This easy no-fuss frozen dessert recipe for ghostly white coconut pops is the perfect treat to cool off on Halloween!

1 can (13.66 oz) coconut milk (not cream of coconut)
1 cup half-and-half
1/2 cup sugar
1/2 teaspoon coconut extract
2/3 cup flaked sweetened coconut
10 frozen ice-pop molds or paper cups (3-oz size)
10 craft sticks (flat wooden sticks with round ends)

Steps:

  • In 2-quart saucepan, mix coconut milk, half-and-half and sugar. Heat over medium heat 2 minutes, stirring constantly, until sugar is dissolved. Remove from heat; stir in coconut extract and coconut. Cool completely, about 30 minutes.
  • Pour coconut mixture evenly into molds or cups. Cover with foil; place in freezer about 25 minutes or until partially frozen. Insert craft stick through foil into each pop. Freeze 8 hours or until firm. To serve, remove pops from molds or peel off paper cups.

Five ingredients (not counting the chocolate) and NO sugar! A xylitol / stevia blend enhances the natural sweetness of the organic coconut and virgin coconut oil. I made my own sugar free chocolate by melting unsweetened chocolate and mixing it with a combination of xylitol and stevia to taste.

3 tablespoons coconut oil, melted
1 pinch sea salt
1/3 cup Xylitol sweetener
1/4 teaspoon pure stevia powder (or 1 tsp liquid stevia)
sugar-free dark chocolate, to coat

Steps:

  • Combine all ingredients (except chocolate) in a stand mixer and process to form a "doughy" mixture - about 3-5 minutes.
  • Scoop into small balls and place on a lined baking sheet.
  • Freeze until solid.
  • Dip in the melted chocolate and allow to set.
  • Store in the fridge.

  • Start by mixing prepping a cookie sheet with parchment paper and set this aside while you work.
  • Next, mix together the sugar free powdered sugar, coconut, and condensed milk. You can use a large bowl and eventually your hands (prep your hands first with oil or coconut butter) to do this or a food processor if needed. When you are able to form small balls, do so making the balls 1- 1 1/2" in diameter. Place the balls on to the prepped cookie sheet. Refrigerate this for 25-30 minutes or until firm. You can add your option nuts and additional sweetener during the ball forming process as well.
  • Meanwhile, using a microwave safe bowl or a double boiler method, melt together the chocolate chips and margarine or coconut oil. In a microwave simply microwave, stopping every 30 seconds to stir until melted. The double boiler method entails simmering the water and then placing the chocolate and margarine or coconut oil in a bowl on top and stirring until melted
  • To cover the balls in chocolate, simply use a spoon or something similar to dip each individual ball into the chocolate and then place the ball back on to the prepped cookie sheet. Allow this to set.
