I love experimenting with recipes, and I came up with this one after a lot of experimenting with my favorite waffle recipe. These are more filling than your average waffles. I use aluminum-free baking powder. These are wonderful with homemade blueberry syrup.

2 eggs, beaten
1 ¾ cups skim milk
¼ cup canola oil
¼ cup unsweetened applesauce
1 teaspoon vanilla extract
1 cup whole wheat pastry flour
½ cup flax seed meal
¼ cup wheat germ
¼ cup all-purpose flour
4 teaspoons baking powder
1 tablespoon sugar
¼ teaspoon salt

Steps:

  • In a large bowl, whisk together the eggs, milk, oil, applesauce, and vanilla. Beat in whole wheat pastry flour, flax seed meal, wheat germ, all-purpose flour, baking powder, sugar, and salt until batter is smooth.
  • Preheat a waffle iron, and coat with cooking spray. Pour batter into waffle iron in batches, and cook until crisp and golden brown.

1-3/4 cups all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
Dash salt
3 eggs
1 can (13.66 ounces) coconut milk
6 tablespoons butter, melted
1/8 teaspoon coconut extract
3/4 cup sweetened shredded coconut
Chocolate ice cream topping and whipped cream

Steps:

  • In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, whisk the eggs, coconut milk, butter and extract. Stir into dry ingredients just until moistened. Fold in coconut., Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Serve desired amount of waffles with whipped cream and chocolate topping., To freeze waffles, arrange waffles in a single layer on baking sheets. Freeze overnight or until firm. Transfer to a resealable plastic freezer bag. Waffles may be frozen for up to 2 months., To use frozen waffles: Reheat waffles in a toaster. , Serve with chocolate topping and whipped cream.

1 cup white whole wheat flour
¾ cup all-purpose flour
2 tablespoons white sugar
1 tablespoon baking powder
¼ teaspoon salt
1 ¾ cups refrigerated unsweetened coconut milk beverage
½ cup canola oil
2 large eggs, lightly beaten
1 teaspoon vanilla extract
½ cup plain coconut milk yogurt
½ cup toasted unsweetened coconut chips
8 teaspoons agave nectar

Steps:

  • Stir together flours, sugar, baking powder, and salt in a bowl. Stir together coconut milk, oil, eggs, and vanilla in another bowl.
  • Make a well in the flour mixture and pour in the egg mixture all at once. Stir just until moistened. (Batter will be slightly lumpy.)
  • Preheat a waffle iron according to manufacturer's instructions.
  • Lightly grease the preheated waffle iron and spoon 1/2 cup batter onto the surface. Close and cook until waffle is golden brown and the iron stops steaming, 3 to 5 minutes. Repeat to cook remaining waffles.
  • Top each waffle with 1 tablespoon yogurt, 1 tablespoon coconut chips, and 1 teaspoon agave nectar.

I created this one on a hot Sunday morning in Laguna Beach, when I was setting up a quick home made brunch that was healthier that the waffles you get when you eat out in a restaurant. Here's your recipe. It's quick, easy and a great relief for those that are trying to eat grain free and don't want to give up a nice waffle brunch!

30 g flour (Cassava)
15 g arrowroot
15 g coconut flour
20 g tiger nuts (Protein Mix Organicgemini)
100 g bananas (1 small banana)
120 g coconut milk
20 g water
50 g orange juice (juice of 1/2 orange)
25 g maple syrup
3 g baking soda
20 g apple cider vinegar
1/2 papaya
2 dried figs
2 tablespoons coconut flakes (shredded)
10 g 100% dark chocolate (shaved)

Steps:

  • Turn on your Waffle machine.
  • Combine all dry ingredients in a bowl and mix well.
  • Combine banana, coconut milk, orange juice and water in a blender and process until you get a smooth liquid.
  • Pour the liquid over the flour mix, add in the maple syrup and mix well.
  • Lastly, add in the baking soda and the apple cider vinegar and mix well.
  • Pour half the batter in the waffle machine and when you first grain free waffle is ready, cook the second one with the remaining batter.
  • Top each waffle with some diced papaya, dried figs, shredded coconut and shaved dark chocolate and enjoy!

The perfect waffles! Crispy, crunchy on the outside, tender and melt-in-your-mouth inside, and they're good for you too! Our favorite recipe because it's so easy and makes delectable yet healthy whole grain waffles or pancakes that use up that extra starter so it doesn't go to waste. *This is a Grandma Approved Recipe*

1/2 cup sourdough starter
1/2 cup whole wheat flour
1/2 cup any whole grain flour (see notes)
1 cup water or 1 cup milk
1 egg
2 tablespoons oil or 2 tablespoons butter
1/2 teaspoon salt
1/2 teaspoon baking soda

Steps:

  • In a large bowl, stir together the starter, flours and water (or milk).
  • Cover bowl with plastic wrap and let it rest one to twelve hours. I usually mix it the night before.
  • In the morning while you're waiting for the waffle iron or pancake pan to heat up, mix the egg, oil, and salt into the flour mixture. Just before cooking, stir in the baking soda.
  • Using a quarter or half cup measuring cup ladle the batter onto the hot pan. For waffles cook according to the waffle iron directions, usually around 5 minutes, for pancakes flip when the edges start to bubble and the surface loses it's gloss.
  • Notes- You can use your choice of whole grains. I like rice flour, available at Whole Foods or health food stores. It adds a light crunchy texture to waffles. I've also used quinoa, barley, spelt, and coconut flours with great success. (If you use half cornmeal it makes a most excellent supper when topped with chili or beans n cheese!).
  • This recipe doubles or triples beautifully if you're feeding a crowd.
  • This recipe doesn't call for sugar, as I've found that using sugar in waffles makes them stick to the waffle iron. Without sugar they never stick (no need to grease the iron) and with the sweet flavor of whole grains you truly won't miss it. For pancakes you can add a tablespoon or two of sugar if you must.
  • A teaspoon of vanilla in the batter makes them smell terrific as they bake but we don't notice much difference in the taste, so I save that for company :).
  • I love my Hamilton Beach Flip 'n Fluff ($19 on amazon) and it makes 9 4" waffles with this recipe.
