CLASSIC BRAN MUFFINS



Classic Bran Muffins image

A delicious source of fiber! My family have them almost every morning. Great healthy muffins! You may substitute dates for the raisins if you wish.

1 ½ cups wheat bran
1 cup buttermilk
⅓ cup vegetable oil
1 egg
⅔ cup brown sugar
½ teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
½ cup raisins

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.
  • Mix together wheat bran and buttermilk; let stand for 10 minutes.
  • Beat together oil, egg, sugar and vanilla and add to buttermilk/bran mixture. Sift together flour, baking soda, baking powder and salt. Stir flour mixture into buttermilk mixture, until just blended. Fold in raisins and spoon batter into prepared muffin tins.
  • Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool and enjoy!

2 teaspoons cocoa powder

⅛ teaspoon ground cinnamon
⅛ teaspoon ground cloves
⅔ cup dark brown sugar
⅓ cup vegetable oil
1 egg, beaten
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper muffin liners.
  • Stir milk and lemon juice together in a bowl; let sit until milk curdles slightly, about 5 minutes. Pour bran cereal into milk mixture and let cereal soften, about 5 minutes more.
  • Sift flour, cocoa powder, baking soda, baking powder, salt, cinnamon, and cloves together in a bowl. Beat brown sugar, vegetable oil, egg, and vanilla extract together in another bowl. Stir egg mixture into flour mixture until batter is just-combined.
  • Stir bran cereal mixture into batter; fold in raisins. Spoon batter into prepared muffin cups.
  • Bake in the preheated oven until browned and set, 16 to 18 minutes.

½ cup raisins
1 egg
¾ cup milk
1 ½ cups bran cereal (such as Kellogg's All-Bran® Original Cereal)
1 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
2 tablespoons melted butter
1 apple, cored and shredded
1 ripe banana, mashed
½ cup honey

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Grease 12 muffin cups, or line with paper cupcake liners.
  • Cover raisins with water in a microwave-safe bowl, and microwave on High for 1 minute to plump. Drain the raisins, and set aside.
  • Beat the egg with milk in a bowl, and mix in the bran cereal. Let the mixture stand until the cereal absorbs the liquid, about 5 minutes. Gently mix in the plumped raisins, flour, baking soda, cinnamon, melted butter, shredded apple, mashed banana, and honey, and stir a few times to mix.
  • Spoon the batter into the prepared muffin cups, and bake in the preheated oven for about 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

These moist, hearty muffins have great texture because of the slight crunch that the chia seeds contribute. They're not very sweet, and they crumble a little bit even thought they're moist; add a little more sweetener if you want more of a treat. I think they taste best a day after you bake them.

1 cup (135 grams) raisins, either regular dark raisins or golden
1 3/4 cups boiling water
1 1/2 cups (90 grams) unprocessed bran
3 tablespoons (35 grams) chia seeds
2 cups (250 grams) whole-wheat flour
1/2 cup (62 grams) unbleached all-purpose flour
2 teaspoons (10 grams) baking powder
1 teaspoon (5 grams) baking soda
1/2 rounded teaspoon (4 grams) salt
2 large or extra-large eggs
1/3 cup canola oil
1/2 cup (160 grams) agave syrup
2 tablespoons blackstrap molasses
1 1/2 cups buttermilk (350 grams)
1 teaspoon (5 grams) vanilla extract

Steps:

  • Place the raisins in a medium bowl and cover with the boiling water. Let sit 5 minutes, then stir in the bran and the chia seeds. Let sit for 10 minutes.
  • Sift together the flours, baking powder, baking soda and salt.
  • In a large bowl, beat together the eggs, oil and agave syrup. Whisk in the buttermilk and vanilla. Stir in the raisin and bran mixture and combine well. Fold in the sifted flour mixture and combine well. Cover with plastic wrap and refrigerate for several hours or overnight.
  • Preheat the oven to 375 degrees. Oil, butter or spray 18 to 24 muffin cups. Stir the batter and fill each cup 3/4 full. Bake for 25 to 35 minutes, depending on the size of the cups, until the muffins are puffed and browned. Remove from the tins and cool on a rack.

1 cup 1% low-fat milk

1 cup whole wheat flour
1 ¼ cups wheat bran
1 ¼ cups buckwheat flour
1 teaspoon baking powder

1 ½ tablespoons brown sugar

¼ teaspoon pumpkin pie spice
¼ teaspoon allspice
¼ teaspoon ground nutmeg

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly coat muffin cups with cooking spray or line with paper muffin liners.
  • In a medium bowl, beat together oil, applesauce, milk, yogurt, egg, strawberry jam, and vanilla extract.
  • In a food processor, grind bran flake cereal to a fine powder; this should make about 1 1/4 cups flour. Transfer to a large bowl, and stir together with whole wheat flour, wheat bran, buckwheat flour, baking powder, baking soda, brown sugar, ground ginger, pumpkin pie spice, allspice, and ground nutmeg. Pour in applesauce mixture, and mix thoroughly. Spoon mixture into prepared muffin cups, filling until level with the top of the muffin cups.
  • Bake in preheated oven 26 to 30 minutes, or until muffins test done with a toothpick. Remove muffins from pan, and cool on wire racks.

1 tablespoon baking powder
3/4 teaspoon salt
1/3 cup sugar
1/4 teaspoon cinnamon
1 egg, slightly beaten
1 cup milk
1/4 cup oil
2/3 cup chopped and peeled kiwi fruit

Steps:

  • Preheat oven to 400 degrees.
  • Mix all dry ingredients in a large bowl.
  • Mix egg, milk and oil.
  • Add wet mixture to the dry mixture stirring just until moistened.
  • Add kiwis, stir just until blended.
  • Spoon batter into 12 lined muffin cups, filling 3/4 full.
  • Bake for 20 minutes.

1/2 cup sugar (use 3/4 cup if your bananas are not ripe enough and kiwis are tart)
2 cups flour
1/2 teaspoon salt
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
3/4 cup low-fat plain yogurt (plain or vanilla)
6 tablespoons skim milk (or buttermilk)
3 tablespoons canola oil
1 egg
1 teaspoon vanilla extract
2 large ripe bananas, mashed
3 ripe kiwi, chopped into small cubes

Steps:

  • Combine the first 6 ingredients (DRY) in a large mixing bowl; set aside.
  • Mix yogurt, milk, oil, egg, vanilla and mashed bananas together in a smaller bowl until well-combined (WET).
  • Add WET mixture to the DRY mixture, mix until just combined (DO NOT OVERMIX) - lumps are ok.
  • Now stir in chopped kiwi gently; you may also add chopped nuts if you like.
  • Bake in a pre-heated oven at 375°F or 180°C for 25-30mins (mini muffins take about 20mins).
  • Cool in pan for 10mins, then remove and cool thoroughly on wire rack.
