8 oz fresh ginger root (2 pieces, each about 10 inches long)
2 cups sugar
2 cups water

Steps:

  • Peel the ginger root with a vegetable peeler, and cut into thin rounds.
  • Bring the sugar and water to a boil over medium high heat.
  • Add the sliced ginger and bring the mixture back up to a simmer.
  • Remove from heat and allow to steep for at least 30 minutes.
  • Strain syrup through fine mesh. Discard ginger.
  • Keep the syrup for a month refrigerated in an airtight container.

3 cups water
3 cups sugar

Steps:

  • Peel ginger and slice into rounds about 1/8 inch thick.
  • Mix sugar and water in a large sauce pan and bring to boil.
  • When sugar is disolved, add ginger and boil for 45 minutes.
  • Ginger should be sweet and tender.
  • Drain ginger and reserve liquid.
  • Place ginger on rack to dry for 30 minutes.
  • Toss with sugar to coat.
  • Let dry on wax paper.
  • Store in airtight container.
  • Boil reserved liquid until reduced to a syrup with consistency between maple syrup and honey. (mine was that way after the 45 minutes with the ginger in it.
  • Sugar will crystallize so just add a little water and boil.
  • Store in airtight container in refrigerator.
  • Syrup can be used for waffles, icecream, tea, Or whereever you use syrup.

1 1/2 cups sugar
2 or 3 2-inch-long strips lemon zest (optional)
1 small dried hot pepper (optional)

Steps:

  • In a small, heavy-bottomed saucepan, combine the ginger, sugar, lemon zest and hot pepper (if using) and 2 cups water. Place over medium-high heat and bring to a boil.
  • Reduce heat to low and simmer 30 minutes. Remove pepper, if using, and continue simmering until syrup is reduced by half, about 30 minutes. Do not reduce too much or syrup will crystallize when cool.
  • Remove syrup from heat and allow to cool. Strain it, reserving the ginger for another use (like candied ginger) if desired. Pour syrup into a jar or bottle, and refrigerate for up to a week; flavor will fade after that. (To make a quick ginger ale, put 2 teaspoons in 1/2 cup soda water and stir.)
