FRESH FRUIT FLAN



Fresh Fruit Flan image

A beautiful fresh fruit dessert, this is not your regular 'fruit pizza.' This recipe was given to me by a great cook and great friend. You can substitute your favorite fruits or berries for those in this recipe.

2 ⅛ cups all-purpose flour
½ teaspoon cream of tartar
½ teaspoon baking soda
½ cup white sugar
½ cup confectioners' sugar
½ cup butter
½ cup vegetable oil
1 egg
½ teaspoon vanilla extract
1 (8 ounce) package cream cheese, softened
⅓ cup white sugar
½ teaspoon vanilla extract
3 cups fresh strawberries, hulled and halved
1 cup fresh blueberries, rinsed and dried
3 kiwifruit, peeled and thinly sliced
1 tablespoon cornstarch
¼ cup white sugar
½ cup water
½ cup orange juice
2 tablespoons lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 10-by-15 inch jelly roll pan.
  • For the crust, sift together the flour, cream of tartar, and baking soda into a mixing bowl. In a separate bowl, cream together white and confectioners' sugars, butter, vegetable oil, egg, and vanilla. Add the dry ingredients. Blend well. Spread the dough evenly on the bottom of the greased pan. Bake until golden brown, 10 to 12 minutes. Allow to cool completely.
  • For the filling, cream together the cream cheese, sugar, and vanilla. Spread over the cooled crust. Arrange the fruit on the cream cheese filling and refrigerate.
  • For the glaze, mix together the sugar and cornstarch in a small saucepan. Whisk in the water, orange juice, and lemon juice. Bring to a boil over medium heat; boil gently for one minute. Remove from heat and allow to cool completely.
  • Spoon or brush the glaze evenly over the fruit. Refrigerate until ready to serve.

A classic Mexican dessert takes on a citrus edge in this simple yet elegant version.

3/4 cup sugar
3 tablespoons boiling water
6 eggs
1/4 cup orange juice
2 tablespoons finely grated orange peel
1 teaspoon vanilla
1 can (14 oz) sweetened condensed milk
1 can (12 oz) evaporated milk
Spun sugar, if desired

Steps:

  • Heat oven to 325°F. Spread sugar evenly over bottom of heavy skillet. Cook over medium heat, stirring constantly, until sugar melts and turns light caramel color. Add 3 tablespoons boiling water, stirring until sugar is dissolved. Pour into ungreased quiche dish or 10-inch glass deep-dish pie pan or 8-inch (2-quart) square baking dish . Tilt to evenly cover bottom; set aside.
  • In medium bowl, beat remaining ingredients with electric mixer on medium speed 1 to 2 minutes or until thoroughly blended. Pour over caramelized sugar. Place baking dish in large pan (broiler pan). Pour 1 inch hot water into broiler pan.
  • Bake 40 to 45 minutes or until mixture is almost set and knife inserted in center comes out clean. Cool 1 hour; refrigerate 1 hour. Run knife around outside edge to loosen; turn upside down onto 12-inch round serving plate with raised sides to hold liquid. Garnish with spun sugar.

1/2 cup honey, preferably raw and unfiltered
1/2 cup sugar
8 large eggs, room temperature
1 1/4 cups whole milk, room temperature
1 1/4 cups heavy cream, room temperature
1 teaspoon pure vanilla extract
1/2 teaspoon kosher salt
Supremed citrus (such as clementines, tangerines, and pink grapefruits) and peeled kiwifruit wedges, for serving

Steps:

  • Preheat oven to 325 degrees. Combine 1/4 cup honey, sugar, and 1/4 cup water in a medium saucepan. Place over medium heat and cook, stirring constantly, until sugar dissolves (if bubbles appear at edges of pan before sugar dissolves, reduce heat to low). Increase heat to high and bring to a boil, then reduce heat to medium and cook, undisturbed, until mixture darkens and registers 300 degrees (hard-crack stage) on a candy thermometer, about 5 minutes. Pour into an 8-inch round cake pan, tilting pan as necessary to ensure mixture evenly coats bottom. Let stand until cool and hardened, about 15 minutes.
  • Gently whisk eggs in a large bowl. Add milk, cream, vanilla, salt, and remaining 1/4 cup honey. Gently whisk to combine and dissolve honey. Firmly tap bowl on a work surface to release any air bubbles; skim any foam from surface of mixture. Place cake pan in the center of a roasting pan, then pour egg mixture into cake pan. Transfer to oven; pour enough boiling water into roasting pan to come two-thirds up sides of cake pan. Cook until custard is set but still wobbly in center, 50 to 55 minutes. Let cool in water bath 10 minutes, then carefully transfer cake pan to a wire rack and let cool completely.
  • Run a knife around edges of pan to loosen sides of flan. Invert onto a large rimmed plate or serving dish. Transfer to refrigerator until cold, at least 2 hours or, loosely covered, up to 2 days. Top with fruits and serve, cut into wedges.

If you don't have a tart pan, use a 9-inch pie plate. You'll need about half the dough for the crust. Bake the tart for about 40 minutes in step 5.

1 1/2 sticks unsalted butter, room temperature, plus more for pan
1 1/4 cups all-purpose flour
1 teaspoon coarse salt
1/2 cup whole blanched almonds
3/4 cup confectioners' sugar
1 large egg yolk
5 large eggs
1 1/4 cups granulated sugar
1/2 teaspoon coarse salt
1/2 cup fresh lemon juice (from 6 lemons), plus 2 teaspoons finely grated lemon zest
1/4 cup fresh lime juice (from 4 limes)
2 tablespoons heavy cream, (optional)
Garnish: red currants or raspberries and confectioners' sugar

Steps:

  • Preheat oven to 350 degrees. Make the crust: Butter an 11-inch fluted tart or quiche pan with a removable bottom. Whisk together flour and salt. Pulse almonds with confectioners' sugar in a food processor until finely ground.
  • Beat butter with a mixer on medium speed until pale and fluffy. Beat in almond-sugar mixture. Add yolk and flour mixture, and beat until combined.
  • Press dough evenly into bottom and up sides of prepared pan. Prick dough all over with a fork. Freeze for 20 minutes.
  • Bake crust for 10 minutes. Remove from oven. Press down bottom and up sides if needed. Bake until golden brown, about 13 minutes more. Transfer pan to a baking sheet, and let cool for 15 minutes. Reduce oven temperature to 300 degrees.
  • Make the filling: Beat eggs, granulated sugar, and salt with a mixer on medium-high speed until pale and fluffy. Add juices, zest, and cream, and beat until incorporated. Tap bowl on counter to release air bubbles. Pour into prepared crust. Bake until set, about 25 minutes. Let cool completely. Garnish with currants or raspberries and a dusting of confectioners' sugar.

  • Add milk and cream to citrus-sugar mixture. Set over medium-high heat and stir occasionally until steaming (do not boil). Cover pan and remove from heat; let stand 10 to 15 minutes.
  • Meanwhile, in a bowl, beat egg yolks and port to blend. Pour hot milk mixture through a fine strainer into a 1-quart glass measure; discard peel. Gradually whisk milk mixture into egg yolk mixture until blended.
