CRANBERRY SAUCE

Cranberry Sauce image

Cranberry sauce should be sweet but not cloying, and tart without causing pucker and anguish. It should have a jelly-like quality, but should owe more to the appearance of jam. The key element to making cranberry sauce is to understand that cranberries are high in pectin, a carbohydrate that exists in many fruits and which is released by the berries when they are heated and the cells of the fruit break down. In the presence of sugar, the pectin molecules bond to one another, forming a kind of gel. The longer you cook a cranberry sauce, the more pectin is released and liquid is evaporated, and the stiffer the result will be. Science! Sometimes it's helpful. So is spice. Some like a clove or two added to their cranberry sauce. (I am not one of them.) Others, a whisper of ginger and a small handful of nuts, for texture. Of this, I approve.

CRANBERRY SAUCE WITH GIN & ROSEMARY

Cranberry sauce with gin & rosemary image

Make this extra special version of cranberry sauce by adding gin and rosemary. It's the perfect sauce for your Christmas dinner table

Provided by Good Food team

Time 25m

Yield Serves 8-10

Number Of Ingredients 4

200g cranberries, fresh or frozen
100g golden caster sugar
large rosemary sprig
4 tbsp gin

Steps:

  • Tip the cranberries, sugar and rosemary into a pan with about 100ml water. Cook over a low heat for about 15 mins, stirring occasionally, until all the cranberries have burst and the sauce has thickened to a syrupy consistency. Fresh cranberries thicken the sauce more readily than frozen, so it may take a little longer, but be careful not to let the sauce become a jam.
  • Scoop out the rosemary and stir through the gin. Cook for 1 min more, then leave to cool. Will keep, covered, in the fridge for three days.

  • Combine fresh cranberries, sugar, orange juice (and extra water, if necessary), and rosemary in cheesecloth in a medium saucepan over medium-high heat. Reduce the heat to a simmer and simmer 1 - 4 minutes, depending on how many berries you like whole. The berries will pop as they cook, and you can help this process by pressing them against the sides of the pot with the back of a spoon.
  • When you're satisfied with the consistency, remove the saucepan from the heat and stir in orange zest. Cover and let stand for 10 minutes. Remove rosemary from pan and press the cheesecloth against the side of the saucepan with the back of a spoon to extrude all juices. Transfer to serving bowl. Let cool to room temperature then refrigerate.
