CRISPY HONEY ORANGE GLAZED SALMON

Crispy Honey Orange Glazed Salmon image

Crispy Honey Orange Glazed Salmon fillets are pan-fried in the most beautiful honey-orange-garlic sauce, with a splash of soy for added flavour!

Provided by Karina

Categories     Dinner

Time 20m

Number Of Ingredients 9

1 tablespoon olive oil
2 teaspoons butter,
4 (6-ounce) skinless salmon fillets, ((170 grams each))
1/4 cup fresh orange juice, ((about 1/2 an orange))
3 tablespoons honey
2 tablespoons low-sodium soy sauce
4 cloves garlic, (crushed or minced)
salt and cracked black pepper, (to taste)
1/2 an orange, (sliced to serve)

Steps:

  • Heat butter (or oil) in a pan or skillet over medium-high heat. Sear salmon skin-side up for 3-4 minutes. Flip and sear for 2 minutes.
  • Pour in the orange juice and allow to reduce to half the quantity (it takes about 1 minute to reduce down if your pan is hot enough). Add the garlic and cook until fragrant (30 seconds). Move the salmon to the sides of the pan and add in the honey and soy sauce, stirring well to combine all of the flavours together.
  • Bring to a simmer until reduced to a nice syrup (this takes about another 30 seconds to 1 minute), and move the salmon around in the sauce to evenly coat. Remove from heat once the salmon is cooked to your liking.
  • Season with salt and pepper to your tastes. Drizzle with the sauce to serve. Best served over rice, noodles, steamed vegetables or with a salad.

CITRUS-GLAZED SWEET POTATOES

Citrus-Glazed Sweet Potatoes image

These candied sweet potatoes work as a side dish for any dinner or holiday celebration by balancing citrusy sweet and savory flavors - and they also produce top-notch leftovers. Right out of the oven or the fridge, they are sure to add a pleasantly tart note to any meal. The braising liquid thickens as the tubers cook, resulting in a tangy glaze that coats every bite. Its acidity also helps the sweet potatoes stay intact with a slight bite even as they soften. The thinly sliced orange zest becomes tender and develops a marmalade-like taste. The shiny strips make for a beautiful garnish, along with the syrupy pan sauce.

Provided by Yewande Komolafe

Time 2h30m

Yield 6 servings

Number Of Ingredients 11

3 medium oranges
1 lemon
2 limes
3/4 cup packed dark brown sugar
1 teaspoon kosher salt (Diamond Crystal)
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon black pepper
3 1/2 pounds sweet potatoes (about 9 small)
4 tablespoons unsalted butter, cut into 1/2-inch cubes

Steps:

  • Heat oven to 375 degrees (see Tip). Use a vegetable peeler to peel strips of zest off 2 oranges. Cut the strips into thin matchsticks using a sharp knife and transfer to a large bowl. Juice all the oranges, the lemon and limes into the bowl for 1 1/4 cups juice. Whisk in the brown sugar, salt, ginger, cinnamon, nutmeg and black pepper until the sugar dissolves.
  • Generously peel the sweet potatoes, removing the skin and the tougher layer of flesh just beneath. If your sweet potatoes are larger than 2 inches in diameter, halve or quarter lengthwise. Cut into 1-inch-thick rounds or pieces, add to the citrus mixture and toss to coat.
  • Transfer the sweet potatoes and juice mixture to a 9-by-13-inch shallow glass or ceramic baking dish. Dot the top with the butter. Bake, stirring every 20 to 30 minutes to cook and coat evenly, until the sweet potatoes are tender and glazed, 1 1/2 to 2 hours. A paring knife should slide through the potatoes easily and the glaze should be the consistency of syrup.
  • Let cool for about 10 minutes before serving. The dish can be made ahead and cooled, then wrapped tightly and refrigerated for up to 2 days. Reheat in a 350-degree oven, covered with foil, or in a microwave, covered with a microwave-safe cover or plastic wrap.

  • Preheat oven or toaster oven to 425F. Line a pan with foil and spray with oil (for easy clean up). Or line with parchment paper.
  • MAKE GLAZE: In a small saucepan, stir together 2 teaspoons of a mix of orange-lemon-lime zest, orange juice (about 1/4-1/3 cup), 1 1/2 tablespoons of lemon-lime juice combination, maple syrup, Dijon mustard, a pinch of salt and chili flakes (if using). Bring to boil then lower to medium to simmer briskly for 5-7 minutes until mixture thickens a bit to become slightly syrupy. Taste and adjust, adding more citrus, syrup or Dijon as needed.
  • PREPARE AND ROAST SALMON: Place fillets on pan, skin side down. Sprinkle salmon generously with salt and pepper. Brush on a couple of tablespoons of glaze. Sprinkle on chopped onions. Roast for 10-12 minutes, depending on thickness of salmon. Rule of thumb is 10 minutes per inch of thickness. Brush on another 1/2 tablespoon of glaze half way through. Salmon should just be able to flake easily but still have a little translucency in the middle with a medium pink colour.
  • FINISH AND SERVE: To remove skin, slide a spatula between skin and salmon meat and lift off to a plate. Drizzle with remaining glaze. Garnish with remaining zest and toasted sesame seeds or chopped parsley if desired.

  • Preheat your oven to 450 degrees. Next, briefly brine the salmon fillets in enough saltwater solution to cover them — you can do this in a bowl or a reusable plastic bag. The salmon will only need 10 minutes to brine in this solution. Set aside.
  • Meanwhile, combine orange juice, lime juice, honey, soy sauce, and garlic in a small saucepan over medium heat. Bring the mixture to a simmer, then drop the heat to low to maintain a gentle simmer, stirring constantly to keep any of the sugars from burning.
  • Allow this mixture to reduce until it thickens into a syrupy glaze — it will take about 10 minutes — then remove from heat. Stir in butter until it is integrated into the glaze, then set aside.
  • Once salmon has brined, drain and pat dry with a tea towel. Arrange fillets in a small baking dish skin side down and top with orange slices. Brush a layer of glaze on tops of fillets, reserving remaining glaze for serving. Set a kitchen timer for 6 minutes.
