of a shell to the center, then into other end. Repeat with remaining shells and filling. Dust with confectioners' sugar, and serve immediately.

CANNOLI

Cannoli image

Ana and Lydia's cannoli, recipe invented on July 31st, 2005. I spent a lot of time looking for a good recipe for cannoli shells and filling. Since no two were alike, and since instructions were a bit sketchy, I worked with a friend to come up with a good recipe, including some tips that we came up with along the way. Special equipment is needed such as cannoli tubes, a pasta machine and a pastry bag to help make these cannoli come out just like the ones at Italian restaurants and bakeries. Start with 1/2 cup of confectioners' sugar, and then add more to taste.

Time 3h45m

Yield 30

Number Of Ingredients 15

3 cups all-purpose flour
¼ cup white sugar
¼ teaspoon ground cinnamon
3 tablespoons shortening
1 egg
1 egg yolk
½ cup sweet Marsala wine
1 tablespoon distilled white vinegar
2 tablespoons water
1 egg white
1 quart oil for frying, or as needed
1 (32 ounce) container ricotta cheese
½ cup confectioners' sugar
1 teaspoon lemon zest, or to taste
4 ounces semisweet chocolate, chopped

Steps:

  • In a medium bowl, mix together the flour, sugar and cinnamon. Cut in the shortening until it is in pieces no larger than peas. Make a well in the center, and pour in the egg, egg yolk, Marsala wine, vinegar and water. Mix with a fork until the dough becomes stiff, then finish it by hand, kneading on a clean surface. Add a bit more water if needed to incorporate all of the dry ingredients. Knead for about 10 minutes, then cover and refrigerate for 1 to 2 hours.
  • Divide the cannoli dough into thirds, and flatten each one just enough to get through the pasta machine. Roll the dough through successively thinner settings until you have reached the thinnest setting. Dust lightly with flour if necessary. Place the sheet of dough on a lightly floured surface. Using a form or large glass or bowl, cut out 4 to 5 inch circles. Dust the circles with a light coating of flour. This will help you later in removing the shells from the tubes. Roll dough around cannoli tubes, sealing the edge with a bit of egg white.
  • Heat the oil to 375 degrees F (190 degrees C) in a deep-fryer or deep heavy skillet. Fry shells on the tubes a few at a time for 2 to 3 minutes, until golden. Use tongs to turn as needed. Carefully remove using the tongs, and place on a cooling rack set over paper towels. Cool just long enough that you can handle the tubes, then carefully twist the tube to remove the shell. Using a tea towel may help you get a better grip. Wash or wipe off the tubes, and use them for more shells. Cooled shells can be placed in an airtight container and kept for up to 2 months. You should only fill them immediately or up to 1 hours before serving.
  • To make the filling, stir together the ricotta cheese and confectioners' sugar using a spoon. Fold in lemon zest and chocolate. Use a pastry bag to pipe into shells, filling from the center to one end, then doing the same from the other side. Dust with additional confectioners' sugar and grated chocolate for garnish when serving.

CANNOLI WITH PASTRY CREAM FILLING RECIPE

Cannoli with Pastry Cream Filling Recipe image

Look no further for the best cannoli recipe you'll find! This authentic recipe for cannoli shells is straight from Sicily, exactly as my mother's family has always made them. These crisp and light shells are filled with a vanilla and lemon scented pastry cream. Follow my easy step by step instructions and tips to make the best homemade cannoli every time!

Provided by Nadia Fazio

Categories     Dessert

Time 2h30m

Number Of Ingredients 17

4 cups whole milk
1 tsp. vanilla extract
3 inch strip of lemon zest
8 large egg yolks
1 cup granulated sugar
1 cup all-purpose flour
2 cups All-purpose flour
1 tbsp. granulated sugar
1 large egg
¼ cup red wine (or Marsala)
1 tbsp. vegetable oil
3 tbsp. milk
1 egg white (for sealing the edges of the dough) ((reserved from the pastry cream recipe))
vegetable oil (for frying (sunflower or cannola oil can be used))
powdered sugar (optional)
chopped pistachios (optional)
grated chocolate or chocolate chips (optional)

Steps:

  • In a small sauce pan, heat milk, a strip of lemon zest and vanilla extract. Do not bring to a boil. Set aside.
  • In a bowl, whisk together egg yolks and sugar until smooth. Add flour and whisk.
  • Pour half of the warm milk into the egg mixture and whisk until incorporated.
  • Pour the mixture back into the sauce pan with the remaining milk. Place on the burner over medium-high heat and whisk continuously until it comes to a gentle boil and thickens, about 5 minutes.
  • Remove and discard the strip of lemon zest.
  • To ensure your pastry cream is completely smooth and free of lumps, force it through a fine mesh sieve over a bowl.
  • Place a sheet of plastic wrap directly on the surface of the cream in order to prevent a skin from forming. Refrigerate until completely cooled, about 2 hours.
  • While the pastry cream cools prepare the shells by stirring together all-purpose flour and sugar in a large bowl.
  • Make a well in the center and pour in the milk; red wine; vegetable oil and egg.
  • Use a fork to whisk the wet ingredients and slowly begin incorporating the flour into the wet ingredients to form a dough. Transfer the dough onto a lightly floured surface and knead until smooth, about 5 minutes.
  • This dough does not require a resting period and can be rolled out immediately. Divide the dough into 4 pieces, keep the remaining pieces covered to prevent the dough from drying.
  • Use a pasta roller (or rolling pin) to roll out the sheets of dough until the second to last setting. Lightly sprinkle your sheets with all-purpose flour as needed if they are sticky. Keep the sheets of dough covered to prevent from drying.
  • Cut the dough into 4 inch rounds with a cookie cutter or any other household item of similar size. For years my mom used a mug with a 4 inch opening.
  • Reroll any scraps of dough and cut out more circles.
  • Wrap the dough around the cannoli molds and seal both ends with egg white (reserve an egg white from the pastry cream). This is crucial to prevent them from unwrapping from the molds during frying.
  • Fill a deep heavy bottomed pot (or use a fryer if you have one) with about 2 inches of vegetable oil. Heat the oil.
  • In order to verify if the oil is hot enough try out my mom's easy method: place the end of a wooden spoon directly in the middle of the pot, if the oil immediately bubbles and sizzles around the handle it's ready for frying.
  • Fry 3 or 4 cannoli shells at a time until golden. Avoid overcrowding your pot as you may have to hold them down to ensure that all sides are evenly fried. They sometimes roll over when you try to flip them!
  • The shells are ready when they are golden and bubbly. Transfer to a paper towel lined plate or tray.
  • Use two paper towels to carefully separate the cannoli molds from the shell (be careful, they will be extremely hot!). Wrap more dough around the molds and continue fry the remaining pieces of dough.
  • Fill the cannoli shells once they are completely cooled.
  • Place the cooled cannoli cream in a pastry bag with a star or round tip attachment. Alternately use a freezer bag with the tip cut off.
  • Pipe the cream at both ends of each cannoli shell making sure that the cream reaches the center of the shell.
  • Dust with powdered sugar (optional) and sprinkle some chopped pistachios and chocolate chips or grated chocolate (optional) on each end.
  • Fill up to 4 hours prior to serving to ensure the shell stays crisp. Refrigerate the filled cannoli shells.

CANNOLI FILLING RECIPE

Cannoli Filling Recipe image

I used ricotta cheese, cream cheese, sour cream, and heavy cream as the "cheese stuff" for the cannoli mix. I didn't use exact measurements at the time of making it but this is pretty close. If you find the taste of cream cheese to be overpowering, try adding powder sugar, lemon, or vanilla extract (or a little of all of those things) to see if you can "hide" the cream cheese/sour cream combo. Cream cheese, sour cream, and heavy cream are usually used as a substitute to marscapone which is another cheese that is used as a cannoli filling.

CAKE AND CANNOLI CUSTARD CREAM FILLING

Cake and Cannoli Custard Cream Filling image

very good cream filling.. Note: I also made this with using only 250 ml of Nurti Whip and it turns out a little heavier but is great believe me..this is a three for one recipe here..as you can also use the filling without the nutri whip too with good tasting results. Use this filling for tarts, cream puffs, or cakes and although not a traditional cannoli filling its great in those too. Nutri Whip is a Canadian Product, it is similar to Rich's Ready to Whip Topping. It is liquid and needs to be beaten just like whipping cream, without sugar added.

Provided by andypandy

Categories     Sauces

Time 25m

Yield 3 cups

Number Of Ingredients 8

4 egg yolks
4 tablespoons white sugar
5 tablespoons flour
2 cups whole milk
1 1/2 teaspoons vanilla extract
1 (106 g) package instant lemon pudding mix
1 (500 ml) container nutri whipped topping
1 dash salt

Steps:

  • Combine sugar, flour and salt in a pot.
  • Whisk to combine well.
  • Add milk gradually to get no lumps.
  • Stir over medium heat until it thickens and comes to a low boil, about 10 minutes.
  • Beat yolks in a bowl.
  • Add some hot mixture into the bowl just a little to bring to a warm temperature.
  • Add all back into the pot of mixture on the stove and continue to low cook until thick, do not boil.
  • Remove and blend in the vanilla and pkg of dry pudding mix.
  • Stir well until blended.
  • Cool two hours, covered with saran (not to get a skin on top) or until cold.
  • Beat nutri whip and then fold into the cold custard.
  • Blending well, the cold mixture is hard to fold in( as it has set to a thick custard) so using beaters low speed is also good results.
  • Fill cannoli-- or filling and topping for cakes.this should be stored in the refrigerator, because of the Nutri whip topping.
  • I have never made this with reg. whipping cream, always Nurti Whip.
