2 cups cooked elbow macaroni
1 cup chopped celery
1 small onion, chopped
1/2 cup dill pickle, chopped
1/2 cup mayonnaise
2 teaspoons prepared mustard

Steps:

  • Dice ham into 1/2-inch cubes.
  • Combine ham and cheese with macaroni, celery, onion and pickle.
  • Mix mayonnaise and mustard; then stir into macaroni mixture, mixing well.
  • Chill well until ready to serve, several hours for maximum flavor!

12-16 ounces dried macaroni pasta ((or pasta of choice), cooked to package instructions)
2 cups chopped cooked ham
2 boiled eggs (, peeled and chopped)
2-3 stalks celery (, sliced thin)
1/4 cup minced red onion
1/2 cup diced bell pepper
2 Tablespoons minced parsley
1 cup mayo
1/4 cup distilled vinegar ( or apple cider vinegar)
3 Tablespoons sugar
1 Tablespoon prepared mustard
1 teaspoon garlic powder
1/2 teaspoon paprika
1 teaspoon salt (, or to taste)
1/2 teaspoon black pepper

Steps:

  • Prepare the pasta: Fill a large bowl (big enough to hold cooked pasta) halfway with ice water. Boil pasta to package instructions. Drain pasta, rinse with cold water and shock the pasta by adding it to the cold water to get it cold fast. Once cold, drain the pasta, transfer to a large bowl and set aside.
  • In bowl large enough to fit all the pasta, make the dressing first: add mayo, vinegar, sugar, mustard, garlic powder, paprika, salt and pepper. Whisk until well combined.
  • Add the pasta, ham, boiled eggs, celery, onion, bell pepper and parsley. Combine all ingredients together. Taste for seasonings and add more salt if necessary. Chill pasta salad for at least 1 hour before serving.

1 pound elbow macaroni
1 1/4 cups frozen petite peas
2 celery stalks, thinly sliced crosswise

1 cup mayonnaise
1/2 cup sour cream
