THE ULTIMATE DINNER ROLLS RECIPE BY TASTY

The Ultimate Dinner Rolls Recipe by Tasty image

Sometimes, the best part of a home-cooked dinner is the simplest part. That's right, we're talking about rolls: buttery and flaky, they capture all things right about freshly-baked bread. Sure, bread baking can seem scary at first, but fear not: with our easy guide, you'll be making some of the best dinner rolls around. Pair 'em with any meal and you've got yourself a winner.

Provided by Pierce Abernathy

Categories     Appetizers

Yield 16 servings

Number Of Ingredients 10

1 cup whole milk
½ cup warm water
¼ cup unsalted butter, melted
¼ cup sugar
2 ¼ teaspoons active dry yeast, 1 packet
4 cups all-purpose flour, plus more for dusting
1 ½ teaspoons kosher salt
2 large eggs, room temperature
neutral oil, for greasing
sea salt, for sprinkling

Steps:

  • In a liquid measuring cup or small bowl, combine the warm milk, warm water, melted butter, and sugar.
  • Sprinkle the yeast evenly over the wet ingredients, stir to combine, and let stand for 5 minutes, until foamy
  • In a large bowl, combine the flour and salt, and stir to combine. Beat 1 egg, then add to the bloomed yeast mixture. Pour the wet ingredients into the flour and use a knife to stir until the mixture just comes together and forms a dough. Turn the dough out onto a lightly floured surface and knead for 5-10 minutes, or until the dough becomes smooth. Add more flour as needed to keep the dough from sticking. To test if it's done, tear off a small piece of dough and stretch into a thin layer. If the dough doesn't rip, it's ready. Or, press a finger into the dough to see if it bounces back.
  • Lightly grease a large glass bowl with oil. Add the dough, cover with plastic wrap, and let rest for 1 hour, or until doubled in size.
  • Punch down the dough, then turn out onto a floured surface. Knead for a few more minutes, just until the dough is smooth, about 2 minutes.
  • Divide the dough into 16 equal balls, roughly the size of tangerines.
  • Knead the balls, gathering the edges of the dough toward the center to make a taut, round ball with a smooth top.
  • Place the rolls on a parchment paper-lined baking sheet. Cover with plastic wrap and let rise for 30 minutes.
  • Preheat the oven to 375˚F (190˚C).
  • Beat the remaining egg in a small bowl. Uncover the rolls and brush with the egg wash. Lightly sprinkle the rolls with sea salt.
  • Bake for 25-30 minutes, or until the rolls have lightly browned and doubled in size.
  • Enjoy!

SOFT WHITE DINNER ROLLS

Soft White Dinner Rolls image

Getting supper on the table quickly makes you feel efficient. Baking a batch of soft dinner rolls makes you feel cozily competent. This may be an unfashionable virtue, but it is also a deeply satisfying one.

Provided by Nigella Lawson

Categories     side dish

Time 2h15m

Yield 30 rolls

Number Of Ingredients 12

3 1/2 to 4 cups all-purpose flour
3 teaspoons rapid-rise, bread-machine or other instant yeast
1 1/2 teaspoons salt
1 tablespoon superfine sugar
1 1/2 cups milk
1 1/2 tablespoons butter, softened
Vegetable oil for bowl and baking sheet
1 large egg, lightly beaten
1 tablespoon milk
Pinch of salt
1 teaspoon sesame seeds
1 teaspoon poppy seeds

Steps:

  • In a large bowl, combine 3 1/2 cups flour, yeast, salt and sugar. In a small saucepan, combine milk and butter, and place over low heat until milk is lukewarm. Pour into bowl of dry ingredients. Mix with a fork to make a rough dough, adding more flour, 1 tablespoon at a time, if necessary.
  • Using a mixer with dough hook, or by hand, knead dough until smooth and silky. Place in an oiled bowl, and cover with plastic wrap. Let rise in a warm place until double in size, about 1 hour.
  • Punch air out of dough. Oil a baking sheet, and set aside. Pull off pieces of dough the size of walnuts, and form into round balls. Place on baking sheet almost touching, about 1/4 inch apart, in 6 rows of 5 each. Cover with a kitchen towel, and let rise in a warm place 30 minutes. Meanwhile, heat oven to 425 degrees.
  • When rolls have risen, make a glaze by beating together the egg, milk and salt. Paint rolls with glaze. Sprinkle one row with sesame seeds and the next with poppy seeds; leave the third row plain, and then repeat pattern. (A teaspoon of seeds should decorate 2 rows.)
  • Bake rolls until risen and golden brown, about 15 minutes. Transfer to a cooling rack or serve immediately. To serve, place on a plate so rolls can be torn off to be eaten.

CLASSIC WHITE DINNER ROLLS

Classic White Dinner Rolls image

From King Arthur Flour, this is cool because it's made in a pie pan opposed to a regular baking pan. Could probably sub the butter for oil and white flour for wheat flour easily. I'm including both the original instructions, and bread machine instructions!

Provided by the80srule

Categories     Yeast Breads

Time 1h50m

Yield 12 rolls, 12 serving(s)

Number Of Ingredients 7

2 cups all-purpose flour
2 1/4 teaspoons active dry yeast
2 tablespoons sugar
1/2 teaspoon salt
1/2 cup milk
1/4 cup water
2 tablespoons butter

Steps:

  • OLD SCHOOL METHOD: combine 3/4 cup flour, yeast, sugar, and salt in a large bowl.
  • Heat the milk, water, and butter until warm, then add to the flour mixture.
  • Beat 2 minutes at medium speed with an electric mixer, scraping the sides of the bowl occasionally.
  • Add 1/4 cup flour, beat 2 minutes at high speed.
  • Stir in enough of the remaining flour to make a soft dough, knead on a lightly floured surface until smooth and elastic, about 8-10 minutes.
  • Cover, let rest for 10 minutes.
  • Divide the dough into 12 pieces and shape into balls. Place in a greased 8" pie pan. Cover and let rise in a warm draft-free place until doubled in size, about 30 minutes. Go to Step #9!
  • BREAD MACHINE METHOD: Place the ingredients in the order required by your bread machine. With mine, I have to proof the yeast first in the sugar and water for 10-15 minutes. After proofing, do a regular 1-lb dough cycle in your machine. Mine takes 90 minutes. (NOTE- I'd recommend using closer to 2 1/2-3 cups flour for the bread machine method as mine tends to produce runny dough time to time.).
  • When the dough cycle's finished, divide the dough into 12 pieces and shape into balls. Place them into a greased 8" pie pan.
  • Bake at 375F for 20 minutes or until set. Remove from the pan and brush with melted butter if desired, serve warm and immediately.

SUNDAY DINNER ROLLS

Sunday Dinner Rolls image

I make the dough on Saturday night, and shape the rolls on Sunday morning. The rolls rise while I am at church, and are ready to pop into the oven for Sunday dinner.

Provided by Martha Harmo

Categories     Bread     Yeast Bread Recipes     Rolls and Buns

Yield 32

Number Of Ingredients 9

1 (.25 ounce) package active dry yeast
¼ cup warm water
1 pinch white sugar
½ cup white sugar
2 eggs
1 cup warm water
½ cup vegetable oil
1 teaspoon salt
4 cups all-purpose flour

Steps:

  • In a large bowl, stir yeast, 1/4 cup warm water, and a pinch of sugar.
  • In another bowl, beat eggs in 1 cup warm water; add oil and salt. Mix egg mixture into yeast, and add sugar. Gradually add flour. Cover with a damp cloth, and allow to stand at room temperature for 1 hour, then place in the refrigerator and allow to rise overnight. This dough is rather sticky, and will raise to at least twice it's size.
  • Divide the dough into 4 equal parts. Roll each section out into a circle on a floured board or wax paper. Cut into pizza slice shapes, and roll slices large end to small end. Place on greased flat baking pans, and allow to rise for 2 hours.
  • Bake at 375 degrees F (190 degrees C) for 8 minutes.

  • In a small saucepan over medium heat, heat the milk and butter just until the butter is melted. Remove from heat and let sit for 5 minutes (temperature should be 120-140°F).
  • Meanwhile, in a stand mixer fitted with a dough hook, combine 2 cups of the four, sugar, salt and yeast. Add the milk/butter mixture until incorporated. Add the eggs and mix on medium speed until smooth, about 3 minutes.
  • Add the remaining flour a few tablespoons at a time until all incorporated. If needed, add more flour a tablespoon at a time to achieve a dough that starts to clear the bowl, is sticky to the touch, but does not stick and come off on your hands. Knead until smooth and elastic, about 5 minutes
  • Shape dough into a ball and place in a greased bowl, rolling the top in the butter or oil to grease it as well. Cover with plastic wrap or a towel and place in a warm place to rise until doubled in size, about one hour.
