CHOCOLATE ZUCCHINI BREAD
Chocolate zucchini bread is quick, delicious, and the perfect use for the last of your summer zucchini. Enjoy a slice with your morning coffee or serve it up for dessert.

- Preheat oven to 350°F. Spray two 8x4-inch loaf pans with baking spray and/or line with parchment paper.
- In a medium bowl, whisk together the flour, cocoa, salt, baking soda, baking powder and cinnamon.
- In a large bowl with an electric mixer, mix the coconut oil and sugars until combined. Mix in the sour cream. Add in the eggs and vanilla and mix until thoroughly incorporated.
- Slowly add dry ingredients to wet ingredients and mix until just combined.
- Add in the zucchini and mix for about 1 minute, or until the batter is moistened and the zucchini is evenly incorporated into the batter. Stir in the chocolate chips and shredded coconut.
- Spread the batter into the prepared pans and bake in preheated oven for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool bread in pan for 30 minutes. Remove bread to a wire rack to cool completely.

- Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5x3 inch loaf pan.
- In small pan boil one cup water. Add currants or raisins, and boil for two minutes. Drain.
- In mixing bowl beat egg, oil, and sugar. Stir in zucchini and vanilla.
- In another bowl, measure flour, baking powder, soda, salt, cinnamon, nutmeg, coconut, walnuts, and currants or raisins. Stir to combine thoroughly. Pour all at once over batter in mixing bowl. Stir to moisten. Turn into greased 9x5x3 inch loaf pan.
- Bake at 350 degrees F (175 degrees C) for 1 hour until an inserted toothpick comes out clean. Cool in pan 10 minutes. Turn out on rack. Cool and wrap.

- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
- Beat the eggs in a large bowl until frothy. Stir the vegetable oil, sugar, and zucchini into the eggs.

- Beat butter, coconut oil, and sugar in a large mixing bowl till creamy. Beat in eggs, vanilla, and sour cream. Stir in the zucchini, coconut, and chocolate chips.
- Combine the dry ingredients in a small bowl. Whisk together, then fold into the wet ingredients. Pour into a greased 9″x 13″ cake pan.
- Bake at 350° for about 40-45 minutes or till toothpick inserted in the middle comes out clean. Cool completely and frost, then top with toasted coconut.

LIME COCONUT ZUCCHINI BREAD RECIPE
This homemade Lime Coconut Zucchini Bread recipe is based off of my mom's zucchini bread recipe. It's given a tropical twist with the flavors of toasted coconut and fresh lime, making it one of our favorite zucchini quick bread of spring and summer!

- Preheat oven to 350 degrees. Grease two 8 1/2" x 4 1/2" bread pans (loaf pans) with baking spray. Set aside.
- Mix oil, Greek yogurt, lime juice, and granulated sugar together (with a rubber spatula, with a standing mixer, or with a hand mixer). Add in eggs, one at a time, mixing after each addition.
- In a separate bowl, whisk all purpose flour, baking soda, baking powder, salt, and lime zest together.
- Add dry ingredients into the wet ingredients and mix until just combined.
- Stir in shredded zucchini, coconut, and vanilla extract.
- Divide the batter evenly between the two bread pans.
- Bake for 50-55 minutes, or until a cake tester comes out clean.
- Allow to cool about 10-15 minutes before removing from the pan and placing on a wire cooling rack.
- Spread 1/2 cup coconut on a foil-lined baking sheet and toast in a 300 degree oven for 7-8 minutes, stirring the coconut once or twice. Once golden brown, remove from the oven and allow to cool.
- For the glaze, whisk powdered sugar and lime juice until combined. If the glaze is too thick, stir in the remaining lime juice.
- Drizzle glaze over the breads. Sprinkle toasted coconut and extra lime zest, if desired, over the bread before the glaze sets.
- Enjoy!
- Leftovers can be stored at room temperature for a couple of days, or in the fridge for up to a week.

- Lightly grease and line with parchment paper a 9 x 5-inch bread baking pan. Set aside. Preheat oven to 350F degrees.
- whisk or sift together sugar, flour, cocoa, coconut, salt, baking powder, soda.
- Mix oil, eggs, and vanilla in a bowl until light in color. Stir in grated zucchini. Set aside.
- Mix dry ingredients into egg mixture. Mix just until combined and fold in chocolate chips.
- In a small sauce pan, heat cream until steamy and barely beginning to boil around the edges. Add chopped chocolate and butter. Let stand for about 10 minutes. Stir until smooth allow to cool for 20-30 minutes before glazing bread. Top with chopped chocolate and flaked coconut ribbons
