COCOA PORK

Cocoa Pork image

Provided by Aida Mollenkamp

Categories     main-dish

Time 15h15m

Yield 6 to 8 servings

Number Of Ingredients 11

5 to 6-pound boneless pork shoulder, trimmed of excess fat
2 tablespoons vegetable oil
2 tablespoons kosher salt
3 tablespoons unsweetened cocoa powder
3 tablespoons packed light brown sugar
1 tablespoon grated orange zest
1 teaspoon freshly ground black pepper
1/4 teaspoon ground clove
3 medium yellow onions, quartered
1/3 cup freshly squeezed orange juice
1/4 cup red wine vinegar

Steps:

  • In a small mixing bowl, add the cocoa, sugar, orange zest, black pepper, and clove. Combine well to form a rub. Coat the pork with oil and sprinkle with the salt. Smear the cocoa rub all over the pork shoulder. Add the onion quarters and pork to a large dish and pour orange juice and red wine vinegar over the pork. Cover with plastic wrap and refrigerate for 4 to 12 hours to marinate.
  • Preheat the oven to 425 degrees F and arrange a rack in the middle. Let pork sit a room temperature while oven heats up, at least 45 minutes to 1 hour.
  • Remove pork from marinade and dry well. Put the pork in a clean, dry roasting pan, and roast until the skin is browned, about 30 minutes. Reduce the oven to 325 degrees F, scatter onions from the marinade around the pork and roast until the internal temperature registers 155 degrees F on an instant-read thermometer, about 2 to 2 1/2 to 2 hours.
  • Transfer the pork to a cutting board and cover loosely with foil. Allow the roast to rest for 15 to 30 minutes before carving.
  • Slice between the meat and cracklings and lift the crackling off in 1 piece. Cut the crackling into pieces, so they're easier to eat. Carve meat downward and against the grain and arrange on a platter. Spoon pan juices and onions over the meat and serve.

Sauce:
3 tablespoons extra-virgin olive oil
2 cloves garlic, finely chopped
1 onion, finely chopped
1 teaspoon kosher salt, plus extra for seasoning
1/2 teaspoon freshly ground black pepper, plus extra for seasoning
3 tablespoons unsweetened cocoa powder
1/2 cup low-sodium chicken broth
1 1/2 teaspoons finely chopped fresh rosemary
1 teaspoon balsamic vinegar
One 14.75-ounce can crushed tomatoes
1 tablespoon unsweetened cocoa powder

Two 1- to 1 1/4-pound pork tenderloins, trimmed

  • Position a rack in the center of the oven and preheat to 400 degrees F.

  • Cut the pork crosswise into 1/2-inch-thick slices. Arrange the slices on a platter. Spoon the sauce over the pork and serve.

CLOSE-ROASTED PORK WITH ANCHO, CINNAMON AND COCOA

CLOSE-ROASTED PORK WITH ANCHO, CINNAMON AND COCOA image

Categories     Pork

Yield 8 servings

Number Of Ingredients 10

2-1/2 tablespoons Mole-Inspired Seasoning with Ancho, Cinnamon, and Cocoa (recipe follows)
1 tablespoon plus 1/2 teaspoon kosher salt
1 teaspoon sugar
About 3-1/2 pounds pork shoulder, trimmed of excess fat, tied to make a compact Roast (bone-in is preferable, though boned is fine)
1 head of garlic, broken into cloves but not peeled
Mole-Inspired Seasoning with Ancho, Cinnamon, and Cocoa
Makes about 1/3 cup
This mix evokes the flavors of moles, the complex chile-based Mexican sauces.
In a small bowl, combine 3 tablespoons ancho chile powder and/or pimentón de la Vera (sweet, not hot), 1 tablespoon dark brown sugar, 1-1/2 teaspoons ground cinnamon, 1-1/2 teaspoons cocoa powder, 1 teaspoon ground cumin, and 1 teaspoon dried oregano.
For each pound of meat, combine 3/4 teaspoon kosher salt, 1/4 to 1/2 teaspoon grated garlic, and 1 to 2 teaspoons spice mixture.

Steps:

  • 1. Season the meat. In a small bowl, combine the mole seasoning, salt, and sugar. Rub all over the pork shoulder and place on a plate. Marinate for 1 hour unrefrigerated, or 2 to 24 hours refrigerated. 2. Prepare the meat for roasting. Preheat the oven to 275 F. Place the pork in a Dutch oven or deep-lidded roaster just big enough to hold the roast snugly. Scatter the garlic cloves around the roast. Place a large piece of aluminum foil over the pot, then press the lid down securely. Alternatively, wrap the meat in a tightly sealed foil package (make sure the seam is at the top so the juices don't leak out) and place the package in an ovenproof skillet or casserole. 3. Roast the meat. Roast the pork until very tender and practically falling apart, 3-3/4 to 4 hours. Transfer the roast to a platter and cover with foil. 4. Defat the roasting juices. Pour the juices into a sauceboat and place in the freezer for 10 minutes. Spoon off the fat that has risen to the top. 5. Serve the meat. Pull the meat apart or slice it across the grain and arrange on a platter. Pour some of the juices over and pass the rest. Save any remaining juices for heating up leftovers.

CRACKLING CRUST ROAST PORK WITH MOJO RECIPE BY TASTY

Crackling Crust Roast Pork With Mojo Recipe by Tasty image

This crispy, citrusy roast pork will be the star of your dinner table. The pork shoulder is marinated in a Cuban-inspired mojo sauce, baked for hours until tender, then broiled for that crispy, crackly skin. Pro tip: use a sharp knife to score the pork skin. This will help any excess fat render out during cooking, as well as allow those mojo flavors to really penetrate the meat!

Provided by Tikeyah Whittle

Categories     Lunch

Time 6h40m

Yield 8 servings

Number Of Ingredients 10

1 pork shoulder, bone-in, skin-on
24 cloves garlic
2 tablespoons kosher salt
½ cup olive oil
¼ cup fresh oregano, plus 1 tablespoon, finely chopped, divided
1 tablespoon ground cumin
2 oranges, zested
2 limes, zested
2 cups fresh lime juice
1 ½ cups fresh orange juice

Steps:

  • Preheat the oven to 350°F (180°C) .
  • Using a sharp knife, score the pork skin and fat in a diamond pattern, spacing the cuts ½ inch apart and taking care not to cut into the meat.
  • Combine the garlic and salt in a food processor and pulse until the garlic is finely chopped. Add the olive oil, whole oregano leaves, cumin, and orange and lime zests and process into a smooth paste.
  • Rub the paste all over the pork shoulder, making sure it gets into the scores. Transfer the pork shoulder to a baking dish or a roasting pan and pour the lime and orange juices around the pork. Cover the baking dish with foil.
  • Bake until an instant-read thermometer inserted into the center of the pork registers between 180°F (82°C) and 190°F (88°C), 6-7 hours. Remove the pork from the oven and turn on the broiler.
  • Uncover the pork and turn the oven to broil. Return the pork to the oven and broil until the skin puffs and is golden brown and crisp, 10-15 minutes. Transfer the pork to a cutting board and let rest for 20 minutes.
  • Meanwhile, pour the pan juices into a small saucepan and bring to a boil over high heat. Cook until reduced slightly, about 10 minutes. Remove the sauce from the heat and pour through a fine-mesh strainer into a small bowl. Skim off the fat, if desired. Stir the finely chopped oregano into the sauce.
  • Serve the pork shoulder with the sauce and your favorite side dishes.
  • Enjoy!
