Coconut Muffins image

A very simple muffin recipe. Try them with your favorite hot beverage for an early morning treat. Quick note: if using sweetened coconut, eliminate the honey.

2 eggs, separated
2 tablespoons margarine, softened
2 tablespoons honey
¼ teaspoon almond extract
⅓ cup boiling water
¾ cup unsweetened flaked coconut
¾ cup all-purpose flour

Steps:

  • In a large bowl beat egg yolks. Add the butter, honey, almond extract, boiling water, coconut, and flour. Stir until just blended.
  • In a separate bowl, beat egg whites until stiff with an electric mixer. Fold egg whites into muffin batter. Pour batter two-thirds of the way full into greased muffin tin.
  • Bake in a preheated 350 degree F (175 degrees C) oven for 20 to 25 minutes.

1 cup white sugar
¾ cup chocolate chips
½ cup unsweetened cocoa powder

1 egg
1 cup plain yogurt
½ cup milk

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups or line with paper muffin liners.
  • Combine flour, sugar, 3/4 cup chocolate chips, cocoa powder, and baking soda in a large bowl. Whisk egg, yogurt, milk, vanilla, and vegetable oil in another bowl until smooth; pour into chocolate mixture and stir until batter is just blended. Fill prepared muffin cups 3/4 full and sprinkle with remaining 1/4 cup chocolate chips.
  • Bake in preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

2/3 cup milk
1 egg

1/4 cup sugar
1/4 cup sweetened shredded coconut

Steps:

Nonstick spray or paper muffin cups
2 cups all-purpose flour
3/4 cup granulated sugar
1/2 cup Dutch process cocoa powder
1 tablespoon baking powder
1/2 teaspoon table salt
2 large eggs (at room temperature)
1 1/4 cups milk ((whole or low-fat but not nonfat))
1/3 cup mild vegetable oil
2 teaspoons vanilla extract

Steps:

  • Preheat the oven to 400°F (200°C). Position an oven rack in the center of the oven. Spray the muffin tin or line them with paper muffin cups.
  • In a medium bowl, whisk the flour, sugar, cocoa powder, baking powder, and salt.
  • In a large bowl, whisk the eggs until lightly beaten, then whisk in the milk, oil, and vanilla until smooth. Stir in the flour mixture with a wooden spoon until moistened.
  • Fill the prepared tins about 3/4 full. Reserve any leftover batter for a second batch. Bake for 20 to 23 minutes, or until the muffins have firm, rounded tops, and a toothpick inserted into the center of one muffin comes out with a few moist crumbs attached.
  • Set the pan on a wire rack to cool for 10 minutes.
  • Gently rock each muffin back and forth to release it. Remove the muffins from the pan and let them cool on the rack for 5 minutes.
  • Make them disappear. You can keep them in an airtight container or in resealable plastic bags for up to 24 hours at room temperature or stash them in the freezer for up to 2 months.

Cocoa Puffs image

These are cream puffs with a chocolate filling and a buttery thick frosting. While recently on vacation in Oahu, we had these at the Liliha Bakery. They are famous for these and sell 5000 a day! Upon arriving home, I looked for a recipe, and pieced this one together from 3 different recipes, recipe #209826 for the choux pastry, recipe #65220 for the chocolate pastry cream filling, and a recipe that was given to me for the chantilly frosting. These are a little bit of work, but the filling and frosting can be made ahead. Absolutely delicious and worth the effort, transports me back to Hawaii! Cooling and assembly time not included in total time.

1 cup water
4 ounces butter
1 cup flour
4 eggs
3 tablespoons sugar
3 egg yolks
3 tablespoons flour
1/2 teaspoon vanilla extract
2 cups milk
1 tablespoon butter
2 ounces baking chocolate, grated
1 cup evaporated milk
1 cup sugar
3 egg yolks, beaten
1/2 cup butter
1 teaspoon vanilla extract
1/4 teaspoon salt

Steps:

  • Choux Pastry:.
  • Heat oven to 400°F.
  • Put the water and butter in a saucepan and heat to boiling.
  • Remove from heat, add the flour and stir until a ball of dough forms and pulls away from the side of the pan.
  • Add eggs one at a time, beating well after each addition.
  • Scoop onto foil-lined baking sheet. I used a pastry bag with a wide tip to make little balls. Make them small, approximately an inch in diameter or so, you want these to be one or two bites per puff.
  • Bake at 400 for 15 minutes, then lower the temperature to 325 and bake for 30 minutes, or until dry-looking. When done, they should easily be removed from the foil.
  • Allow to cool completely. I left them in the (cold) oven overnight.
  • Chocolate Pastry Cream Filling:.
  • Put sugar, egg yolks, flour and vanilla into a saucepan and mix well.
  • In a separate saucepan, and milk and butter and heat to scalding.
  • Very slowly, add the milk mixture to the egg yolk mixture, whisking constantly.
  • Cook on low heat, stirring, until the mixture reaches the boiling point.
  • Cook 4 minutes longer, stirring constantly.
  • Add the grated chocolate and cook one minute longer.
  • Remove from heat, pour into a bowl and let cool, stirring occasionally.
  • Once cool, press plastic wrap to the surface (to keep a skin from forming) and refrigerate until ready to use.
  • Note that this filling is not very sweet, you may want to add more sugar to taste.
  • Chantilly Frosting:.
  • Combine milk, sugar, egg yolks, butter, vanilla and salt in a saucepan. Use a large saucepan as the mixture bubbles and spits during cooking.
  • Cook on medium heat, stirring constantly, until thick, approximately 12 minutes.
  • Remove from heat, and continue to stir until cool and thick.
  • Use immediately or refrigerate for later use (it will become quite thick but still spreadable).
  • Assembly:.
  • Use the tip of a knife to make a small hole in the bottom of each pastry puff.
  • Using a pastry bag, fill the puffs with the chocolate pastry cream filling.
  • Frost the tops of the puffs with the chantilly frosting, My frosting was pretty thick, but I could still spread it with a butter knife.
  • Enjoy! Store leftovers in the refrigerator but they won't last long!

These moist chocolate muffins are incredibly easy to make and come together in less than 30 minutes! The muffins turn out decadent, moist, and fluffy with nice domed tops.

Number Of Ingredients 10

1 1/2 cups (180 gr) all-purpose flour
1/2 cup (50 gr) cocoa powder (dutch processed preferred but natural cocoa powder can be used)
2/3 cup (130 gr) granulated sugar
1 TBSP (14 gr) baking powder
1/4 tsp salt
1 large egg, room temperature
1 cup (235 ml) whole milk
1 tsp vanilla extract
1/2 cup (120 ml) vegetable oil or canola oil
1 cup (170 gr) chocolate chips + more for topping if desired

Steps:

  • Prep: Preheat the oven to 425 F (220 C). Line a muffin tin with muffin liners or spray with nonstick spray.
  • Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, cocoa powder, granulated sugar, baking powder, and salt.
  • Mix the Wet Ingredients: In a separate bowl, whisk together the egg, milk, vanilla, and oil until well combined.
  • Combine Wet & Dry Ingredients: Pour the wet ingredients into the dry ingredients and stir with a spoon or rubber spatula until just combined. This process will go quickly, and should only take about 10 stirs to complete. Fold in the chocolate chips at this point. Do not over-mix your batter or your muffins will be dense and dry.
  • Divide the batter between the muffin cups filling them almost all the way up. Top with more chocolate chips if desired.
  • Bake at 425 F for about 10 minutes and then turn the oven heat down to 350 F (175 C) for about 5 more minutes or until a toothpick inserted in the center comes out with moist crumbs.
