WINTER SPINACH SALAD



Winter Spinach Salad image

Currants or dried apricots can be substituted for the dried sour cherries, if you like.

1 bunch spinach, preferably flat-leaf, roughly chopped (about 6 cups)
1/3 cup dried sour cherries
3 scallions, thinly sliced
1 green apple, cored and thinly sliced
1/2 cup seedless red grapes, cut in half
1/4 cup walnuts, coarsely chopped
2 teaspoons apple-cider vinegar
2 tablespoons olive oil
Salt and freshly ground pepper
1/3 cup (about 2 ounces) crumbled goat cheese

Steps:

  • Combine spinach, cherries, scallions, apple slices, grapes, and walnuts. Whisk together vinegar and olive oil; season to taste with salt and pepper. Pour vinaigrette over salad; toss in cheese and arrange on salad plates.

4 cups lightly packed baby spinach
6 ounces strawberries (1 1/2 cups), hulled and thinly sliced
1/4 cups almonds (1 1/2 ounces), toasted and coarsely chopped
1 tablespoon sesame seeds, toasted
2 ounces feta, crumbled

Steps:

  • Whisk together oil and vinegar in a large bowl. Season with salt and pepper. Add spinach, strawberries, almonds, sesame seeds, and feta. Gently toss until spinach is evenly coated with dressing. Serve immediately.

3/4 pound Belgian endive, sliced crosswise 1/2 inch thick

Steps:

  • In a small bowl or jar, whisk or shake shallot, vinegar, mustard, and oil until thickened and combined; season with salt and pepper.
  • In a large bowl, combine spinach and endive; toss with dressing. Serve immediately.

2 teaspoons olive oil
1 medium onion, diced
2 garlic cloves, minced
2 lbs spinach (cleaned, trimmed and coarsely chopped)
1/2 cup milk
6 ounces reduced-fat cream cheese
3 dashes Worcestershire sauce
3 dashes hot sauce
3/4 cup shredded mozzarella cheese
salt and pepper

Steps:

  • Preheat oven to 425 degrees F. In a Dutch oven (5 quart pot with a tight fitting lid) over medium heat, warm oil. Add onion and garlic; cook until lightly browned, 5 to 8 minutes.
  • Add spinach in two additions, letting the first batch wilt before adding the next; cook until completely wilted, 5 to 8 minutes. Transfer to a colander; drain, pressing to release all excess liquid.
  • In the same pot, warm milk over high heat. Whisk in cream cheese until melted, about 3 minutes. Add spinach, Worcestershire sauce, hot sauce and 1/4 c mozzarella; stir to combine. Season with salt and pepper. Pour into a lightly oiled 1 1/2 quart shallow baking dish; sprinkle with remaining 1/2 cup mozzarella.
  • Bake until bubbly and golden brown, 20 to 25 minutes. Serve hot accompaniments, as desired. Serve with baguette slices, breadsticks, or crackers, for serving.

Steps:

  • In a large bowl, combine chopped romaine lettuce, avocado, plum tomatoes, tortilla chips, and salsa.

This is a favorite salad of mine when I want something that's quick to prepare. If I have some pre-boiled eggs in the refrigerator I can get this on the table in about 5 minutes. (Note: the recipe calls for 3 tablespoons of jarred bacon pieces; however, I usually fry 3 slices of bacon, crumble them and use in place of the jarred bacon. This makes the prep time about 10 minutes longer.)

1/2 cup classic caesar salad dressing
1/2 teaspoon pepper
1 (4 -6 ounce) bag pre-washed baby spinach leaves, from the produce dept (about 4-6 oz.)
2 plum tomatoes
3 tablespoons bacon, pieces jarred
1/2 cup herbed croutons

Steps:

  • Chop one egg finely, place in salad bowl; stir in salad dressing and pepper. Add spinach; toss until evenly coated.
  • Chop remaining two eggs coarsely. Slice tomatoes thinly. Top salad with eggs, tomatoes, bacon and croutons. Serve right away.
