GARLIC CHICKEN PARCELS
These Garlic Chicken Parcels are easy to make and look super impressive, plus they are make ahead! Individual puff pastry parcels (using pie crusts) are filled with juicy chicken and oozing with garlic butter. Serve with potatoes and salad for an easy weeknight family dinner, half the recipe and serve them just for two on a date night. Or they are fancy enough for entertaining and can be prepared ahead of time and then just popped in the oven to cook when you sit down for appetizers.

Steps:
- Peel the shallot/red onion and the garlic then place them in a food processor along with the parsley. Whizz until you have quite a finely chopped mixture.
- Add in the lemon juice, butter, salt and pepper, then whizz well to combine. (If you forget to soften the butter then this will still work but you will need to leave it to whizz for a longer time.)
- Use a spoon to roughly divide the butter into 4 pats and set aside.
- Line a baking tray with cooking paper and pre-heat the oven to 200ºC/390ºF.
- Take each chicken breast and cut off the thinner pointed end, to create a sort of square shape of chicken (see pictures in post) Refrigerate/freeze these pieces for another dish (I have a few suggestions above)
- Lay a sheet of puff pastry out on the chopping board. I find it easiest if I keep it sat on the plastic/paper that is used to divide them.
- Place a chicken square in the centre of the pastry. Spoon over a pat of the butter mixture and then gather up the pastry to enclose the chicken and create a pouch. Gently squeeze the pastry closed.
- Carefully slide the chicken parcel onto a prepared baking sheet.
- Repeat with the remaining chicken pieces.
- Crack the egg into the bowl you used for the butter and whisk with a fork.
- Brush the parcels with egg wash and then bake for 25-30 minutes until golden brown.

- Heat oven to 375 degrees F (190 degrees C).

- Preheat the oven to 375 degrees F (190 degrees C). Spray a baking pan with cooking spray. Place chicken on the prepared pan.

My version of chicken parmesan is a little different than what they do in the restaurants, with less sauce and a crispier crust.

- Preheat an oven to 450 degrees F (230 degrees C).
- Place chicken breasts between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound chicken with the smooth side of a meat mallet to a thickness of 1/2-inch. Season chicken thoroughly with salt and pepper.
- Beat eggs in a shallow bowl and set aside.
- Mix bread crumbs and 1/2 cup Parmesan cheese in a separate bowl, set aside.
- Place flour in a sifter or strainer; sprinkle over chicken breasts, evenly coating both sides.
- Dip flour coated chicken breast in beaten eggs. Transfer breast to breadcrumb mixture, pressing the crumbs into both sides. Repeat for each breast. Set aside breaded chicken breasts for about 15 minutes.
- Heat 1 cup olive oil in a large skillet on medium-high heat until it begins to shimmer. Cook chicken until golden, about 2 minutes on each side. The chicken will finish cooking in the oven.
- Place chicken in a baking dish and top each breast with about 1/3 cup of tomato sauce. Layer each chicken breast with equal amounts of mozzarella cheese, fresh basil, and provolone cheese. Sprinkle 1 to 2 tablespoons of Parmesan cheese on top and drizzle with 1 tablespoon olive oil.
- Bake in the preheated oven until cheese is browned and bubbly, and chicken breasts are no longer pink in the center, 15 to 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- Cut the chicken breasts in half widthwise to make 4 thin breasts.
- Season the chicken with salt, pepper, and onion powder.
- Coat the chicken in flour, then egg, and then bread crumbs.
- Pour oil in a cast-iron skillet to come ¼ inch (½ cm) up the side. Heat the oil over medium-high heat. Add the chicken and fry on both sides until brown, about 4 minutes.
- Transfer to a paper towel-lined plate to drain.

- Preheat oven to 200C
- Make an incision lenghways across the chicken, making an envelope. Do not cut all the way through.
- In the incision, spread the chicken with a layer of the pesto.
- Slice the cheese and place into the incisions on top of the pesto
- Wrap the chicken with slices of parma ham, ensuring the whole chicken breast is covered. Season the chicken breasts
- Bake for around 30 minutes, ensuring the chicken in cooked through. Excellent served with cubed potatoes with rosemary and green beans.

- Heat oven to 220C/200C Fan/gas 7. Cut a slit halfway in each chicken breast, then put each one between two pieces of baking parchment and bash with a rolling pin to flatten slightly.
- Cut your sheet of pastry in half widthways and put both halves on a baking tray. Sit a chicken breast on top of each half, then cram the cavities with the Boursin (don't worry if a bit of cheese oozes out). Season, scatter over the lemon zest then fold the edges of the pastry in to the centre and pinch shut. Flip each parcel over so the seal is on the bottom. Brush with a little oil, then bake for 30 mins until deep golden.
- About 10 mins before your parcels are ready, steam or boil the greens until tender. Toss in the oil and season. Serve alongside your chicken parcels with lemon wedges for squeezing over.

ITALIAN CHICKEN PARCELS
A nice, simple and healthy chicken dish inspired from Italy!

- Start the dish by preparing your vegetables, chopping them up into bite sized pieces and pre-heat your oven to 180C/Fan 160C/Gas 5
- Tear 4 large squares out of the tin foil per chicken breast fillet, ensuring you have enough to be able to create a "parcel". Put on top of this the a portion of the chopped courgette, red onion and brown onion. Repeat for the other 3 pieces of tin foil.
- Place 1 chicken breast fillet on top of each of the piles of vegetable and grate or slice some of the cheddar on top. Place on top of this a bit of basil.
- Now here is the real fun of the dish. Wrap up the parcels by folding the corners into the middle, in doing so, creating a "parcel". After doing so, place on a baking tray and leave in the oven for 30-35 minutes.
- After 30-35 minutes, your meal is complete! Place the baking tray on the side and very carefully, remove the tin foil. Then plate up alongside pasta, cous cous or eat it on its own.
