1/4 cup warm water
1 package (1/4 ounce) active dry yeast
1 cup lukewarm milk
2 ounces butter, room temperature
2 eggs, beaten
1/2 cup sugar
1-1/2 teaspoons salt
4 1/4 cups flour and 1/4 to 1/2 cup more for kneading
1/2 cup fine breadcrumbs

Steps:

  • In a stand mixer bowl, combine water and yeast. Allow to sit for 10 minutes or until the mixture becomes bubbly. Stir well.
  • In a small bowl, combine milk, butter, eggs, sugar, and salt. Stir together until incorporated.
  • Add milk mixture and 2 cups flour to yeast mixture. Using a dough hook, beat to combine.
  • Gradually add the remaining 2 1/4 cups flour in 1/2 cup increments and continue to combine all ingredients.
  • On a lightly floured surface, turn over dough and knead, sparingly adding the remaining 1/4 cup flour as necessary, for about 10 minutes or until smooth, supple and elastic.
  • In a lightly oiled large bowl, place dough. Cover with film and allow to rise for about 1 to 1 1/2 hours or until double in size.
  • On a lightly floured surface, transfer dough and divide into 24 pieces. Shape each piece into a ball and roll on breadcrumbs to coat.
  • Arrange balls about 1-inch apart on a lightly greased baking sheet. Cover with a cloth and allow to rise for about 1 to 1 1/2 hours or until double in size.
  • Bake in a 350 F oven for about 15 to 20 minutes or until golden brown. Serve hot.

2 ¼ teaspoons active dry yeast
¼ cup warm water
1 cup lukewarm milk
2 tablespoon unsalted butter at room temperature
½ cup sugar
1 teaspoon salt
2 eggs, (beaten)
4 ½ cups all purpose flour or more as necessary
Breadcrumbs

Steps:

  • Dissolve the yeast in ¼ cup warm water in a big bowl. Let stand for 10 minutes, and then stir well.
  • In a bowl, combine milk, butter, eggs, sugar and salt.
  • Add milk mixture and 2 cups flour into the yeast mixture. Beat with a wooden spoon or electric mixer until smooth. Gradually stir in remaining flour, adding more if necessary.
  • Transfer dough to a lightly floured surface. Knead dough, adding flour as necessary, until dough is smooth, elastic and no longer sticky (around 10 minutes).
  • Place dough in a lightly greased bowl, cover with plastic wrap and let rise for 1 hour or until double in size.
  • Transfer dough to a lightly floured board. Divide dough into 24 pieces. Shape each piece into a ball, roll in breadcrumbs and place in a baking pan lined with parchment paper.
  • Cover with a cloth and let rise for at least one hour or until almost double in size.
  • Bake in 225 F oven for 20 minutes and then increase the oven temperature to 325 F while keeping the bread in the oven. Bake for another 10-15 minutes or until golden brown.

1 teaspoon active dry yeast
1 cup lukewarm water
1 teaspoon white sugar
¼ cup white sugar
⅛ cup vegetable oil
1 teaspoon fine salt
3 cups all-purpose flour, divided
⅛ cup fine bread crumbs, divided, or as needed

Steps:

  • Pour yeast into water. Add 1 teaspoon sugar and set aside to soften, about 7 minutes.
  • Mix 1/4 cup sugar, oil, and salt together in a bowl. Add softened yeast mixture and 1/2 of the flour. Mix well. Add remaining flour little by little, mixing constantly, until dough does not stick to the sides of the mixing bowl.
  • Transfer dough to a lightly floured work surface and knead until smooth. Form into a ball and place in a lightly greased bowl. Brush surface of dough with more vegetable oil and cover with a damp cloth. Let rise in a warm place until doubled in size, about 2 hours.
  • Punch dough down and roll into 2-inch rounds. Cover rolls with 1/2 of the fine bread crumbs and let rise again, 15 to 20 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Cut rounds into 1 1/2-inch pieces and arrange on a slightly greased baking sheet, cut-side up. Sprinkle with remaining bread crumbs and let rise until doubled in size, about 30 minutes more.
  • Bake in the preheated oven until slightly brown, 20 to 25 minutes.

2 cups bread flour
1/2 cup white sugar
5 tablespoons melted butter
1 teaspoon baking powder
1 1/4 cup fresh milk (lukewarm)
1 pouch rapid rise yeast
1 cup bread crumbs
1 teaspoon salt
1 egg
1 tablespoon cooking oil

Steps:

  • Combine the yeast, sugar, and milk and stir until the yeast and sugar are fully dissolved. I've chosen milk instead of water because it just tastes better, but you can always use lukewarm water instead of the milk. In the mixing bowl, combine the dry ingredients: flour, sugar, salt, and baking powder then mix well. Add the egg, butter, cooking oil, and yeast-sugar-milk mixture in the mixing bowl with the dry ingredients then mix again until dough is formed. You can use your hands to effectively mix the ingredients. In a flat surface, knead the dough until the texture becomes fine. Mould the dough and put back in the mixing bowl, cover with damp cloth and let the dough rise for at least 45 minutes to 1 hour. After the dough has risen, transfer to a lightly floured working surface. Roll into a log then cut into four to six equal pieces. Take another portion of the dough, roll again into a log and cut into equal pieces, repeat this step until all the dough is done. Roll each piece of dough in breadcrumbs then arrange on a baking tray for at least an inch apart, you don't want it sticking together when it rises later on. Leave the dough in the tray to rise again for 15-20 minutes. Preheat the oven at 375°F (190 degree Celsius) for 10 minutes. If using a fan assisted oven, reduced the heat according to instructor's manual. Bake for 20-25 minutes or until nicely browned outside.

1 cup lukewarm water
1/2 cup vegetable oil
2 eggs (room temp)
1 teaspoon salt
1/2 cup sugar
4 3/4 cups bread flour (I suggest bread machine flour)
1 tablespoon fast rising yeast (I suggest for bread machine yeast)

Steps:

  • If you have a bread machine, add all ingredients (except the bread crumbs) in the order suggested by the manufacturer. Usually the liquid ingredients then dry ingredients. Select DOUGH cycle. But I suggest to combine lukewarm water and yeast and let it stand for 5 minutes before adding all the ingredients, then follow procedure 5-11.
  • To knead the dough manually, Combine lukewarm water and yeast. Stir. Let it stand for 5 minutes. Combine all ingredients except bread crumbs. (liquid ingredients then dry).
  • Knead the dough until smooth and elastic.
  • Place in a greased bowl. Let it stand in warm place to rise, covered for 1.5-2 hrs or until doubled.
  • Punch down the dough and turn out on a lightly floured board.
  • Divide dough into 24 equal parts and shape into ovals.
  • Roll lightly in bread crumbs.
  • Place on greased cookie sheet.
  • Cover, let rise in warm place, free from draft, until light and double- about 2-4 hrs to achieve light and fluffy bread. (Tip: I usually make the dough the night before, let it stand, 'till ready to bake it in the morning. So, you'll have fresh bake pan de sal at breakfast with kraft cheese -- yummy).
  • Bake at 375 degrees, for 15-20 minutes or until golden brown.
