Citrus-Marinated Grilled Salmon With Tabbouleh Salad image

Tabbouleh salad is a beloved whole-grain dish. As with traditional versions, this recipe uses fragrant mint and parsley to flavor the salad, which proves a great match for grilled salmon topped with fresh tomatoes and cucumbers.

1 cup uncooked bulgar wheat
1 1/2 cup boiling water
2 lemons, juice and zest of
3 tablespoon olive oil, divided
1 1/2 cup chopped flat-leaf parsley
1/2 cup chopped chives
1/2 cup finely chopped red onion
1/4 cup finely chopped mint
salt and pepper, to taste
3 tablespoon olive oil, plus more for oiling grill (if needed)
1 orange, juice and zest
salt and pepper, to taste
5 (6-ounce) boneless skin-on salmon fillets
1/3 cup finely chopped red onions
2 tomatoes, chopped, or 1 cup cherry or grape tomatoes, halved
1 cucumber, peeled, seeded, and chopped
1 tablespoon lemon juice

Steps:

  • For the salad, put bulgur wheat, boiling water, lemon juice, and oil into a large bowl and stir gently. Immediately cover with a dish towel and set aside for 1 hour. Uncover and fluff with a fork. Add zest, parsley, chives, onions, mint, salt, and pepper and toss gently to combine. Cover with plastic wrap and chill for at least 1 hour.
  • Meanwhile, for the salmon, whisk together 2 tablespoons of the oil, zest and juice, salt, and pepper in a wide, shallow dish. Arrange salmon in dish, turn to coat all over with marinade, cover, and chill for 30 minutes.
  • Preheat grill and brush grates with oil. Remove salmon from marinade; discard remaining marinade. Arrange salmon on grill, skin side up, and cook, flipping once, until golden brown on both sides and just cooked through, about 10 minutes total. Transfer to a platter and set aside to let rest for 5 minutes.
  • Stir together onions, tomatoes, cucumbers, remaining 1 tablespoon oil, lemon juice, salt, and pepper in a medium bowl. Serve salmon on a bed of tabbouleh salad with the tomato-cucumber mixture spooned over the top.

The fresh lime juice and mustard add a nice tang to this moist and flaky grilled salmon. I came up with this marinade after tasting something similar at a friend's house and it is now one of our favorite ways to do fish. You may also use other firm fish steaks instead of salmon; halibut, tuna and swordfish all work well.

¼ cup fresh lime juice
1 tablespoon olive oil
2 teaspoons Dijon mustard
¼ teaspoon ground ginger
¼ teaspoon garlic powder
¼ teaspoon cayenne pepper
⅛ teaspoon black pepper
4 salmon steaks

Steps:

  • Whisk together the lime juice, olive oil, mustard, ginger, garlic, cayenne pepper, and black pepper in a bowl, and pour into a resealable plastic bag. Add the salmon steaks, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 1 hour.
  • Preheat an outdoor grill for medium heat, and lightly oil grate. Remove the salmon from marinade, and shake off excess. Discard remaining marinade.
  • Grill until the fish flakes easily with a fork, 5 to 10 minutes per side depending on thickness.

1/2 cup canola oil
1 medium onion, diced
2 tablespoons lemon juice
2 tablespoons orange juice
1 teaspoon grated lemon zest
1 teaspoon grated orange zest
1 garlic clove, minced
2 salmon fillets (about 1-1/2 pounds each)
orange or lemon slices, optional

Steps:

  • Combine the first seven ingredients in a jar with a tight-fitting lid; shake well. Grill salmon over medium heat, skin side down, for 15-20 minutes or until fish flakes easily with a fork. Baste every 5 minutes with citrus mixture. Garnish with orange or lemon slices if desired.

2 tablespoons lemon juice
2 tablespoons olive oil
4 teaspoons reduced-sodium soy sauce
2 teaspoons lime juice
3 red onion rings

1 fresh thyme sprig
1 bay leaf
2 teaspoons minced fresh gingerroot
1/8 teaspoon fennel seed
1/8 teaspoon coarsely ground pepper
4 salmon fillets (6 ounces each)

Steps:

  • In a large resealable plastic bag, combine the first 12 ingredients. Add the salmon; seal bag and turn to coat. Refrigerate for 30 minutes, turning occasionally., Drain and discard marinade. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Place salmon skin side down on grill rack. Grill, covered, over medium heat or broil 4 in. from the heat for 10-12 minutes or until fish flakes easily with a fork.
