SUMMERTIME PEACH COBBLER



Summertime Peach Cobbler image

This recipe was given to me many years ago by Mrs. Orin Stevens of Fargo, ND. She told me she'd gotten it from a church cookbook. I've used fresh, frozen and canned peaches with equal success.

3 cups peaches, peeled, pitted and sliced
1 1/2 cups sugar, divided
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup margarine
1/2 teaspoon vanilla
1/2 cup milk
1/2 cup water

Steps:

  • Grease a 9 x 13-inch pan and line with peaches.
  • Combine 1/2 cup sugar, flour, baking powder, salt, margarine, vanilla and milk.
  • Stir till smooth.
  • Pour over peaches.
  • Combine 1 cup sugar and water.
  • Pour over batter.
  • Bake 1 hour at 350°F.
  • Serve warm or room temperature.

Simply delicious and easy Southern peach cobbler. Serve with vanilla ice cream or whipped topping and drizzle with caramel topping.

2 (29 ounce) cans sliced peaches in juice
2 cups all-purpose flour
1 cup sugar
¾ cup unsalted butter, softened
1 cup chopped pecans

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Pour peaches and juice into a 9x13-inch baking dish.
  • Combine flour, sugar, and butter in a bowl; mix and knead with hands until crumbly. Sprinkle over the peaches, then scatter pecans over top.
  • Bake in the preheated oven until topping is golden brown and peaches are bubbly, 45 minutes to 1 hour.

1/2 teaspoon cinnamon, ground
1 tablespoon vanilla extract
2 tablespoons cornstarch
1 cup peach nectar
1/4 cup pineapple juice (can use juice reserved from canned peaches) or 1/4 cup peach juice (can use juice reserved from canned peaches)
2 (16 ounce) cans peaches, sliced, packed in juice, drained (or 1-3/4 lbs)
1 tablespoon margarine, tub
nonstick cooking spray (for baking dish)
1 cup pancake mix, dry
2/3 cup all-purpose flour
1/2 cup sugar
2/3 cup evaporated skim milk
1/2 teaspoon nutmeg
1 tablespoon brown sugar

Steps:

  • Combine cinnamon, vanilla, cornstarch, peach nectar, and pineapple or peach juice in a saucepan over medium heat.
  • Stir constantly until mixture thickens and bubbles.
  • Add sliced peaches to mixture.
  • Reduce heat and simmer for 5 to 10 minutes.
  • In another saucepan melt margarine and set aside.
  • Lightly spray an 8-inch square glass dish with cooking oil spray.
  • Pour hot peach mixture into the dish.
  • In another bowl, combine pancake mix, flour, sugar, and melted margarine.
  • Stir in milk.
  • Quickly spoon this mixture over peach mixture.
  • Combine nutmeg and brown sugar.
  • Sprinkle mixture on top of batter.
  • Bake at 400° F for 15 to 20 minutes or until golden brown.
  • Cool and cut into 8 squares.
